Winemaker Notes
Johan Vineyard is an 85-acre, Demeter-certified biodynamic site in the Willamette Valley, south of McMinnville and west of Salem. Almost always the last Pinot pick of harvest — despite its low elevation, the Van Duzer Corridor funnels Pacific Ocean winds through the vineyard every summer afternoon, delaying ripening and building complexity. The soils are primarily marine sediment, and the benefit of biodynamic farming is immediately apparent standing in this healthy, alive place.
Day’s Johan Pinot Noir displays a deep red berry core allied to a beguiling spice component — classic southern Willamette. Around 40% whole-cluster fermentation adds savory, stemmy complexity. The delicate and complex olfactory expression opens on aromas which remind of white flower, exotic fruits. There is a very beautiful complexity for a vintage where the end-of-season’s sun brought a lot to the aromas. Excellent complexity that translates into great and elegant richness. Nice attack, straight and bright, it takes place with elegance on fruity notes associated with a dense structure and a beautiful acidity which brings a great length in the end of the mouth. The Bacchus label was created by David Gordon, one of New York’s first recognized sommeliers, and the person responsible for the Wine Spectator Grand Award-winning wine list at Manhattan’s famed Tribeca Grill restaurant. The restaurant opened in 1990 by restaurateur Drew Nieporent and actor Robert DeNiro. Gordon, who is self-taught, began learning about wine in the 1980s just as Kevin Zraly started to educate America on the world of wine. At the time, there were very few non-French somms working in the city and the British-born Court of Master Sommeliers was in its infancy.
While he tasted and learned about the best wines on the planet, which included expensive Burgundies and Rhône wines, Gordon always kept the consumer top of mind.“I started the Bacchus line as a fun, cool thing to do,” says Gordon. “There really weren't any wines associated with sommeliers at the time. Now there are many, but these were definitely among the first. I named the wine after the person I worship- Bacchus.”
Gordon has kept to his original promise that wines with the Bacchus label will always be affordable and delicious. “People want ripe fruit and a clean taste that’s not too oaky or tannic,” he says. The wines are refreshing, they can be drunk as an aperitif before dinner or with a meal."

Winemaker Description
Giusto Occhipinti of COS is a benchmark producer in the Vittoria appellation of Sicily, and certainly one of the most important, influential, producers in all of Sicily if not Italy as a whole. The winery was founded in 1980 by three friends, Giambattista Cilia, Giusto Occhipinti, and Cirino Strano. The initials of their last names form the winery’s name.
For Giusto, “the vineyard is like our life’s savings in the bank, so we must protect it.” Protecting it means that they work organically and biodynamically to support the health of the soil. They have never used any synthetic or chemical additives in the vineyard since the outset in 1980. Officially, the winery was an early practitioner of Biodynamic viticulture starting in 2000 and was certified organic as of 2007. The climate of Vittoria is also generally warm and dry making it well-adapted to organic & biodynamic viticulture. Giusto and his vineyard team also prepare many of the Biodynamic treatments in-house, though a few are purchased elsewhere from small, reputable sources for these important products.

Leclerc Briant is one of Champagne's most celebrated and pioneering grower-producers — a historic house based in Épernay with roots going back to 1872, and today one of the region's most committed advocates for biodynamic viticulture. Under the stewardship of the Lignac family, Leclerc Briant farms its vineyards according to strict biodynamic principles — certified by Demeter — believing that the health of the soil is the foundation of great Champagne. The estate works with the lunar calendar, uses only natural preparations, and practices minimal intervention in the cellar, allowing the terroir of their Marne Valley and Côte des Blancs vineyards to express itself with clarity and precision. The Réserve Extra Brut is the house's signature non-vintage cuvée — a blend of 40% Pinot Noir, 40% Pinot Meunier, and 20% Chardonnay, based on the 2019 harvest, with reserve wines adding depth and complexity. Extra Brut in style, it is drier and more precise than a standard Brut, allowing the terroir and the fruit to speak without the softening effect of dosage.
The color is bright pale yellow with a fine, lively mousse. The nose is complex and inviting: wet asphalt, ripe white peach, fresh redcurrant, pear, verbena, lime, herbs, and a touch of menthol — the signature of biodynamic Champagne. On the palate, it is medium-bodied and approachable with a rounded mid-palate, chalky and pithy texture, and sleek acidity animating flavors of chopped raspberry, nectarine, preserved lemon, and oyster shell. The finish is persistent, lightly spiced, and mouthwatering — clean, energetic, and long.

Olivier Foucher took over his family's 10.5-hectare estate in 2011 after studies in viticulture and oenology and years working alongside his parents. Le Chant du Silex — "The Song of the Flint" — takes its name from the estate's prized silex (flinty) soils, which impart a signature smoky, gunflint minerality and exceptional aging potential.
