Winemaker Description
Located in Pouilly-sur-Loire, in the heart of the France’s Loire Valley, the Domaine Gilles Chollet uses modern wine-making techniques to bring out the best of the Pouilly Fumé terroir. The 30 acres estate is comprised of clay-limestone and sandy soils and benefits from a south-western exposure. The vines are cultivated in accordance with sustainable agricultural methods known as “Lutte Raisonnée”.
Gilles Chollet worked in the vineyards for over ten years before taking over the Domaine from his father to develop it with his wife.
Little by little, Gilles has invested in high-performance equipment that allows him to better control the fermentation and to extract a maximum of aromas.

Cropped at 26hL/Ha, it offers shy red fruit aromatics but really comes alive on the palate. Solid flavor concentration flawlessly matches the energizing acidity, all tucked into a corset of gently sculpted tannins. The finish of this 2021 red is distinctively elegant. Chateau Beaubois is a 60-hectare estate in Costières de Nîmes run by fourth generation brother and sister Fanny and François Boyer. The entire estate is certified organic and farmed Biodynamically and the wines are produced to vegan standards. The history of viticulture at the historic Domaine Grange des Moines dates back to the 13th century when Cistercian monks first planted vines there.
The 2016 Domaine Grange des Moines Costières de Nîmes is composed predominantly of Syrah and a smaller percentage of Grenache and Marselan. With a few years of age, the wine has evolved gorgeously into an elegant expression of savory dark fruits and earthy complexity. In the glass, notes of violets, black pepper, damp earth, forest fruit and autumn leaves appear with just a touch of delicious funkiness. Enjoy this wine with earthy root vegetables, roasted meats and wild game.

Neal Martin writes: The 2022 Saint-Bris Exogyra Virgula is rather entrancing on the nose: Golden Delicious, elderflower, grassy meadow and lanolin scents. The palate is well defined with a potent menthol component. A touch of aniseed makes the finish very distinctive. Very fine. With further aeration the nose reminds me of Japanese shiso leaf. Domaine Goisot's place in the wine world is beautifully summed up by Burghound's Allen Meadows: "No one but no one delivers more quality for the price than Goisot. The quality is flat out amazing, particularly given the modest appellations with which he works".
Guilhem and and father Jean-Hugues Goisot, like all top vignerons in France, recognize that great wine comes from great viticulture, and they work tirelessly in the vines to ensure that their parcels are as well care for as possible. Their viticulture is certified biodynamic, with great pains taken to produce as natural an environment for the vines, and a particular goal of stimulating the natural defenses of the vines against disease and depredation.
Here’s the meaning behind the bottle’s name: “Exogyra” is an extinct genus of fossil marine oysters dating back to the Jurassic era, deposited deep into the earth under the vines; “Virgula” means comma, referring to the curved shape of the oyster shells. The wine also happens to go remarkably well with oysters.

VertdeVin 93 Points | The nose is elegant and offers a small richness, gourmandize as well as a certain / fine power. There are notes of ripe blackberry, blueberry and small notes of cassis associated with a touch of cherry tail, ripe / fresh red berries as well as hints of pepper, lilac, spices and a very discreet almost tonka bean / incense hint. The palate is fruity, well-balanced, slightly tight and offers juiciness, a small freshness, suavity, gourmandize, a beautiful pulpy / juicy fruit, generosity, roundness, a small fat as well as a fine straightness. On the palate this wine expresses notes of pulpy / fleshy cherry, pulpy / fleshy raspberry and small notes of purple plum associated with touches of cornflowers, blue berries as well as hints of cherry stone, licorice stick, zan and a subtle hint of sweet spices. Tannins are very discreetly firm. Presence of a subtle toasted hint on the finish / persistence. Good length.

The harvested grapes are carefully sorted in the winery. Enzymage, yeasting, cold pre-fermentation maceration for one week, daily pigeage, warm maceration. Aged for 12 months in oak barrels, of which 1/3 new, malolactic fermentation in barrels, then assembly in stainless steel tanks for 3 months. Light filtration to bring more clarity and aromatic purity.
Tasting Notes: Ruby-purple color with mauve gleams, aroma of blackberries, redcurrant, cherry stone. A feline and wild evolution is not uncommon over time. Orientation towards leather, chocolate, pepper. A wine to be allowed to age a little so that it opens fully. Wine for laying down.

Full of phenolic, lip-smacking texture woven through its core, lending a sense of satisfying grunt to this dry yet balanced style. Clarity, precision and harmony are keywords in this wine's execution. A little more fleeting on the finish than ideal. (5.5g/L).
PointsThe original Huët vineyard is nearly 9 hA. It has the richest soils of the domaine’s three crus - a deep limestone-clay - and the wines are generally the estate’s most approachable. 90 Points Vinous | The 2017 Brut Vouvray Pétillant is a lightly sparkling demi-sec style. This is a round and lightly biscuity expression with very fine delicate bubbles but not fully sparkling - the second fermentation uses some residual natural sugar that is retained from the first fermentation. Left on lees for around three years, it develops a light pastry character alongside floral notes and a salty sensation. The mouth-watering acidity combines with an attractive, textural roundness and weight.

A clean, charming, distinctive wine with expressive minerality. Its structure and intensity in the mouth suggest good ageing potential. Ideal with fish and white meats with creamy sauces.
The winery and vineyards are located in and around the village of Poinchy, which is just outside of Chablis itself. The wines from this area tend to be ever so slightly more generous on the palate in terms of power and amplitude, but with a clear and distinct line of briny minerality and acidity that unmistakably scream 'Chablis'!
AgriBio certified since 2010 and practicing organic farming. Alcoholic and malolactic fermentation in 50% tank and 50% neutral barrels of varying age. Blended wines are aged on the lees for 18 months in combination of 2/3 tank and 1/3 oak.

Neal Martin of Vinous writes | The 2021 Chablis Côte de Léchet 1er Cru comes from 60-year-old vines and spent six months on the fine lees, 10% aged in barrel. It has a punchy nose with very aromatic floral scents, hints of grapefruit and more subtle earthy aromas. The palate is well-balanced, with a slightly honeyed opening and acidity neatly offsetting tropical notes of mango and pineapple. Quite concentrated on the finish, this should drink well for a few years. Oddly, more like a 2022 in style! Drinking 2024 to 2032.

Beautiful nose with white fruits, ripped and gourmands with a richness due to the terroir, both rich and unctuous.
A fine pale lemon. Delicious bouquet in yellow fruit, with a lively finish, very even throughout, ripe but not heavy. From bottle, a little more honeysuckle to the nose, less gas on the palate but broadly similar with a fine fresh finish.

Full-bodied, rich and muscular, it's deep and powerful, with imposing reserves of concentration, while remaining vibrant, even fine-boned despite its substance and plenitude.
Burghound 95 Points | Markedly floral-suffused aromas are comprised by notes of more distinctly spiced and earthier plum and black cherry where a hint of the sauvage lurks in the background. The equally sleek though notably more voluminous and powerful if less mineral-driven flavors coat the palate with dry extract while offering excellent depth and persistence on the beautifully balanced finale. This is one of the best Mugnier Bonnes Mares in recent memory.

Domaine Jacques Prieur owns a 1.8 acre parcel of Les Bressandes in the Grand Cru of Corton. Les Bressandes sits on the northern portion of the hill of Corton on the lower slopes. Soils are heavier here than further uphill consisting mainly of clay and small amounts of limestone.
Vinification: Grapes are hand harvested, strictly sorted and destemmed. The must will sit on the skins for 19 days prior to fermentation. The wine ages for 17 months of in oak barrels deep in the cellars of Domaine Jacques Prieur.

Burhound 92-94 Points | An elegant, pure and ultra-fresh nose offers up notes of lilac, rose petal, white peach, tea and citrus zest. There is a markedly more refined mouthfeel to the utterly delicious and highly seductive medium weight flavors that are more precise, all wrapped in a citrusy, impressively persistent and youthfully austere finale. This is very classy and I particularly like the underlying tension and balance that should also permit this beauty to age effortlessly over the next 12 to 15 years. In a word, excellent.

The Ramonet estate is one of the legendary estates of the Côte de Beaune. The grandfather, Pierre Ramonet, a talented winemaker, already sold his wines across the Atlantic before World War II and in French starred restaurants. Noël and Jean-Claude Ramonet continued his work, while putting the terroirs in the right direction thanks to better control of yields.
The two brothers come and separated, by mutual agreement. Noël just wants to work his vines and deliver his grapes to his brother Jean-Claude who will be in charge of winemaking and marketing. For wine lovers from this world famous estate, there will be no change. Just two labels, that of the Ramonet estate and that of the Jean-Claude Ramonet wine merchant. Jean-Claude will also take care of part of the vineyards of the Girardin estate, bought by the Bordeaux resident Philippe Capdouze, founder of Ficofi (an ultra-select club for the sale of great wines). Its whites remain a benchmark in Burgundy.

The grapes are harvested late and, once they’ve been selected by hand in the vineyard, vinification begins with whole bunches. Fermentation is spontaneous with native yeasts and lasts approximately 2 to 3 weeks. The wine then ages in oak barrels for about 6-8 months, and is finally bottled unfiltered.

Burghound 93 Points | Here the less expressive nose flirts with reduction though a wisp of red berry fruit is discernible so I would suggest decanting this if you're game to try a bottle young. Otherwise the succulent and nicely rich flavors are blessed with abundant amounts of dry extract that coats the palate and buffers the moderately firm tannic spine on the youthfully austere and sneaky long finish.
