The 2025 Val de Mer Chablis is assembled from three parcels situated in different parts of the Chablis appellation. Des Couverts is located in the village of Chablis, Préhy lies near Courgis, and the third parcel comes from Lignorelles. Bringing these sites together creates a broader expression of Chablis while maintaining the freshness, tension and mineral character associated with the appellation.

About Val de Mer
Val de Mer is Patrick Piuze's second winery, co-owned with Moutard-Diligent and based in Tonnerre near Chablis. Although separate from Patrick Piuze's namesake winery, Val de Mer follows a very similar winemaking philosophy. Grapes are harvested by hand, fermentations begin spontaneously with native yeasts, and the emphasis remains on transparent expressions of Chardonnay and Chablis terroir.

One important distinction is that Val de Mer works with different vineyard sources from Patrick Piuze's namesake wines. While Piuze frequently bottles village-level Chablis from individual terroirs, Val de Mer takes a more traditional approach by blending multiple parcels to create a broader expression of the appellation.

Winemaker Description 

Founded in 1970 by Marc Colin and his wife Michele, Domaine Marc Colin now spans 15 hectares encompassing 26 appellations in St. Aubin, Chassagne, Puligny, and Santenay. Most of the land was inherited from past generations of Colin and Ponavoy; certain parcels have been in the family for more than 100 years. While the family does own prime territory in Chassagne, home base in St. Aubin features parcels of the very best vineyards, En Remilly and Chatenière, to name a few. These vineyards accrue prestige due to their sloped location; while much of St. Aubin resides on flat ground (rendering less interesting wines) the Colin properties are all situated on finely pitched hillsides. The resulting wines shimmer with savory minerality and luster.

Today Joseph, Caroline, and Damien, the children of Marc and Michele, own and run the domaine. The fourth sibling Pierre-Yves (who made the wine at Marc Colin for 10 years) established his own project in 2005. Sustainable and organic agriculture, older vines, and clay-limestone soils are just some of the components contributing to the quality of the final product. Winemaking style would best be called traditional, though Joseph (who makes the whites) and Damien (who makes the reds) are certainly not shy of innovation. Whites strive for optimum freshness; there is no heavy, ungainly wood here. The red wines are characterized by silky texture, ever-present fruit and a certain roundness with just a kiss of oak. Production consists of 70% white and 30% red with total production maxing out at 120,000 bottles.

Domaine Vincent Latour is one of Meursault's most storied estates, with roots stretching back to 1792. But with time, the green apple and gooseberry notes, touched with acacia blossoms and spice, open up on the palate. The texture is lively and fresh, yet there is substance here as well. The grapes are assembled from 10 parcels throughout Montmains, including some in Forêts and Butteaux. Séguier explains that Butteaux is deep in the valley and further from the Serein so it ripens later. The grapes are fermented in tank and older casks for 40–50% of the harvest.

Domaine Pierre Gelin is the leading wine producer in the small village of Fixin (pronounced “Fees-an”). The family domaine was founded in 1925 by Pierre Gelin and is today in the hands of Pierre’s grandson, Pierre-Emmanuel. Pierre-Emmanuel farms organically and works to minimize the impact on the environment in both vineyard and cellar.

The family owns 32 acres in total including parcels in five of the Fixin premier crus and the monopole Clos Napoléon.

In 1961 Pierre also purchased vineyards in Gevrey-Chambertin, including the monopole Clos de Meixvelle, Clos Prieur 1er cru, and the Grand Cru Clos de Bèze.

The 2022 is round and fleshy, with aromas and flavors of white peach, pear, and nectarine. Located in the heart of the village of Pouilly in Southern Burgundy, the Domaine des Sansonnets is owned by the same family since 4 generations. The current vine growers Mr & Mrs Lucien Berger work with passion and use sustainable methods to create this complex and vigorous Pouilly-Fuissé.

Uncontested king of the Mâconnais, this wine comes from the beautiful Southern Mâconnais region guarded by two jagged rocky outcros: Vergisson and Solutré. The 8 acres of 30 to 60 years old Chardonnay vines are planted in a clay limestone soil on hillside slopes facing the rising sun.
