Olivier Leflaive Bourgogne Blanc Les Setilles 2023 750ml
Olivier Leflaive Les Sétilles — Bourgogne Blanc, Burgundy 2023
Olivier Leflaive is one of Burgundy's most respected négociant-éleveurs, founded in 1984 in Puligny-Montrachet by a member of the legendary Leflaive family — one of the most storied names in white Burgundy. The maison specializes in white wines from the Côte de Beaune and is known for sustainable farming and minimal-intervention winemaking. Les Sétilles — named for the small stones found in the vineyards — is the flagship entry-level wine and one of the most consistently praised value Burgundies on the market. While technically labeled as a Bourgogne Blanc, the fruit is sourced primarily from vineyards in Puligny-Montrachet and Meursault, two of the Côte de Beaune's most celebrated white wine villages. The result is a wine with the DNA of much more expensive village-level Burgundy at a fraction of the price — a genuine insider's choice for those who know.
The nose offers aromas of white flowers, peach, grilled almond, and lemon peel on a mineral-tinged background, with appealing Granny Smith apple and nectarine fruit and a hint of white blossom. The attack is full and warm on the palate, with a surprisingly fresh texture for the vintage — lively acidity driving spicy, bitter citrus through to an elegantly long and lasting finish. Astonishing quality given the volume of production.
Decanter 90 — "Appealing Granny Smith apple and nectarine fruit aroma with a hint of white blossom. Surprisingly fresh texture for the vintage, and an elegantly lovely finish — astonishing quality given the volume of production."
Wine Spectator 90 — "Peach, almond, toasty oak and earth notes highlight this plush white. Backed by lively acidity that drives the spicy, bitter citrus finish. Fine balance and length."

Jean Marc Brocard Chablis Sainte Claire Biodynamic 2025 750ml
Jean Marc Brocard Chablis Sainte Claire Biodynamic 2025 · Chablis, Burgundy, France
Jean Marc Brocard is one of Chablis' most respected and forward-thinking producers, farming biodynamically across his estate to honor the region's singular Kimmeridgian limestone terroir. Chablis is the northernmost appellation of Burgundy, a place where Chardonnay expresses itself with precision, purity and mineral tension. The Sainte Claire is Brocard's entry point into the appellation: 100% Chardonnay, hand-harvested, naturally fermented with minimal intervention, and vinified without synthetic inputs.
Tasting Notes
Aromatically this wine is tart, with notes of lemon oils and mango skin, as well as a bit of minty herbaceousness. On the palate, there are flavors of honey and tropical fruits just barely ripened, with a finish of bracing acidity.
Prior Vintage Reviews
Neal Martin, Vinous, 87 Points — The 2023 Chablis Sainte Claire has a delightful peachy bouquet that opens nicely in the glass. The palate is ripe and (again), a little honeyed on the entry–smooth in texture. Lightly spiced with a simple finish. Fine. Drinking 2024 to 2029.
Allen Meadows, Burghound — Moderate reduction overshadows the fruit so a quick aeration should be beneficial if you're going to open a bottle young. Otherwise the old vines are in evidence as there is both solid density and richness to the medium-bodied flavors that possess a seductive mouthfeel, all wrapped in a lingering finale. While this could also be enjoyed young, it could use better depth so a few years of keeping should prove helpful. Worth checking out provided you intend to cellar it over the next 2 to 4 years.

Les Pierres Grises Saint-Véran 2024 750ml
Domaine Delaye | Les Pierres Grises | Saint-Véran AOC | Mâconnais, Burgundy | 2024
Les Pierres Grises — "the grey stones" — takes its name from the limestone outcroppings that define the terrain of Saint-Véran, the southernmost appellation of Burgundy's Mâconnais. Produced by Domaine Delaye, a family estate rooted in these grey limestone soils for generations, this is 100% Chardonnay vinified to let the vineyard speak: unoaked, precise and mineral-driven, with the kind of clarity and freshness that makes Saint-Véran one of the great values in white Burgundy.
The 2024 opens with bright aromas of lemon, green apple and white peach, accented by a distinctive chalky, stony minerality that is the hallmark of the appellation's limestone terroir. The palate is clean and focused, with crisp citrus and orchard fruit flavors, lively acidity and a precise, mineral-tinged finish. Unoaked and unencumbered — this is Chardonnay in its most honest, food-friendly form.

Chateau Mirande Macon Villages 2024 750ml
Jean Loron Château de Mirande Mâcon-Villages — Burgundy 2024
Jean Loron is one of Burgundy’s most respected négociant-éleveurs, with roots in the Mâconnais stretching back generations. The Château de Mirande Mâcon-Villages is a textbook expression of what this southern Burgundy appellation does best — pure, unoaked Chardonnay of genuine depth and freshness, sourced from vines averaging forty years of age. Aged for six months on the lees without any oak contact, the wine develops natural richness, structure, and complexity while preserving the bright, citrus-driven character that defines great Mâcon-Villages. An outstanding value in White Burgundy.
The nose is open and intense: citrus fruits, ripe pear, and a hint of butter. On the palate, it is juicy and full — the forty-year-old vines deliver genuine depth and concentration, while the lees aging adds a creamy, textured mid-palate. The finish is long, crisp, and refreshing, with a clean mineral precision that invites another glass.
67 Wine — “Château de Mirande is the Mâcon-Villages that reminds you why White Burgundy became famous — pure Chardonnay, old vines, and six months on the lees. Unoaked, honest, and delicious.”

Domaine Daniel et Christine Pollier Les Trois Bousquet Saint Veran 2024 750ml
Saint-Véran is one of Burgundy’s best-kept secrets — an appellation that shares the same limestone-rich soils as its famous neighbor Pouilly-Fuissé, producing Chardonnay of genuine depth and ageability at a fraction of the price. For the Pollier family, who have been farming the Mâconnais since the 18th century, it is home ground: 13 hectares planted entirely to Chardonnay, cultivated across Saint-Véran, Pouilly-Fuissé, and Mâcon-Villages, from vines averaging 40 years old with some parcels reaching an impressive 70 years.
‘Les Trois Bousquet’ is their single-vineyard expression of Saint-Véran at its most precise — estate fruit only, from old vines on limestone, vinified to reflect the terroir rather than the winemaker. The result is a Chardonnay of quiet authority: subtle and inviting on the nose, with lemon, apricot, acacia, and honeysuckle opening into a palate of real clarity and roundness. Notes of almond, hazelnut, cinnamon, and a touch of butter carry through to a finish with an exotic twist of orange peel — complex, harmonious, and unmistakably Burgundian.
A benchmark for what Saint-Véran can be, from one of the Mâconnais’ most quietly distinguished family estates. Drinks beautifully now and will reward patience through 2030+.

Domaine Clos de la Chapelle Pernand-Vergelesses Blanc 1er Cru Sous Frétille 2023 is an elegant and expressive white Burgundy produced from 100% Chardonnay in the prestigious Pernand-Vergelesses Premier Cru appellation of the Côte de Beaune, Burgundy, France.
Located high on the hillside overlooking the village of Pernand-Vergelesses, the Sous Frétille vineyard benefits from southern exposure and distinctive white marl and limestone soils. Although partially sheltered by the famous Hill of Corton, the vineyard receives generous afternoon sunshine, allowing the Chardonnay grapes to develop excellent ripeness while preserving freshness and mineral precision.
Domaine Clos de la Chapelle cultivates just 0.13 hectares in this exceptional Premier Cru vineyard, with vines averaging approximately 30 years of age. The wine is aged in French oak barrels, approximately 33% of which are new, adding subtle complexity without overwhelming its delicate fruit character.

On the palate, the wine is vibrant and refined, offering crisp orchard fruit, subtle smoky nuances, and pronounced limestone minerality. A Remarkable Village Chablis from Just Below Premier Cru Montée de Tonnerre
Patrick Piuze's 2025 Chablis "Les Bas De Chapelots" comes from a particularly exciting vineyard situated directly below the Chapelots climat of the renowned Premier Cru Montée de Tonnerre. The parcel was planted in 1982 and was introduced to Piuze's lineup with the 2023 vintage, making this one of the newer and more distinctive additions to his collection of vineyard-specific Chablis.
Although classified at the village Chablis level, the vineyard's location immediately beneath one of the Right Bank's celebrated Premier Cru sites gives this bottling unusual pedigree. Patrick Piuze's philosophy is centered on precisely these differences in terroir, producing individual wines from specific vineyards rather than blending away their distinctive personalities.

Fresh, approachable and beautifully mineral, the 2025 Les Bas De Chapelots shows bright notes of pear and lime supported by the stony, mineral character associated with classic Chablis. The palate combines juicy fruit with freshness and precision, leading to an impressively long, mineral-driven finish.

About Les Bas De Chapelots
Les Bas De Chapelots is a special village-level site located immediately below Chapelots, a climat within the celebrated Chablis Premier Cru Montée de Tonnerre on the Right Bank of the Serein. Its proximity to Premier Cru vineyards makes it an especially compelling example of Patrick Piuze's terroir-focused approach to Chablis.
The vineyard was planted in 1982, and Patrick Piuze first introduced Les Bas De Chapelots as a separate bottling with the 2023 vintage. The wine combines the freshness and accessibility of village Chablis with impressive mineral persistence and a sense of place that makes it particularly attractive for Chablis enthusiasts.
About Patrick Piuze
Montreal-born Patrick Piuze has established himself as one of the most distinctive producers in modern Chablis. Working closely with growers throughout the region, he sources fruit from carefully selected parcels and produces numerous vineyard-specific wines designed to highlight the differences between Chablis' individual terroirs.
Piuze places particular emphasis on old vines and careful harvesting. While machine harvesting is widespread in Chablis, his grapes are harvested by hand. In the cellar, fermentations occur spontaneously and malolactic fermentation proceeds naturally, with a deliberately low-intervention approach intended to keep the vineyard character at the forefront.
Food Pairing
An excellent partner for oysters, clams, shrimp, scallops, crab, sushi and sashimi, grilled or roasted white fish and roast chicken. Its combination of citrus freshness, ripe pear and persistent minerality also makes it a beautiful aperitif and a natural match for fresh and soft cheeses.
Why We Like It
Les Bas De Chapelots occupies an unusually privileged position for a village-level Chablis, sitting directly beneath Premier Cru Montée de Tonnerre. With vines dating to 1982 and Piuze's meticulous terroir-driven approach, this is an excellent opportunity to experience a distinctive Chablis site at an especially attractive level.

From the Moreau Family
Christian Moreau
“ The Domaine Christian Moreau Père et Fils was born in 2001 and first vintage to be bottled was 2002. I gave my son Fabien the keys of the Domaine in 2001 when he came back from New Zelande, asking him to make the wines that he loves in the respect of our terroir of Chablis. After a few years, Fabien decided to turn the vineyard into Organic Agriculture. All our 11,8 ha were officially converted by Ecocert with the 2013 vintage, which was a real challenge for Fabien of course but also for our team working in the vineyard who had to change a 20-year-old (or more) practice. I am very proud of all he achieved so far and I am now very happy to spend my time (I am officially retired!) representing Fabien and his wines all over the world, and taking care of our customers who visit us in Chablis!”
Fabien Moreau
“Being the 6th generation of the family producing wines, was and still is a challenge for me, trying to avoid the pressure you could have with this “wine heritage”. But with the quality of the vineyard that my family passed on, the basis of the expression of our wines is here, and our work is to honor our terroirs. Looking back on what we did since the first vintage 2002 with my father and all our team, I am very proud of all the work we did together, to increase step by step, the quality and the typicity of our wines. With the respect of the persons, of the nature and with humility, we will continue this way and face all the new challenges in front of us. As my father says, “Chablis is unique”, and our goal is to show it!”
Producer Description
The versatile, affordable, village Chablis from Domaine Christian Moreau Père et Fils is bright and crisp, with the classic, taut structure and refreshing minerality that define traditional Chablis. This is a Moreau classic!

Produced from carefully selected, biodynamically farmed vineyards in Puligny-Montrachet, this exceptional regional Burgundy showcases the character of one of France's most celebrated white wine villages. The grapes originate from five small vineyard parcels situated toward Chassagne-Montrachet, where limestone-rich terroir contributes freshness, structure, and mineral complexity.

On the palate, the wine is graceful and beautifully balanced, combining lively acidity with a silky, supple texture. Layers of citrus, orchard fruit, and lemon curd unfold with subtle richness, while a fine mineral backbone provides definition and freshness.
Aged for 12 months in oak barrels, including just 10% new oak, followed by six months in stainless steel, the wine achieves a harmonious balance between delicate texture and vibrant fruit expression.
Elegant, expressive, and wonderfully approachable, Esprit Leflaive Bourgogne Blanc 2023 offers a compelling introduction to the distinctive craftsmanship and refined style of Leflaive's white Burgundies.

97 Robert Parker's Wine Advocate: Leflaive's 2023 Chevalier-Montrachet Grand Cru is a great success, unwinding in the glass with a nuanced bouquet of white flowers, crisp orchard fruit, clear honey, toasted hazelnuts and wet stones. Full-bodied, satiny and suave, it's pure and racy, with compelling mid-palate amplitude, beautiful textural refinement and a long, chalky finish. Its ethereal, elegant style makes it a study in contrasts with the muscular, powerful Bâtard.
97 Wine Spectator: Peach, pineapple, lemon oil, citronella, lime blossom, hazelnut, white pepper and oyster shell aromas and flavors are among the complex details in this intense white. Tightens up while building to the superlong aftertaste, all the while remaining elegant and classy. Shows impressive harmony and length.
96 Vinous: The 2023 Chevalier-Montrachet Grand Cru has a tightly wound bouquet despite my giving it five to ten minutes to open up. With hints of sunflower seed and crushed limestone, this is a real clenched fist aromatically. The palate is very well balanced with intense yellow and white fruit, less minerally than the Bâtard perhaps with just a hint of wild honey on the finish. It is a lovely wine…but could this be a year where Bâtard takes the glory?
Tasting Notes
Appearance: Brilliant pale gold with delicate green reflections.
Aroma: White blossoms, fresh pear, crisp apple, lemon zest, ripe peach, honey, toasted hazelnut, and crushed limestone.
Palate: Rich and beautifully textured, with vibrant acidity, concentrated orchard fruit, citrus, subtle spice, and pronounced mineral character.
Finish: Exceptionally long, precise, and elegant, with lingering chalky minerality and refreshing citrus notes.
Food Pairing
An outstanding companion to lobster, seared scallops, turbot, Dover sole, roasted poultry, and delicate cream-based dishes. Its mineral intensity and refined structure also complement truffle preparations and aged Comté cheese.
Cellaring Potential: Excellent aging potential. Wine Advocate suggests a drinking window of 2030–2050, while Wine Spectator recommends 2028–2038.
Domaine Leflaive "Bienvenues" Batard Grand Cru 2023 750ml
Entirely located in the town of Puligny, this Grand Cru was first mentioned back in 1397 when the abbey of Maizière purchased some of it. Old records mentioned that this plot might have been planted with gamay and pinot noir a few hundred years ago. When Dr. Lavalle published his classification of Bourgogne back in 1855, the climat was already planted to Chardonnay. The 2023 vintage was generous in quantity and balanced in quality, following the excellent 2022. A mild, dry winter was followed by a cool, wet spring that helped recharge water reserves.
An exceptional white Burgundy from Domaine Leflaive, the 2023 Bienvenues-Bâtard-Montrachet Grand Cru showcases the elegance, precision, and extraordinary complexity of one of Burgundy’s most prestigious vineyard sites. Crafted from Chardonnay grown in Puligny-Montrachet, this remarkable Grand Cru combines refined opulence, silky texture, vibrant acidity, and captivating minerality, delivering a beautifully balanced wine with impressive depth and aging potential.

96 Points – Wine Spectator: A ripe white, this exudes peach, pineapple, mango, and apple tart aromas and flavors. Toasted brioche and a range of baking spice notes emerge as this expands on the kaleidoscopic aftertaste. Starts out broad but gains focus and finesse on the aftertaste. Best from 2027 through 2037.
95 Points – Vinous: The 2023 Bienvenues-Bâtard-Montrachet Grand Cru has a stern, backward, petrichor- and limestone-scented bouquet that is quite Zen-like after the range of Premier Crus. The palate is fresh and vibrant with a silver bead of acidity, gaining weight in the mouth and very saline on the finish, with hints of orange zest on the aftertaste. Excellent.
95 Points – Robert Parker’s Wine Advocate: The 2023 Bienvenues-Bâtard-Montrachet Grand Cru is a full-bodied, dense, and ample wine evocative of peach, orange oil, honeycomb, buttered toast, and white flowers. Structured and imposing, it combines generous richness with remarkable depth and complexity, promising to reward bottle aging.
93–95 Points – Burghound: Sourced from the Domaine’s oldest vines, this outstanding Grand Cru offers beautifully textured, concentrated, and full-bodied flavors with focused power. A pronounced bitter-lemon character carries through to an exceptionally long finish, highlighting the wine’s impressive structure, intensity, and potential for extended aging.
92-94 Prominent honeysuckle aromas add a touch of breadth to the equally ripe yet somehow more elegant nose of spicy and exotic jasmine tea and gardenia. There is again very good detail and a highly appealing underlying tension to the gorgeously textured flavors that exhibit focused power on the superbly long, balanced and compact finale. This is also built to age a decade or more but in this case, it could reasonably be approached after only 4 to 5 years.

The palate is silky and concentrated, balancing generous stone-fruit flavors with bright acidity and a distinctive saline minerality. Layers of honeycomb, toasted brioche, and gentle spice lead to a long, harmonious finish of remarkable finesse. A magnificent expression of Grand Cru Chardonnay, offering both immediate sophistication and outstanding potential for graceful evolution in the cellar.

98 Points – Vinous: The 2023 Bâtard-Montrachet Grand Cru has a little more intensity on the nose than the Bienvenue, with touches of struck flint, cold stone, and light Granny Smith apple scents that are tightly coiled and unfold with aeration. The palate is crisp and taut, much more mineral-driven than the Bienvenue, with a truly complex and persistent finish that is a joy to behold. This riveted me to the spot and is one of the finest expressions of this holding that I have encountered in over 25 years of tasting at Leflaive.
98 Points – Wine Spectator: Taut and intense, featuring lime blossom, citronella, oyster shell, hazelnut, vanilla, and pastry aromas and flavors, this white is driven by its laser-like acidity. Balanced, with a seemingly endless finish that echoes the complex flavors and leaves you wanting more.
96 Points – Robert Parker’s Wine Advocate: Notes of orange oil, pear, and peach mingle with hints of nutmeg, clear honey, and buttered toast, introducing Leflaive’s 2023 Bâtard-Montrachet Grand Cru. Full-bodied, dense, and blocky, it is broad-shouldered and multidimensional, with an unctuous attack, a deep mid-palate, and a broad, expansive finish.
Rich and powerful yet remarkably refined, with aromas of ripe pear, white peach, citrus zest, and delicate white flowers, layered with toasted hazelnut, subtle spice, and crushed limestone. The palate is full-bodied and beautifully textured, balancing luscious orchard fruit with vibrant acidity and profound mineral complexity. A long, elegant finish reveals hints of citrus, saline freshness, and finely integrated oak. A magnificent expression of Grand Cru Chardonnay with outstanding aging potential.
J. Moreau et Fils Saint Bris 2024 750ml
J. Moreau et Fils Saint Bris 2024 · Burgundy, France
A lovely golden colour. Intense aromas of lychee, blackcurrant and exotic fruit. Luscious and tangy on the palate, with aromas of yellow-fleshed fruit such as pineapple and a refreshing touch of minerality.
Varietal & Origin
This wine is made from Sauvignon Blanc, a notable exception in Burgundy. At the heart of the Auxerrois region, the old wine-producing village of Saint-Bris-Le-Vineux is known for its spectacular underground quarries at Bailly, which once supplied stones for construction in Auxerre and Paris, and today is the Mecca of Crémant de Bourgogne. The only Sauvignon grapes in Burgundy, once called “épicier”, are harvested here. The wine is typical of its varietal and marks the transition between the wines from the Loire and those from Burgundy. Its high quality was first recognized in 1974 with the VDQS (Vin Délimité de Qualité Supérieure) appellation, and again in 2002 when it was awarded AOC status. On the left bank of the Serein River, 15 kilometres south-east of Chablis, the vines grow on clay-limestone soils.
Producer
In 1814 Jean-Joseph Moreau, a young cooper, married a local winemaker’s daughter and inherited the oldest wine House of Chablis. Driven by passion for the vine and traditional values, he successfully ran the business and quickly became one of the most important producers of wine in Chablis, a pioneer in the region whose success continued to rise. Over the years, J. Moreau & Fils established itself on the international market and became a prestigious House, successful worldwide.
Food Pairings & Serving
Drink as an aperitif or with oysters, seafood and fish; also perfect with white meats. Serve ideally at 10-12°C (50-54°F).

98 James Suckling: Fantastic depth and length to this wine, showing aromas and flavors of sliced apples, stone, flint, matchstick and white pepper. It's full-bodied and reserved, with very fine layers of bright fruit and minerals. Tight, structured and compact with a long finish. Already impressive, but best after 2027.

Medium to full-bodied, satiny and seamless, it's rich and textural, with a sweet, layered core of fruit and an expansive finish. Now bottled under Diam, it should age with grace.

Domaine Background
The following supplied background describes the domaine and its wider range, rather than technical specifications exclusive to this 2024 Saint-Aubin.
François Jobard was one of the first vignerons Kermit imported when he began prospecting for wines in France in the 1970s. The relationship has endured into the next generation, and François’ son Antoine now runs the domaine. This is as classy and as consistent a property as you’ll find in Burgundy, and theirs are generally counted among the best Meursaults. Other respected vignerons like Coche and Raveneau hold these wines in the highest esteem and are generous with their praise when Jobard comes up in conversation.
Among the highlights from the domaine is Jobard’s stunning Bourgogne Blanc, which is routinely one of the best to carry that appellation. Their Meursault En la Barre is an outstanding value from an assiduously tended vineyard plot located just behind their home, and their enviable line-up of premier cru white Burgundies includes Meursault Poruzots, Blagny, Genevrières, and Charmes, each with its inimitable charms. Recently, they added Tillets to their list, the excellent vineyard that Roulot fans know and love – a high-elevation, very stony lieu-dit. Finally, their Puligny-Montrachet Le Trézin comes from another steep hillside parcel above the Hameau de Blagny and is always textbook Puligny, chiseled and fine-grained.
All the Jobard wines are aged in barrel and spend a lengthy period of time sur lie in their cellars in Meursault. They are the last of our white Burgundies to come to the market every year due to their unhurried approach to vinification and typically slow malolactic fermentations. In their youth, these wines are often tightly wound with an intense mineral structure that only begins to soften with extended bottle aging. Though François and Antoine work side by side, Antoine has brought his own signature to the domaine: a more sensuous approachability to the wines, all delicious and ready to drink immediately. That said, the Jobard legacy lives on, and the wines will still explode with intense aromas of honeycomb and stone later in life. If you just can’t wait, there’s no reason not to uncork.
Serving & Pairing Suggestions
Serve cool rather than ice-cold and allow time in the glass. Consider pairing with roast chicken, butter-poached fish, or mushroom dishes. For cellaring, the supplied barrel-sample review suggests 2028–2031.

Powerful · Mineral · Structured · Saline · Age-Worthy
A profound Grand Cru Chablis with remarkable concentration, old-vine depth and a long, mineral finish.
Domaine William Fèvre’s Chablis Grand Cru Les Clos 2022 is a serious and commanding expression of one of the most celebrated vineyards in Chablis. Les Clos is renowned for producing wines of exceptional structure, power and longevity, and William Fèvre’s 2022 captures that character with impressive purity and depth.
The domaine owns approximately 4.1 hectares within Les Clos, with its parcels situated toward the top of the hill. A significant portion of the vines are remarkably old, with roughly half planted by William Fèvre’s father in the 1940s and 1950s. These mature vines contribute extraordinary concentration, complexity and mineral intensity to the finished wine. :contentReference[oaicite:0]{index=0}
The 2022 vintage opens gradually in the glass, revealing aromas of ripe citrus rind, crisp orchard fruit and delicate white flowers, framed by a subtle touch of youthful reduction. The bouquet is restrained at first, but there is an unmistakable sense of purity and depth beneath the surface.
On the palate, the wine is full-bodied, dense and satiny, with layers of white fruit, lemon, green apple and mineral character. Vibrant acidity provides energy and lift, while a pronounced chalky and saline quality gives the wine remarkable definition.
There is tremendous concentration here, but also finesse. The wine carries both power and precision, building across the palate toward a long, stony finish marked by citrus, white peach and persistent salty minerality.
Among William Fèvre’s Grand Cru bottlings, Les Clos is one of the most structured and substantial. It is a wine built for the cellar, with the depth, acidity and mineral backbone to develop additional complexity over many years.
Food Pairing
Pair with lobster, langoustines, scallops, Dover sole, turbot and other rich seafood, as well as roast poultry, veal and refined dishes prepared with beurre blanc or delicate cream sauces.
Its combination of richness, acidity and mineral intensity also makes it an excellent partner for mature cheeses and more elaborate seafood preparations.
Serve lightly chilled to allow the wine’s texture, old-vine concentration and mineral complexity to fully emerge.

98 Jasper Morris: Mostly from old vines, a good half planted between 1948 and 1952. Translucent lemon and lime colour. The bouquet is not ready to unfurl yet there is a sense of sublime purity about the nose. A wine in perfect harmony on its wide bench of white fruit. Just a little touch of spice behind, good acidity. Sign up for this! Barrel Sample: 95-98
96 Robert Parker's Wine Advocate: The 2022 Chablis Grand Cru Les Clos is a serious, structured wine, unwinding in the glass with aromas of ripe, waxy citrus rind, crisp orchard fruit and white flowers, framed by a deft touch of youthful reduction. Full-bodied, dense and satiny, it's layered, concentrated and multidimensional, with the most structure and substance of any wine in the range, but also the greatest need for patience to realize all its considerable potential. Rating:-96+
95 Decanter: Small yield, very concentrated, with masses of density on the palate. Plenty of drive and energy but has finesse to balance out the power. White peach fruit characters, vibrant acidity and a pronounced mineral, salty finish. Very long future ahead. Fèvre owns 4.1ha of the 25ha total within Les Clos. Its plots situated on the top of the hill, with 50% of the vines planted by William Fèvre's father in the 1940s and 1950s.
93 Vinous: The 2022 Chablis Les Clos Grand Cru has a surprisingly primal bouquet with gooseberry, melon, fruits de mer and citrus peel, with more oyster shell scents developing as it opens, though never quite achieving the flair of the Valmur. The palate is well-balanced, steely and strict, with fine intensity and a saline finish. But it doesn't quite have the precision of Fevre's best cuvées at the moment. Barrel Sample: 91-93
92 Wine Spectator: Greengage, apple, lemon and mineral flavors are aligned with a bright structure and chalky texture in this lively white. Dynamic and balanced, with a lingering aftertaste of stone and stone fruit.
The Style
Powerful, concentrated and deeply mineral — a monumental Grand Cru Chablis with remarkable old-vine depth, vibrant acidity and exceptional aging potential.
William Fevre Chablis 1er Cru Montmains 2023 750ml
Mineral · Fresh · Elegant · Precise · Persistent
A beautifully structured Premier Cru Chablis with orchard fruit, floral lift and classic mineral tension.
Domaine William Fèvre’s Chablis 1er Cru Montmains 2023 is a refined expression of one of Chablis’ most respected Premier Cru vineyards. Montmains is known for producing wines with excellent freshness, firm mineral structure and the ability to develop beautifully with time.
Under longtime winemaker Didier Séguier, William Fèvre brings together fruit from multiple parcels across Montmains, including sections of Forêts and Butteaux. The result is a wine that combines the vineyard’s characteristic restraint and mineral grip with impressive depth, elegance and persistence. :contentReference[oaicite:0]{index=0}
The 2023 vintage opens with delicate aromas of white blossom, freshly cut golden apple and subtle brioche, joined by notes of green apple, gooseberry, acacia flower and gentle spice.
On the palate, the wine is lively, fresh and beautifully balanced. Bright orchard fruit is carried by crisp acidity, while a firm mineral backbone adds structure and definition. There is excellent substance beneath the freshness, giving the wine both immediate appeal and the potential to develop additional complexity in the cellar.
The finish is long, precise and persistent, with a cool mineral character and subtle saline quality that are unmistakably Chablis.
Food Pairing

Serve lightly chilled to allow the wine’s floral aromas, orchard fruit and mineral complexity to fully emerge.

95 Decanter Magazine: In the hands of Fèvre winemaker Didier Séguier, premier cru Montmains has a certain initial reserve. But with time, the green apple and gooseberry notes, touched with acacia blossoms and spice, open up on the palate. The texture is lively and fresh, yet there is substance here as well. The grapes are assembled from 10 parcels throughout Montmains, including some in Forêts and Butteaux. Séguier explains that Butteaux is deep in the valley and further from the Serein so it ripens later. The grapes are fermented in tank and older casks for 40–50% of the harvest.
94 Jasper Morris: Assembled earlier today, so cloudy and this procedure also masks the nose. Classic Montmains behind, with the usual reductive grip, yet also some elegance, very persistent. The lees were first class, says Didier Seguier and this certainly has the makings of a first class Montmains. Barrel sample: 91-94
94 Wine Enthusiast: Delicate aromas of white blossom, brioche, freshly cut golden apple, and dried grass draw in the nose with feathery opulence. The palate is rich with citrusy acidity that plays second fiddle to fall-rip- ened orchard fruit that washes across wet stone on the finish. Editor’s Choice.
93 James Suckling: Lovely elegance with a chalky, marine-like character to the nose, along with lime and minerals. Medium weight, with chalky notes and some white fruit leading to a pithy, lightly salty, bitter finish. Very attractive.
92 Wine Spectator: There’s a sleek feel to this white despite its rich texture, revealing lemon, apple and flint flavors, plus a hint of honey. Harmonious and enticing, this ends with citrus and stone elements. Shows fine expression and length.
The Style
Fresh, elegant and mineral-driven — a classic Premier Cru Chablis with beautiful tension, depth and a long, precise finish.

Chiseled · Mineral · Saline · Powerful · Precise
A profound Grand Cru Chablis combining extraordinary mineral intensity, vibrant citrus and a long, crystalline finish.
Among the most distinctive wines in the William Fèvre portfolio, Bougros Côte Bouguerots Grand Cru 2023 comes from a remarkable parcel at the lower, dramatically steep portion of the Bougros Grand Cru vineyard, close to the Serein River.
While classic Bougros is often known for its broad, generous and powerful character, Côte Bouguerots offers a very different expression. Cooler nights and the steep slope contribute remarkable freshness, tension and mineral definition, creating a Chablis of exceptional precision and energy.
The vineyard rises on an incline of approximately 40%, one of the steepest sections of the Chablis Grand Cru hillside. William Fèvre's Côte Bouguerots holding totals approximately 2.2 hectares, with the majority of the vines planted in 1979. The combination of mature vines, steep exposure and Chablis' celebrated Kimmeridgian soils gives this wine its extraordinary concentration and unmistakable mineral character.
The 2023 vintage opens with an expressive yet finely controlled bouquet of lemon zest, lime, white peach and pear, layered with delicate white flowers, oyster shell, chalk and subtle marine notes.
On the palate, it is concentrated and beautifully structured, showing remarkable purity and energy. Citrus and ripe stone fruit are framed by vivid acidity and a pronounced mineral backbone. Notes of crushed stone, chalk and sea spray run through the wine, leading to an exceptionally long, clean and saline finish.
There is impressive power beneath the surface, yet the wine remains elegant and finely chiseled. Its combination of concentration, freshness and mineral tension makes Côte Bouguerots one of the most compelling and age-worthy expressions in the William Fèvre range.
Food Pairing
A magnificent partner for oysters, lobster, langoustines, scallops and crab, as well as grilled or roasted fish. It is equally impressive with Dover sole, turbot, poultry, veal and refined dishes finished with butter or delicate cream sauces.
Serve lightly chilled rather than excessively cold to allow the wine's aromatic complexity, texture and minerality to fully emerge.
Professional Ratings
95 Decanter Magazine: Initially a bit restrained, the fruit opens up on the palate with notes of white peach, nectarine and Mirabelle plums, accented with a salty minerality and a hint of spice. Chiselled and fine but still impressively powerful. Fèvre owns more than a third of Bougros; 2ha are located in this unique parcel that rises steeply from the river in south-southwest-facing slopes, producing this exotic, concentrated wine that will live for decades.
95 Jasper Morris: The usual lime tint to the pale colour. Wonderfully chiselled, not seeing the sunshine here, just the vineyard. A burst of concentrated fruit through the middle, a pure kimmeridgian streak of energy, breadth and depth together, powerful all the way through. Barrel sample: 93-95
95 James Suckling: Limey, mineral and chalky nose with lots of marine substances and some green citrus. Pure energy, with excellent texture, precision and agility. Long, limpid and saline finish.
95 Robert Parker's Wine Advocate: Sourced from a site closer to the river, defined by a steep 40% gradient and cooler nights, the 2023 Chablis Grand Cru Bougros Côte Bouguerots is entirely different from the fleshy, muscular Bougros bottling. It offers aromas of lemon oil, oyster shell and white flowers. Medium- to full-bodied, it is taut and structured, with bright acidity, ample dry extract and a long finish. Stylistically, it recalls Les Preuses more than the usual Bougros archetype. Of the 2.2 hectares, 1.8 were planted in 1979.
92 Wine Spectator: his is generous, displaying peach, apple, lemon verbena and grapefruit flavors. Corralled by vivid acidity that emerges midpalate and defines the stone fruit and mineral finish. Approachable now for its fleshy appeal and harmony. Drink now through 2036.
The Style
Intense, crystalline and deeply mineral — a rare Grand Cru Chablis where power meets extraordinary precision, freshness and saline energy.

Powerful · Mineral · Chalky · Saline · Elegant
Grand Cru Chablis of remarkable depth, combining ripe fruit, crushed-stone minerality and a long, saline finish.
Domaine William Fèvre’s Chablis Grand Cru Bougros 2023 is a superb expression of one of Chablis’ seven celebrated Grand Cru climats. Located at the western end of the Grand Cru slope, Bougros is traditionally known for producing wines of greater breadth, richness and power while retaining the vibrant acidity and mineral character that distinguish the finest Chablis.
Produced entirely from Chardonnay, the 2023 Bougros combines impressive concentration with remarkable freshness. The wine opens with aromas of ripe pear, peach and apple alongside citrus peel, white flowers and subtle notes of beeswax. As it develops, layers of chalk, crushed stone and marine-inflected minerality emerge.
The palate is broad and beautifully textured, with generous fruit balanced by bright, energetic acidity. There is richness here, but also precision: citrus, orchard fruit and mineral flavors build through the palate toward a persistent, dry and distinctly saline finish. Despite its concentration, the wine remains elegant and beautifully composed.
William Fèvre’s Bougros is produced from mature vines, many approximately 60 to 70 years old, growing in the deep soils of this historic Grand Cru. The maturity of the vines contributes depth and concentration while the domaine’s restrained approach in the cellar allows the character of the vineyard to remain at the forefront.
The 2023 vintage is particularly compelling, offering the generous texture associated with Bougros alongside excellent tension and freshness. It is already expressive with appropriate aeration, but its structure and mineral backbone make it an excellent candidate for extended cellaring.
Food Pairing
An exceptional partner for oysters, lobster, langoustines, scallops and other shellfish, as well as grilled or roasted fish. Its combination of richness and acidity also works beautifully with poultry, veal and white meats, particularly dishes finished with butter or delicate cream sauces.

95 James Suckling: Imagine your tongue licking wet stones with crushed seashells. Dense and chalky at the same time, with broad, medium- to full-bodied character and a long, salty finish. Elegant and pithy. Drink or hold.
93 Jasper Morris: Mid lemon yellow. The bouquet is surprisingly reticent, but suggests body to follow. The 2023 Bougros has retained a fresh white fruit on the palate, plenty of energy behind, nicely balanced because Bougros can be clumsy, with fine length. Barrel sample: 91-93
93 Robert Parker's Wine Advocate: Sourced from 60- to 70-year-old vines rooted in deep soils and invariably among the richer, more muscular wines in the range, the 2023 Chablis Grand Cru Bougros delivers aromas of peach, orange oil, beeswax, honeysuckle and pear. Medium- to full-bodied, ample and fleshy, it possesses a rich core of fruit underpinned by ripe yet lively acidity. It is the fleshier and most demonstrative wine in the lineup.
93 Vinous: The 2023 Chablis Bougros Grand Cru comes from 4 hectares of vines. It has a complex bouquet with lemon thyme, crushed rocks and lime aromas, well-defined and focused. The palate is very composed and steely, a subtle reductive element here, fine weight with an elegant finish. Not the most powerful of the domaine's Grand Cru, but it has panache. Barrel Sample: 91-93
The Style
Rich yet precise, powerful yet mineral — a Grand Cru Chablis with impressive depth, brilliant freshness and a lingering saline finish.
William Fevre Chablis 1er Cru Les Lys 2023 750ml
Floral · Chalky · Saline · Pure · Elegant
A beautifully refined Premier Cru Chablis with vibrant citrus, crushed-shell minerality and a long, cool saline finish.
Domaine William Fèvre’s Chablis 1er Cru Les Lys 2023 is a graceful and highly distinctive expression of the left bank of the Serein. Les Lys is a historic climat within the celebrated Vaillons Premier Cru, situated toward the upper portion of the hillside and known for producing Chablis of exceptional elegance, freshness and finesse.
William Fèvre owns approximately 0.99 hectare in Les Lys, an east-facing parcel planted on clay soils over Chablis’ famous Kimmeridgian limestone. Historically associated with French royalty, the vineyard combines a privileged location with a cooler personality that allows the fruit to ripen slowly while preserving beautiful acidity and mineral definition.
The 2023 vintage opens with bright aromas of green apple, lemon oil and fresh stone fruit, joined by white flowers, subtle herbs and delicate marine notes. With air, layers of oyster shell, chalk and crushed stone become increasingly pronounced.
On the palate, the wine is precise, fresh and beautifully balanced. Orchard fruit and citrus are carried by lively acidity, while a finely textured chalkiness gives the wine shape and definition. There is an appealing suppleness through the mid-palate, but the overall impression remains cool, mineral and distinctly Chablisien.
The finish is long and refreshing, marked by crushed shell, citrus zest and a lingering saline quality. Les Lys is less about sheer power than purity, elegance and mineral tension, making it a particularly refined expression of William Fèvre’s Premier Cru holdings.
Winemaking is deliberately gentle to preserve the character of the vineyard. The fruit is handled largely by gravity, followed by delicate pressing and natural alcoholic and malolactic fermentations. The wine is matured with a restrained use of older French oak before completing its élevage in stainless steel, maintaining freshness and allowing the terroir to remain at the forefront.
Food Pairing
An excellent partner for oysters, clams, scallops, shrimp and grilled seafood, as well as delicate white fish such as sole, halibut and sea bass.
Its combination of freshness and texture also pairs beautifully with roast chicken, poultry in a light cream sauce, goat cheese and gently seasoned vegetable dishes.
Serve lightly chilled to allow the wine’s floral character, subtle fruit and mineral complexity to fully emerge.
Professional Ratings
94 James Suckling: More green stone fruit and chopped herbs on the nose, with crushed shells and mineral. Bright, dry and medium-weighted, with a nicely chalky mouthfeel despite the vertical, zestier acidity. Stony, cool and pure on the finish.
93 Robert Parker's Wine Advocate: Sourced from a north-facing site beneath forest cover with clay-rich soils, a parcel selection in Vaillons, the 2023 Chablis 1er Cru Les Lys is among the most quintessentially Chablisien wines in the portfolio and is harvested around a week later than the fruit that enters the Vaillons bottling. It offers aromas of oyster juice, white flowers, lemon oil and Granny Smith apple, followed by a medium- to full-bodied, incisive and pure palate that is elegant yet racy and fresh, concluding with a long, saline finish.
93 Vinous: The 2023 Chablis Les Lys 1er Cru comes from a single hectare of vines. Lime, red apple and touches of orange pith and peach skin develop in the glass. The palate is well balanced with a taut line of acidity, silky smooth, very composed with a lot of finesse on the finish. This is one of the domaine's hidden gems and should not be under-estimated.
92 Jasper Morris: Clear pale lemon yellow. The nose is taking coaxing but has the precision. Very good tension, still with delicacy despite the concentration, nothing dilute here, good tension with a little bitterness at the back. Barrel sample: 90-92
92 Wine Enthusiast: This is a particularly well-balanced Cha- blis. Aromas of green apple, lightly browned toast, and lilac open on the nose accented by dried white blos- som. The saline-dusted palate washes across crushed shells and rides a wave of chalky acidity that becomes more emergent on the finish.
The Style
Elegant, cool and mineral-driven — a beautifully precise Premier Cru Chablis combining floral finesse, chalky freshness and a lingering saline finish.

William Fevre Chablis 1er Cru Montee de Tonnerre 2023 750ml
Mineral · Flinty · Saline · Elegant · Powerful
A thrilling Premier Cru Chablis with ripe orchard fruit, smoky minerality and a long, saline finish.
Domaine William Fèvre’s Chablis 1er Cru Montée de Tonnerre 2023 is a beautifully composed expression of one of Chablis’ most highly regarded Premier Cru vineyards. Known for combining impressive depth with exceptional mineral tension, Montée de Tonnerre consistently produces wines of remarkable refinement, structure and longevity.
The 2023 vintage is both generous and energetic. Aromas of ripe Mirabelle plum, nectarine and green apple are layered with flinty minerality and subtle smoky reduction, creating a complex and expressive bouquet. :contentReference[oaicite:0]{index=0}
On the palate, the wine is richly textured yet beautifully precise. Golden apple and orchard fruit are joined by notes of pear, orange peel, fennel and beeswax, while a chalky mineral backbone and vibrant acidity keep the wine fresh and focused.
There is excellent depth through the mid-palate, but the wine never feels heavy. Instead, the concentration is balanced by freshness and energy, leading to a long, mouthwatering finish marked by stone, citrus and a distinctive saline character.
Montée de Tonnerre is one of those Premier Crus that can offer nearly Grand Cru-like depth while retaining the finesse and purity that make great Chablis so compelling. The 2023 is already impressive, yet its structure and acidity should allow it to develop beautifully with additional bottle age.
Food Pairing

Serve lightly chilled to allow the wine’s fruit, smoky mineral character and layered complexity to fully emerge.
