Winemaker's Notes

Santi has been crafting wines in the Valpolicella area since 1843, selecting the finest vineyards across the Val d'Illasi and neighboring valleys to capture the best exposures and microclimates. The Infinito Rosé is sourced from vineyards in the Bardolino DOC, just east of Lake Garda — a prime location for elegant, fruit-driven rosé.

Pale pink with vivid red tints, the wine opens with an intense, elegant bouquet of ripe strawberries, wild cherries, and blackcurrants. On the palate it is balanced, savory, fresh, and beautifully fruity with a clean, lingering finish.

Vinification

Grapes are harvested in mid-September and vinified by the rosé method, with brief skin contact to achieve the ideal depth of color. Alcoholic fermentation proceeds slowly at controlled temperatures with selected yeasts. A small portion undergoes malolactic fermentation. The wine is then developed in stainless steel under cold, oxidation-free conditions to preserve freshness and vibrancy.

Toyo Bijin Junmai Ginjo — Yamaguchi Prefecture, Chugoku, Japan

Toyo Bijin — “Asian Beauty” — is one of Japan’s most evocatively named sakes, and the story behind it is as memorable as the sake itself. Sumikawa Brewing Company, based in Yamaguchi Prefecture in the Chugoku region of western Japan, was founded by a brewer who named his label in honor of his late wife — a tribute that has since become one of the most recognized and beloved sake brands in the country.

This Junmai Ginjo is brewed from Yamada Nishiki rice — the gold standard of sake rice — and fermented in the Ginjo style at low temperatures. But where many Ginjo sakes lean toward delicate and floral, Toyo Bijin takes a bolder path: this is a very dry sake, famously described as “strong enough to kill a devil.” Assertive, umami-rich, and deeply satisfying.

This is the forth vintage that Grenache has dominated the P&L blend and the first with our new label. A blend of Grenache from Mangels Ranch in Suisun Valley, Cedar Lane in Arroyo Seco, and Waddington Ranch in Mendocino, Carignane from Lolonis, Maria Martinson, and Castañon all in Mendocino, and Syrah from Vecino in Potter Valley.

There is a good amount of whole cluster and carbonic maceration through the lots keeping everything fresh and fun. As always, the blend was made immediately after harvest and the wine was aged in a combination of French oak foudres and stainless steel tanks.

The aromas on the nose are fresh, ranging from white fruit such as pear and apple, to tropical fruit like pineapple and plum.

Fresh and indulgent opening, with a tasteful balance between sweetness and acidity and fruity notes of acidic and white fruit appear in the finish.

Pairs with exotic flavors such as Thai Tom Yum soup, Peruvian sea-bass ceviche, Mexican quesadillas or Labneh and Tahini served with pita bread. Laetitia, too, has its roots in Champagne. It was established in 1982 as the American outpost of the Champagne producer Deutz, but was sold in 1997 to Jean-Claude Tardivat, who renamed it after his daughter, and then sold again last year to Eric Hickey, the winemaker, and his partners. 

It now makes a full range of reds, whites and sparklers. Brut Cuvée is the entry level sparkling wine and it’s quite good — rich, creamy, toasty and apple fresh.

The Cava Brut by Elvi is a highly drinkable sparkling wine made from grapes grown in Spain's fertile wine regions. The coloring is very light, and nearly translucent with a straw coloring and some greenness. The bubbles are nice and prominent, both pleasurable to the eye and mouth.

The aroma is complex, with many different notes. A touch of fruit, a touch of yeast, and a touch of almond swirl around in the nose. The texture feels nice in the mouth with lighter acids that fall away at the end and a shorter aftertaste. Very enjoyable and easy to drink.

James Suckling | Aromas of crushed dark berries, spices and hints of tea leaves and wet earth. Lightly austere, with a well-defined structure, it has a medium body with firm tannins and juicy fruit underneath.

The Alois Lageder Schiava 2023 is a signature "mountain red" from one of the pioneers of biodynamic viticulture in the Alto Adige (Südtirol) region of Northern Italy. WINE

This Cabernet Sauvignon is a bold wine grown from some of the oldest vines in California. Gnarly Head’s untamed vines produce full-flavored grapes, dense with aromas of black cherry, juicy blackberry, peppercorn and charred oak. This dense and jammy wine boasts a bold tannin structure and a generous finish for those who like unique, big wines with a little eclectic edge.

WINEMAKING

Older vines produce fewer grape clusters, but the small berries yield intense, dark fruit flavors. The grapes for this Cabernet Sauvignon were harvested early in the morning while the weather is cool. This allows the grapes to start off cool and warm up gently for fermentation. Once the wine is made, the wine is aged on a blend of American and French oak to craft a bold and structured blend with abundant fruit flavors and complexity.

The Elvi Encina White (Blanco) is bright and transparent in color. Pleasant nose, citrus fruits, stone fruits, spring fragrances. In the mouth: airy and fresh, delicately perfumed, from which we appreciate the roundness and the elegant crunchiness. Everything is in its place. Delicious with any fish.

Winemaker Description 

A richly flavored red with autumnal aromas, plush red/black fruits and peppery spice. Few other Provençal reds can match the power and grace of this bottle (its form a traditional Normandy "Calvados" shape that only Gourgonnier uses).

This is a classic "barbecue wine" but with enough elegance for a formal dinner.

The label is an original artwork created exclusively for 67 Wine, making every bottle a collectible as much as a wine.

Behind the art is a wine of genuine quality. Bodega Obalo, established in 2006 on the border of Rioja Alta and Rioja Alavesa, farms 100% hand-harvested grapes with rigorous sorting standards. The 2019 Crianza is 98% Tempranillo with small additions of Viura and Garnacha, gravity-crushed into small-batch tanks, fermented, and matured 12 months in French oak before additional bottle aging. Winemaker Description 

Warre’s Fine White is produced from traditional white grape varieties from the Douro Demarcated Region. The fermentation takes place off the skins in order to produce a more delicate style of wine. Ageing takes place at the lodges in Vila Nova de Gaia in a combination of oak casks and stainless steel tanks. It is refreshingly light in taste and an excellent aperitif.

Warre’s Fine White is medium dry. It has pale straw color with crisp flowery aromas, fresh almonds on the palate and a long tangy finish.
