Vermouth & Aperitif

Carpano Antica Formula — Turin, Italy NV

Antonio Benedetto Carpano invented modern vermouth in Turin in 1786, and Antica Formula is the direct heir to that legacy. Hailed as the “King of Vermouth” by master mixologists worldwide, this legendary sweet red vermouth is crafted from a secret recipe of selected wines, herbs, spices, and botanicals that has remained essentially unchanged for nearly 250 years. It is the most recommended vermouth for Manhattans and Negronis — and for good reason. Wine Enthusiast awarded it 95 points.

The nose offers a strong bouquet of vanilla with spice, citrus, and subtle notes of almonds, raisins, and cloves. On the palate, it is rich and well-rounded — vanilla, licorice, herbs, figs, and cocoa layered with depth and complexity. The finish delivers bitter orange and date notes with a subtle hint of cocoa beans and saffron. Rich, fruity, and endlessly enticing.

🇮🇹 Wine Enthusiast 95 — “Rich, fruity and enticing, this sweet vermouth is warmed with notes of fig and dried cherries, and just faint hints of spiced gingerbread and bitter orange peel. Drinkable solo as an aperitif, or use it as a cocktail-mixing favorite.”

With a straw yellow colour, Yzaguirre Blanco Clasico Vermouth has an intense aroma with herby and spicy notes. Mild balsamic touches give it a pleasant and very unique structure. Fresh and smooth in the mouth and very well balanced, it has notes of vanilla and cinnamon.

Excellent as an everyday aperitif. Serve with 2 anchovy-stuffed olives, 2 or 3 ice cubes and a twist of orange. Serve very chilled.

Memo Summary Notes

The Yzaguirre Blanco Clásico Vermouth is a well-regarded example of the Spanish style of white vermouth, produced by Bodegas Yzaguirre, a house with a long history in the Catalan region (between Reus and Tarragona) dating back to 1884.

Yzaguirre's vermouths are made using traditional, artisanal methods and a blend of over 80 aromatic herbs and spices that are macerated (soaked) in a white wine base.

Cocktails: It works excellently as the Bianco/Blanc component in various cocktails, often where a sweet, less bitter white vermouth is desired:

• White Negroni (often with Gin, and a bitter like Suze or Luxardo Bitter Bianco).

• Martini variations (as a sweeter alternative to Dry Vermouth).

• V&S (Vermouth and Soda): Simple, refreshing, and popular in Spain.

Bordiga · Vermouth di Torino Bianco Extra Dry · Italy · 750ml

Bordiga Vermouth di Torino Bianco Extra Dry combines Piedmontese white wines with a wide range of botanicals, many from the nearby Occitan Alps. Complex and vivid, it emphasizes the interplay of its ingredients rather than the dominance of a single botanical.

Producer & Craft

Bordiga follows artisanal and traditional processes, reproducing and refining historical recipes while developing new ones in keeping with the distillery’s philosophy. Its recipes draw on the studies of Cavalier Pietro Bordiga, preserved in the Book of Ancient Recipes, and the knowledge passed down through generations of master distillers.

Many botanicals used by the distillery are hand-picked in Italy’s Occitan valleys for their essential oils. Here, mountain air meets Mediterranean influences, giving the plants distinctive characteristics. On arrival, the botanicals are checked by the master distillers against the distillery’s quality standards.

Although Bordiga has expanded its production capacity and introduced new technology, its team remains committed to carefully selected raw materials and authentic artisan production. Piedmontese wine, hand-picked Alpine medicinal herbs, alcohol and sugar form the foundation of its vermouth-making tradition.

Style & Flavor

This extra-dry white vermouth offers a complex, vivid botanical profile built around a Piedmontese white-wine base. Its appeal lies in the balance and interaction of the botanical components, making it versatile for both aperitif service and cocktails.

Producer Description

Bordiga
This classic vermouth is based on Piedmontese white wines and infused with a wide range of different botanicals, many of them grown in the Occitan Alps near the winery. The flavor of this vermouth is complex and vivid.

Serving Suggestions

Serve over ice as an aperitif, lengthen with tonic water or use in cocktails calling for dry vermouth.

Producer Description

With a deep yellow color, Yzaguirre Blanco Reserva Vermouth is highly aromatic, velvety and pleasant on the palate, with woody, herby and spicy notes reminiscent of ripe fruit. Its initial flavor is very tasty and balanced, in perfect harmony with its acidity. Twelve months in oak barrels give it consistency and character.

Great as an everyday aperitif or early evening drink. Excellent in a long drink with a few drops of Campari, 3 or 4 ice cubes, a slice of orange, a twist of orange peel and fresh mint leaves. Perfect for use in the kitchen to add another dimension to your dishes.

Memo Summary Notes

That is a great choice! The Yzaguirre DRY RESERVA Vermouth WHITE is a distinctive and highly-regarded Spanish vermouth, known for its unique aging process which sets it apart from typical dry vermouths.

The oak aging softens the vermouth and adds complexity that you don't find in stainless-steel-aged dry vermouths, making it excellent for sipping or mixing.

Winemaker Description

This Vermouth uses a mixture of 26 aromatic herbs such as marjoram leaves, gentian roots, orange zest and others, which all together compose our family recipe. We then add a blend of different Pio Cesare white wines, including our Moscato d’Asti. After a 15-day maceration, the Vermouth obtained is aged in oak barrels for at least 4 months. The Recipe is finally completed with the addition of caramel, which gives our Vermouth its light color, and its distinctive aroma and taste. In order to better appreciate our Pio Cesare Vermouth, we recommend drinking it in the old “piemontese style”, sipping it with no ice, but just a little slice of lemon zest.

Expert Review

Robert Parker 90+ Points | The NV Vermouth di Torino is based on Chardonnay but is infused and aromatized with cloves, cinnamon, quinine, citrus peel, ginger, nutmeg, marjoram and other secret ingredients that were written down on a piece of paper in 1952 and kept under lock and key ever since. The folks at Pio Cesare did well to bring this traditional recipe for Vermouth back into circulation. This is an ideal aperitivo drink that can be served on ice with a slice of lemon. It opens to a bright orange-gold color and offers a complicated bouquet that recalls the many aromatic ingredients used in the infusion. The fishing is sweet, but not excessively so.

Emilio Lustau is one of Jerez's most celebrated bodegas — a house with over a century of Sherry-making expertise and an unwavering commitment to quality. Their Vermut Rosé brings that same Sherry-house precision to the world of vermouth, creating a distinctly Andalusian expression that is as beautiful in the glass as it is on the palate.

The Lustau Vermut Rosé Vermouth Jerez 750ml is a sweet rosé vermouth built on a blend of Palomino Fino, Moscatel, and Tintilla de Rota sherries — the last a rare, indigenous red grape variety from the Jerez region that lends the wine its delicate pink hue and red fruit character. The blend is fortified with neutral spirit distilled from 100% Airén grapes and infused with a carefully selected bouquet of botanicals: wormwood, cardamom, nutmeg, vanilla, and chamomile.

The nose opens with vanilla, thyme, oregano, cedar, and fig. On the palate, orange peel, strawberry, and rose geranium emerge alongside green cardamom and orange blossom, all carried through to a long, elegant Sherry finish. Serve chilled over ice with a slice of orange — or use as the foundation of a stunning Spritz or Negroni Rosé.
