It s robust, with a deep amber hue and rich caramel scent. The flavor profile shows toffee, campfire smoke and a mouthwatering butterscotch note on the exhale. It almost reads like a peated Bourbon.

Decanter | Quince and pear. Rich and ripe but not overly so, it's silky on the palate, fairly high in alcohol, enjoyably full and opulent, with a fresh core. Includes a new parcel this year of 70-year-old Marsanne, so is now around 90% Marsanne, 10% Roussanne. The rest is a mix of 60-year-old and seven-year-old vines. Vinified in oak.

Aviation Gin American Batch Distilled 750ml
Aviation is distilled using a proprietary maceration recipe that produces a pure medley of botanical flavor.
STEP 1: INFUSION
It all starts with our precise blend of botanicals – cardamom, coriander, French lavender, anise seed, sarsaparilla, juniper, and two kinds of orange peel. The botanicals are suspended in a neutral grain spirit for 18 hours in macerating tanks.
STEP 2: DISTILLATION
The macerate is then pumped into a still along with pure water. Steam jackets heat the macerate, the vapors go into the condenser, which cools the vapors to form the gin distillate.
STEP 3: THE CUT
In a meticulously monitored process, the first fluid leaving the still, the "heads," is removed. Collecting the "heart of the spirit" throughout the run, the distillers then determine the end of the cycle and make the final cut, "the tails." This process takes approximately 7 hours and at this point, the "heart cut" is 142 proof.
STEP 4: BLENDING & BOTTLING
The "heart cut" is transferred to a blending tank where pure water is added, bringing the gin to the desired 84 proof. It is then sent to the bottling line for filling, capping, and labeling. Aviation is then packed into boxes and ready to ship.

The 2022 Rosso di Montalcino is sturdy, robust Sangiovese with a terrific aroma of blackberries and strawberries that mingle with savory spices and earthy botanicals. In the mouth the tannins provide good grip and structure with juicy intensity and a generous finish. A hearty, satisfying red that easily complements pizza, pasta, meat and sturdy vegetable dishes such as eggplant parmigiana or beans and greens.

In the glass the Nobile 2020 shows garnet red reflections. On the nose, it offers aromas of small red fruits, pomegranate and the unmistakable violet scent of good Sangiovese. In the background a touch of vanilla and tomato leaf.
The palate is well balanced, with sweet notes of ripe cherries and plum jam, supported by precise and elegant tannins. The body is dynamic and compelling and the pleasant drinkability is accompanied by good persistence.

Located in the Catalan countryside in the remote village of Avinyonet del Penedès, the Esteve family traces their history to 1597 in the same farmhouse, Can Fontanals.
Their spirit of innovation and respect for traditions, driven by an undercurrent of constant self-improvement and a relentless drive for quality, are the defining characteristics that set Avinyó Cava apart.
Avinyó Brut Nature is a refined expression of terruño-driven Cava from a vineyard selection of organically-grown, old-vine 70% xarel-lo, 25% macabeo, and 5% parellada from their Can Fontanals masía at 250m to 275m.
Vinification – After a night-time grape harvest to avoid oxidation and for optimal temperature, the grapes are pressed very gently in a pneumatic press. The base wine is fermented in temperature-controlled stainless steel between 14°C and 16°C. After cold stabilization, the wine begins its secondary fermentation in bottle with the addition of yeasts and sugar in late January. It is then aged a minimum of 24 months on the lees before being disgorged on demand. No dosage.

Very experienced natural wine drinkers may experience a small note of sulphur on the finish, but it does not distract from the uniqueness of this special wine.
Growing up in Agrigento on Sicily’s southern coast, Filippo Mangione had winemaking in his blood. For generations his family tended vines and made wine in their palmento until his grandfather passed away in the sixties. The vineyards and building were sold off; leaving his family without an estate.
After university, he dove headfirst into the world of wine: working as a waiter, sommelier, journalist, and sales/export in both the US and the UK. The more he worked selling other peoples’ wines, the more he felt the pull to revive his family’s legacy and re-establish an estate of his own. In 2011, after months of visiting and walking the slopes of Etna, Filippo happened to meet the old owner of a nearly abandoned vineyard in Calderara Sottana planted in the early 1900s behind a grove of chesnut trees. Too old to work the vineyards any longer, he was thrilled that Filippo wanted to continue his work, telling him “Take it. Don’t let this vineyard die.” Filippo spent his life savings to buy that vineyard and Ayunta was born.
The vineyards of Ayunta, now several parcels spread throughout the top terroirs (namely the contrada of Calderara Sottana) around Randazzo on northern Etna, total 2.8 ha. The vineyards are populated mainly by very old vines. Every vine is different which is why Filippo does all his farming either by hand or small machine. He doesn’t use any chemicals in his vineyards, preferring to allow the natural vitality of
the soil shine through in the wines.

Giusto Occhipinti of COS is a benchmark producer in the Vittoria appellation of Sicily, and certainly one of the most important, influential, producers in all of Sicily if not Italy as a whole. The winery was founded in 1980 by three friends, Giambattista Cilia, Giusto Occhipinti, and Cirino Strano. The initials of their last names form the winery’s name.
For Giusto, “the vineyard is like our life’s savings in the bank, so we must protect it.” Protecting it means that they work organically and biodynamically to support the health of the soil. They have never used any synthetic or chemical additives in the vineyard since the outset in 1980. Officially, the winery was an early practitioner of Biodynamic viticulture starting in 2000 and was certified organic as of 2007. The climate of Vittoria is also generally warm and dry making it well-adapted to organic & biodynamic viticulture. Giusto and his vineyard team also prepare many of the Biodynamic treatments in-house, though a few are purchased elsewhere from small, reputable sources for these important products.
Throughout the entire range, there is a focus on elegance and purity, especially the joyous, floral Frappato – Sicily’s answer to Cru Beaujolais.
The bright red fruit flavors of cherry and strawberry are vibrant and aromatic with low tannins and fresh acidity.

Lower in alcohol than most other Sicilian reds, but certainly without any compromise in flavor. Aromas of citrus fruit and hints of minerality on the nose. The wine has excellent depth of flavor and is well balanced with good acidity and a pleasant finish.
Spontaneous fermentation in concrete tanks on the skins with indigenous yeast. Seven to ten days of sking contact. Aged in concrete vats for eight months followed by three months in the bottle before release.

The 2023 Arinto dos Açores, a varietal bottling of the grape planted on volcanic soils exclusive to the Azores Islands, was my second favorite of the three years. It fermented with indigenous yeasts and matured in horizontal stainless steel vats with fine lees for eight months, an élevage that added to the verticality of the wine. It has moderate ripeness, 12% alcohol, a pH of 3.26 coupled with high acidity and 7.23 grams of tartaric acid per liter of wine, giving it a sharp profile. 10,466 bottles produced. Arinto dos Açores is a unique grape native to the Azores, unrelated to mainland Portugal's Arinto. These vines are planted in the rock cracks at the foothills of the volcanic mountain, almost touching the ocean. The vineyards are protected from the strong salty marine breezes by rock walls known as currais. This was native fermented in horizontal stainless barrels, where it remained on lees for 8 months. Tart lemon, lemongrass, juicy grapefruit, and elderflower run the sleek length of this electric wine, buffered by subtly creamy lees, and finishing with a stony, saline buzz. A beauty marine swept white.

Enjoy the layers of fresh peach, apricot and apple blossom aromas. The subtle oak spice adds creamy depth and complexity with a round and creamy mouthfeel. 70% of this wine underwent fermentation in stainless steel tanks for three weeks.
Racked off primary lees and kept on secondary lees for 7 months before bottling. 20% of the wine was fermented and matured in second-and third-fill 300-litre French oak barrels for 7 months and 10% was fermented and matured in a 4100-litre French oak foudre before being blended and bottled.

The "Sangioveto" of Badia a Coltibuono comes from the vinification of Sangiovese grapes aged in barrique. The place of origin is that of Monti in Chianti, in the province of Siena, where there are the vineyards of the Stucchi family that since 1846 is the owner of the company Badia a Coltibuono: always linked to tradition, The Stucchi family is also particularly attentive to everything related to the protection of the environment; all the wines of Badia a Coltibuono in fact have the BIO Certification. After the manual harvest, natural fermentation begins with autochthonous yeasts and subsequent maceration on the marc for 5 weeks. The aging takes 12 to 16 months and takes place in oak barrels. Finally, aging in bottle for a minimum of 6 months.
A wine with an intense ruby color, with floral aromas, red fruit and spicy notes. In the mouth it has a good body, harmonious and full-bodied. Good freshness and flavor and an enviable persistence.

Bailly Lapierre Cremant de Bourgogne Brut Reserve 750ml
OH! The caves of Bailly Lapiere, one of the major producers of Cremant in Burgundy.
The spectacular caves have supplied the stone for some of the greatest architectural works in Europe including the Pantheon, Notre Dame de Paris, Chartres Cathedral and more. The underground extraction probably began at the end of the medieval period and finally ceased around the beginning of the 20th century. The caves and their history are astonishing.
Bailly, a village in the Auxerrois region of Burgundy, is the birthplace of the Crémant de Bourgogne AOC. Bailly Lapierre has been in operation since 1972 in an underground quarry; the cellars are 50 metres underground, quarried deep in the heart of the famed Tonnerre stone, an enchanted, magical setting in which to watch over Crémants as they age. 430 grape growers provide the grapes for their Crémant (pinot noir, chardonnay, gamay, and aligoté). The wine goes through full malolactic fermentation and ages for 12 months in-bottle prior to release, giving it a wonderful roundness. It is clean, pure, and refreshing. Organically grown.
