Produced during outstanding years and in limited quantities, Matatia is about supreme quality and selectiveness. This wine embodies an eminence which is as rare and exceptional as the man himself. Matatia is a project that is always several years in the making and is named after Mat Haruni, without whom there would be no Dalton Winery.

Matatia is dark purple in colour, rich with fragrant notes of forest fruit, blueberries and raspberries, spiced with earthy hints of tobacco and licorice. The wine is full-bodied, well-structured complex and elegant with very good aging potential.
All Dalton wines are strictly Kosher Le Mehadrin and Kosher for Passover. They are under the supervision of the Merom Galil Rabbinate, Rabbi Yoseph Mishalil; Beit Din Yoreh Deya, Rabbi Shlomo Machpud; Rabbi Mordechai Ungar of Monsey New York and the Orthodox Union (OU).
The vineyards for the wine were preselected and attended special care throughout the years. Yields were dramatically reduced in order to increase the flavour concentration in the remaining grapes. Harvest was in late September and early October. The grapes for this wine came from separate vineyards that were picked and fermented separately. During fermentation, the grape cap was pumped over several times a day to increase the depth of colour and levels of extraction of the wine in the gentlest way possible.
Before completing fermentation, the wine was pressed out, and the free run wine was separated and used to make this wine. Malolactic fermentation was then encouraged and when completed the wine was racked into a mix of new and old French oak barrels for 24 months. Once the aging was complete each individual barrel was tasted for quality and only the wines of the very highest quality made it to the final blend. The wine was further aged for a year in the bottle before release.

This subtle blend produces a wine with fabulously fine bubbles, elegant golden colour and fine, delicate nuances of white fruit. Low dosage and at least six months’ time after disgorging gives this Champagne beautifully balanced structure on the palate that is highly appreciated when served as the aperitif or throughout the meal.

Inspired by our favorite Bordeaux white wines, Covenant Solomon Blanc 2022 is a tribute to one of best Sauvignon Blanc vineyards we know of in Northern California. The vines are planted at the Moaveni Vineyard in Bennett Valley. They border our Syrah vines, also planted there.
When we first tasted the wine post fermentation, we were astonished. I’ve been drinking Sauvignon Blanc for over 40 years, and the Solomon Blanc reminded me of the finest Sauvignon Blanc wines from the greatest producers in France. In barrel, it continued to improve, developing extraordinary complexity. There was no doubt in our mind that this wine was worthy of the Solomon name. We’ve never produced a white wine like this.
Solomon Blanc 2022 was fermented in French oak barrels and stirred on the lees to promote richness and depth. The wine is layered with complex and intriguing flavors redolent of lemon peel, pine nuts, kumquats, and passionfruit all bound together with a seamless mineral core. It finishes with freshness and great length.

The rich, spicy nose of bakers' chocolate and black cherry complements the brooding and spice-filled black licorice, black cherry, plum and cranberry on the palate. For regulation, this wine is produced only from a selection of the estate’s best grapes and must be aged for a minimum of 30 months, including 3 months of bottle aging. To be a Gran Selezione, this Chianti Classico follows the strictest standards of chemical parameters, reaching outstanding organoleptic characteristics, recognized and approved only after a blind tasting by a special committee of expert winemakers.
From the organoleptic viewpoint, in general, the Gran Selezione has a great structure that, for its provenience, gives superior balance and harmony, depth of flavor, and aromatic complexity, all under the unmistakable “Sangiovese” signature. On the palate, it combines the immediacy of fruit with the fascinating nuances, typical of wines that take a long to evolve.
As an excellent expression of a wine made only with Sangiovese grapes, ASSAI is a full-bodied wine with an intense ruby color. During aging in French oak barrels, it reached richness, complexity, and the right balance of taste and smell. The Judean Hills, where Tzora Vineyards resides, rise sharply from the coastal plain, and exhibit ideal conditions for growing wine grapes. Terraces cling to this rugged area in a multitude of directions as they follow the contours of the steep slopes. Cold winters, sharp temperature drops during the short summer nights and early morning summer mists, as well as variations in soils from rocky limestone outcrops to ones rich in minerals, all contribute to the character, the balance, and the great longevity of the wines. The wines of Tzora reflect the Judean Hills’ unique terroir. In order to achieve this goal, they make wine only from their estate’s fruit, grown in three vineyards, Giv’at Hachalukim, Shoresh and Neve Ilan, each with varying soils and meso-climates.
The Tzora Shoresh Blanc is a blend of 80% Sauvignon Blanc and 20% Chardonnay from grapes grown on old terraces of terra-rosa soils with limestone subsoils. The wine is aged sur-lie for 6 months in French oak barriques. Expressive on the nose with aromas of vanilla, tropical fruit and toast. The palate shows a fine sheen layer of spice to complement the exotic fruit notes that are balanced by a round, creamy mouthfeel and lively acidity.

Jean-Marc Brun started out with nothing. “It was a blank slate,” the gentle giant remembers with a smile. Well, not completely blank; his father had farmed a few hectares in the past, as part of the cooperative.
When Jean-Marc decided to become a winemaker in 1987, he rented a winery. “I started off making wine in the open air – my winery still needed an awful lot of work. My friends came to visit… and I didn’t have a roof! It was quite funny, but not particularly practical – and certainly not up to accepted standards.”
But it would take more than this to discourage Jean- Marc, who had just discovered a passion for wine and winemaking. “It didn’t all come together straight away. At first, I learned by watching the vignerons and winemakers. Then one day it just hit me – and I haven’t looked back since.”

Winemaker, Eli Ben-Zaken, crafts this wine by allocating a portion of premium grape varietals - Merlot, Malbec, and Cabernet Franc - destined for the winery's flagship wine, Domaine du Castel Grand Vin. The grapes are picked early to ensure that the resulting wine has enough acidity to offer the crisp and tart nature of a rose that is expected.
Then, the grapes are pressed and the juice is left in contact with the grape skins for just enough time to achieve the wine's impressive salmon hue. This has enchanting floral and berry aromas leading into a wonderful soiree of tart citrus and red fruit flavors on the palate and capped by a pleasing mineral finish. This rose is best in its youth.

Tal Pelter, the Winemaker and co-owner of Pelter and Matar Wineries, studied agriculture at the Weizmann Institute of Science in Rehovot, Israel. He got a BA in viticulture studies at Curtin University. Tal worked with winemaker John Griffith at Darlington Estate, a boutique winery located in the Perth hills, producing premium wines, blends, sparkling wines, Semillon, Sauvignon Blanc and Shiraz.
After completing his studies, Tal worked at Evans & Tate Winery, in Western Australia. In 2001, Tal returned to Israel with a vision of establishing his own winery.
After the passing of his mother Tiva in 2002, Tal founded Pelter Winery in her honor. Tal embarked on a journey to produce premium wines in Israel. Nir Pelter, C.E.O and co-owner of Pelter and Matar Wineries. After military service in 2005, Nir joined the winery, motivated by the spirit of the business, the teamwork, and excitement of a new venture. Jeb Dunnuck 90 Points | Deep ruby/purple-hued, the 2019 Château Greysac offers up solid aromatics of red and black cherries, leafy herbs, cedar, and spicy oak. These carry to a medium-bodied Médoc that has wonderful overall balance, ripe tannins, and a great mid-palate. It's an outstanding effort well worth enjoying over the coming 10-12 years or so. Drink: 2022-2034. (v. 2019).
Georgina Hindle o Decanter writes 90 Points | Ripe bramble fruits on the nose. Tannic grip from the start, filling the mouth completely but they have a lovely quality to them - soft and silky. Blackcurrant fruit fills the palate with pencil lead, slate and clove spicing. Feels like good quality with restraint and refinement. Give it some time or a good airing. The winery, Kishor, is an integral part of the community, employing five permanent workers from the Kibutz year-round and hiring more for the intense harvest season.
Medium-bodied, round, and balanced with a full mouth and rich, crisp acidity. Flavors of grapefruit, lemon, lime, floral, herbal, and mineral, with a touch of oak come across the palate. It has an exceptionally smooth finish. Nice with roasted fish.
