What you get instead is a bright, dry, fruit-forward white that lets the cool-climate character of Potter Valley speak clearly. Sourced from certified organic vineyards in one of Mendocino County's highest-elevation and most temperature-variable sub-appellations, this is Chardonnay built for the table rather than the trophy shelf.

Potter Valley sits at the northeastern edge of Mendocino County, separated from the warmer coastal valleys by the Mayacamas Mountains. The combination of warm days and cool nights preserves natural acidity and extends the growing season, allowing the Chardonnay to develop ripe orchard fruit flavors without losing freshness or structure. Organic farming across the estate reflects a commitment to soil health and clean, expressive fruit.

The wine is fermented in stainless steel and sees no oak contact and no malolactic fermentation — a deliberate choice that keeps the palate crisp, linear and food-friendly. Sattlerhof is one of Südsteiermark’s most dedicated family estates — rooted in Gamlitz, at the southern tip of Styria where the warm Adriatic climate from the south collides with the cool continental air from the Alps to create one of Austria’s most dramatic wine-growing environments. Some 120,000 vines thrust their roots deep into the meagre crystalline quartz and coral-reef subsoils of the Kranachberg slope, farmed organically and biodynamically with painstaking hand-labor: soft pruning, manual shoot removal, leaf thinning, and hand-harvesting. Materia Prima Orange Wine Xarel·lo — Penedès, Cataluña 2024

Materia Prima is a project from the Parés Baltà family — one of Penedès' most committed organic and biodynamic estates — dedicated to exploring the full expressive potential of their indigenous varieties through natural, minimal-intervention winemaking. This Orange Wine is produced entirely from biodynamically grown Xarel·lo and Sauvignon Blanc, vinified with extended skin contact in the traditional amber wine style. The result is a wine of genuine complexity and character: pale amber, slightly cloudy, and full of the kind of textural depth that only skin-contact winemaking can produce.

The 2024 pours a pale amber with a slight natural haze. The nose is aromatic and layered — citrus peel, tropical fruit, and compote with a subtle oxidative complexity from the skin contact. On the palate, it's surprisingly approachable — fine structure, pleasant density, and gentle tannins that give it grip without austerity. Klein Constantia Sauvignon Blanc — Constantia, South Africa 2024

Klein Constantia is one of South Africa's most historic and celebrated estates, situated in the Constantia Valley on the slopes of the Cape Peninsula — a site with a winemaking legacy stretching back to the 17th century and home to the legendary Vin de Constance. Their Sauvignon Blanc is a wine of genuine craft and ambition: sourced from 42 individual vineyard blocks across the estate, each fermented separately to allow the terroir of each parcel to express itself before careful blending. Grapes are harvested at 4am to preserve freshness, and the winemaking is a meticulous balance of wild and inoculated fermentation — 80% wild (some ferments taking up to two months to complete), 20% with Non-Saccharomyces Cerevisiae for complexity and natural microbial protection. Ten percent is aged in neutral 500L oak barrels, and the wine spends six months on gross lees before blending and bottling.

The 2024 pours light and bright. The nose is perfumed and atypically complex for Sauvignon Blanc — grapefruit, lime, kiwi, yellow plum, and hints of mango, with a citrus blossom and umami thread. Vineyard Sources
The 2025 Val de Mer Chablis is assembled from three parcels situated in different parts of the Chablis appellation. Des Couverts is located in the village of Chablis, Préhy lies near Courgis, and the third parcel comes from Lignorelles. Bringing these sites together creates a broader expression of Chablis while maintaining the freshness, tension and mineral character associated with the appellation.

About Val de Mer
Val de Mer is Patrick Piuze's second winery, co-owned with Moutard-Diligent and based in Tonnerre near Chablis. Although separate from Patrick Piuze's namesake winery, Val de Mer follows a very similar winemaking philosophy. Grapes are harvested by hand, fermentations begin spontaneously with native yeasts, and the emphasis remains on transparent expressions of Chardonnay and Chablis terroir.

One important distinction is that Val de Mer works with different vineyard sources from Patrick Piuze's namesake wines. While Piuze frequently bottles village-level Chablis from individual terroirs, Val de Mer takes a more traditional approach by blending multiple parcels to create a broader expression of the appellation.
