Zárate is the benchmark producer of Val do Salnés — the cradle of Albaríno and the most celebrated sub-zone of Rías Baixas. The estate farms 7 hectares across 11 vineyards surrounding the villages of Sisán and Padrenda, with vines averaging 35 years of age planted on granite soils some 50 meters above sea level. Three of those vineyards are planted with ungrafted pre-Phylloxera vines — a rarity anywhere in the world. Since 1994, all plots have been farmed without plowing, with natural ground cover and zero herbicides; since 2006, the estate has held certification for controlled, integrated production. The harvest is purely manual, with grape selection on the vine, gentle whole-bunch pressing, and spontaneous fermentation in stainless steel — the wine then rests on its lees for three months to build complexity before bottling. Named after Erse, the Greek goddess of morning dew, this wine is a direct expression of the mist-shrouded, high-altitude vineyards that cling to the northern slopes of Mt. Etna. Tenuta di Fessina is one of the pioneering estates of the Etna renaissance — a project born from a deep belief that these ancient volcanic soils, farmed by small growers for generations, could produce wines of world-class distinction. The “Erse” Bianco is their signature white: a pure, mineral-driven Carricante that captures the tension and transparency only Etna can deliver.

The 2024 vintage on Etna was marked by cool nights and excellent diurnal range, preserving the grape’s natural acidity and aromatic precision. The result is a wine of striking vibrancy — toasty minerality and citrus on the nose, with lemon tree, lemon paste, and a whisper of candied fruit. Medium-bodied on the palate, it has real tension and a tight, focused finish that lingers with volcanic energy. While not untrue, calling Cheverny a value alternative to Sancerre would completely overlook the virtues unique to this appellation. It is a much zippier expression of Sauvignon Blanc compared to its famous neighbor, more citrusy than grassy. When Kermit introduced this wine in July 1993, he said, “Salvard makes the most drinkable, quaffable Sauvignon Blanc I have ever tasted.”

About Clos des Fous

Clos des Fous ("Enclosure of the Madmen") was founded in 2008 by four friends — including world-renowned terroir expert Pedro Parra — who were tired of hearing that Chilean wine was boring and industrial.
