This wine has wonderful transparency and clarity, with refreshing acidity, snappy lift, and ripe, fine tannins, as well as a stony underpinning and a lovely fresh lift of tomato leaf on the finish. Winemaker Description

The estate Chianti Classico is central in representing Badia a Coltibuono's vision and relationship with its place and its history. Using the traditional blend of Sangiovese and complementary varieties, as well as propagating vines the traditional way - by massal selection - has always been the backbone of the wine. Modern techniques such as vinification by gravity are used to bring forth the best expression of the fruit, but traditional approaches, from indigenous yeast fermentation to aging in oak casks rather than barriques, are central to the authenticity of the wine. The winery's long-established organic practices are also fundamental in the development of the truly unique character of the grapes.

There aren't any extra bells or whistles. The point is finding the essence of Sangiovese, without adding layers.

Winemaker Description

The "Sangioveto" of Badia a Coltibuono comes from the vinification of Sangiovese grapes aged in barrique. The place of origin is that of Monti in Chianti, in the province of Siena, where there are the vineyards of the Stucchi family that since 1846 is the owner of the company Badia a Coltibuono: always linked to tradition, The Stucchi family is also particularly attentive to everything related to the protection of the environment; all the wines of Badia a Coltibuono in fact have the BIO Certification. After the manual harvest, natural fermentation begins with autochthonous yeasts and subsequent maceration on the marc for 5 weeks. The aging takes 12 to 16 months and takes place in oak barrels. Finally, aging in bottle for a minimum of 6 months.

A wine with an intense ruby color, with floral aromas, red fruit and spicy notes. In the mouth it has a good body, harmonious and full-bodied. Good freshness and flavor and an enviable persistence.

The spectacular caves have supplied the stone for some of the greatest architectural works in Europe including the Pantheon, Notre Dame de Paris, Chartres Cathedral and more. The underground extraction probably began at the end of the medieval period and finally ceased around the beginning of the 20th century. The caves and their history are astonishing.

Bailly, a village in the Auxerrois region of Burgundy, is the birthplace of the Crémant de Bourgogne AOC. Bailly Lapierre has been in operation since 1972 in an underground quarry; the cellars are 50 metres underground, quarried deep in the heart of the famed Tonnerre stone, an enchanted, magical setting in which to watch over Crémants as they age. 430 grape growers provide the grapes for their Crémant (pinot noir, chardonnay, gamay, and aligoté). The wine goes through full malolactic fermentation and ages for 12 months in-bottle prior to release, giving it a wonderful roundness. It is clean, pure, and refreshing. Organically grown.

93 Points Wine Enthusiast | Lean, dry and spicy, this seven-year-old small-batch Bourbon may be reminiscent of of rye whiskey. It has a mild maple scent and complex layers of vanilla, cigar wrapper, tea and orange peel, with a spicy finish. The alcohol feels moderate, even mellow, for over 100 proof.

93 Points Whisky Advocate | Poor Baker Beam, great-nephew of Jim Beam. His eponymous Baker’s bourbon ended up a sleeper bottle alongside rightfully lauded Booker’s bourbon and stellar limited editions of Knob Creek. But this year, Baker’s has reason to boast, as it gets the single-barrel treatment. It will remain 107 proof and a minimum of 7 years old. However, the addition of details like barreling date, age, warehouse, and barrel number will make for fun treasure hunting. Our bottle offered a lush palate of blackberries, delicious dried fruits, licorice, and cinnamon.

Bally X.O is a rum blend of a minimum of 6 years as the AOC Martinique. Known for the triangular shape of its bottle, in reference to Mount Pelee, Bally X.O is also an intense and complex rum, marked by notes of figs and blond tobacco.

J.Bally is one of the oldest distilleries in Martinique. Its rums are characterized by the finesse of their aromas, a good roundness in the mouth and a great fruity richness.

Caribbean Cask has been matured in traditional oak whisky casks for 14 years, and then ‘finished’ in casks that previously held Caribbean rum. To create the ideal finish, Malt Master David Stewart filled American oak casks with his own blend of select West Indian rums. When he judged the casks to be ready, the rum was replaced with the 14 year old spirit and the wood was put to work adding the final touches.

The result is an exceptional single malt whisky with the traditional smooth, honeyed character of The Balvenie, married with notes of toffee and a hint of fruit, with a warm, lingering finish. Rich, sweet and creamy toffee on the nose combines with fresh fruit notes. Rounded with vanilla and sweet oak notes, with a fruity character that develops with time. Soft and lingering.

Brilliant ruby red with garnet-colored reflections, on the nose the aroma is sweet and fruity, the hints of fresh red fruit stand out, which combine perfectly with the more complex notes of licorice and pipe tobacco. The structure is powerful, and the palate is pleasantly enveloped by a consistent tannic texture, well balanced by a pleasant acidity. Extremely persistent with excellent aging potential.

It pairs particularly well with rich and tasty dishes. Perfect as a meditation wine.
