Named after the hard, dark stone that forms the riverbeds of Marlborough, Greywacke is a small-production estate focused on wines of genuine depth and site specificity. The Wairau Valley Sauvignon Blanc is their benchmark expression: harvested largely by machine during cool, often cold night-time conditions, picked earlier than normal over a three-week period commencing 16 March, transported directly to the winery in the Omaka Valley, lightly pressed for high-quality juice, and left on lees on individual vineyard batches until late June before blending. Marlborough Sauvignon Blanc with the volume turned down a notch — and all the better for it.
