To impart highlights of vanilla, caramel and nutmeg, Ron barrel fermented and aged 70 percent of the Chardonnay in French and American oak barrels (20 percent new) for eight months. The resulting wine has ripe pear and pineapple, and mango flavors highlighted by citrus, Granny Smith apple and hints of baking spices.

Winemaker Description 

The Brut Souverain is the most historical cuvée in the region, as it was the first cuvée Apolline Henriot produced in 1808. Apolline aspired to put the light on her vineyards through the expression of a champagne. According to her, one year was not enough to tell the story of the terroirs, so she decided to put wines in reserve each year to incorporate them into a future blend.

Therefore, she founded the House by creating a Champagne that would have blending as its fundamental principle. The House respects this philosophy today and uses every terroir in this multi-cru, multi-vintage cuvée. It was named Brut Souverain by Ernest Henriot, Apolline's grandson, when the House was appointed the official champagne supplier to the Courts of the King of Holland and of the Emperor of Austria-Hungary.

The color is pale yellow with light green accents. The nose is vivacious and fresh: citrus, white flowers, small berries, verbena, plum, and summer flowers, with lovely shortbread depth. On the palate, it is elegant and vibrant — round and ample, with peach, lemon, grapefruit, biscuit, and honey, sleek bubbles, and a harmonious, minerally finish that never tires. Domaine Daniel et Christine Pollier has been producing white wines across the Mâcon since the 18th century — one of the region’s most quietly distinguished family estates. The domaine comprises 13 hectares planted entirely to Chardonnay across Saint-Véran, Pouilly-Fuissé, Mâcon-Villages, and Mâcon Fuissé, all crafted solely from estate fruit grown on vines averaging 40 years old, with some parcels reaching an impressive 70 years. Saint-Véran is often called the “hidden gem” of the Mâconnais: it shares the same limestone-rich soils as its famous neighbor Pouilly-Fuissé, with a power and ageability that falls between Mâcon-Villages and Pouilly-Fuissé — at a fraction of the price. ‘Les Trois Bousquet’ is a single-vineyard expression of this terroir at its most precise.
