Campari is a contemporary and charismatic classic that has remained unchanged throughout the years to the original formula. The creation of Campari was the result of the talent of Gaspare Campari, master drink maker and founder of the company. His experiments in concocting new beverages in Novara, in 1860, resulted in a recipe that still today remains a secret known only to the very few people in charge of the production process. 

Campari is an alcoholic spirit obtained from the infusion of bitter herbs, aromatic plants and fruit in alcohol and water. Many have tried to guess the number of ingredients: some say there are 20 or 60, but others list the ingredients at 80. To this day, alcohol and water are the only known ingredients of its special and secret recipe. Its vibrant red colour, intense aroma and distinctive bitter taste make it extremely versatile, and the perfect base for some of the most famous cocktails around the world.

Traditional Craftsmanship

Dolin's vermouth-making process begins with a neutral white base wine (10% alcohol) to which a carefully guarded selection of herbs and plants are added and left to macerate for several months. The recipe includes up to 54 different botanicals, most notably wormwood, but also hyssop, chamomile, genepi, chinchona bark, and rose petals. The Rouge's distinctive coppery color comes not from red wine, but from the particular plants used and sweetening with dark, caramelized sugar. The vermouth is then fortified to 16% alcohol, creating the perfect balance.

Gilbey's Gin is a delicate blend of 12 natural ingredients to achieve the ideal mix of complexity and balance to deliver a smoother, tangy, refreshingly dry gin with a hint of citrus that's the perfect choice anywhere, anytime. The key botanicals are; juniper, coriander, lemongrass, orange peel, kalamansi, angelica root, cinnamon and nutmeg.

Appearance is a pine-forward juniper, bitter orange rind, coriander mid-Taste, surprisingly obvious for a second and then quickly vanishing from consciousness. Aroma is classic with plenty of juniper, with orange zest and angelica present as well.

The lower notes have the bright, sappy, angelica still accompanied by the orange. The Nose is simple, but familiar and inviting. It’s fresh and generally quite positive. The Taste is assertive and sharp, with lots of classic gin botanicals making an— the Finish is sharply citrus with a mineral-tinged, calciferous/slightly chalky astringency.

Quite dry, with a roar of heat that is more expected at this price point. The Finish is moderately long, with that orange/citrus note enduring.
