John Gilman 91 Points | The 2020 Saint-Julien en Saint-Alban from Éric Texier is a fine bottle of young syrah. The bouquet is deep, precise and beautifully black fruity in personality, wafting from the glass in a mix of cassis, pepper, expresso, grilled venison, a nice touch of black olive, granite soil tones and plenty of upper register smokiness. On the palate the wine is full-bodied, ripe and very well balanced, with a fine core of fruit, lovely soil inflection and grip, fine-grained tannins and a long, complex and seamlessly balanced finish. This is still a puppy and quite primary in personality today, but also quite easy to drink. It is not a crime to be opening bottles today, but more complexity will certainly emerge with just a modicum of patience."

The 2020 Max Reserva Cabernet Sauvignon has a dull cherry red colour with purple shimmers. The nose unfolds notes of strawberries, ripe black cherries, cassis, accompanied by cloves, marzipan and some mint, tarragon and rosemary notes, all framed by pleasant touches of caramel and chocolate.
The palate is predominated by ripe red fruits and sweet notes that recall spices like cloves and some vanilla, chocolate, roasted coffee and cedar. It is a wine of great structure and juiciness with round tannins, crowned by an excellent persistence.
The Errazuriz Max Reserva Cabernet Sauvignon 2020 is an outstanding selection, delivering power, elegance, and complexity for a great price.

Esporão Tinto Reserva 2022 750ml
The Wine Advocate 92 Points | The 2022 Reserva Tinto was produced with a multi-grape blend of Alicante Bouschet, Trincadeira, Touriga Nacional, Aragonês and Cabernet Sauvignon from granite and schist soils that fermented in stainless steel, concrete vats and marble lagar, with malolactic in stainless steel, and matured in French and American oak barrels, 20% of them new, for 12 months. It has a serious nose that is Mediterranean, spicy and smoky, with notes of dry hay and straw, ripe fruit and a hint of iron. It's medium- to full-bodied, with abundant tannins and some oak flavors. It comes in at 14% alcohol, with a pH of 3.61, finishing very dry. Wait a bit. 500,000 bottles produced. It was bottled in April 2024.

Essex - Handcut Cravero Parmigiano Reggiano
Parmigiano Reggiano from Craver Giorgio Cravero’s family has selected and aged Parmigiano Reggiano in Bra, Italy since 1855. Just off the main drag of the town of Bra, home to Slow Food’s biennial Cheese festival, lie the halls of Cravero. Twenty-foot high rooms that hold five thousand wheels of Parmigiano Reggiano. Cravero’s wheels rest on pine and they turn their wheels more frequently than other agers with an aim to
make a softer, less cakey texture.
Aging rooms like Cravero’s have long been a part of the cycle of making and selling Parmigiano Reggiano, much like they are for other long-aged cheeses like Comté and Gouda, cheeses whose lengthy affinage represents a real cash flow issue to farmers and cheesemakers.
Commodity Conundrum
A consorzio unites Parmigiano Reggiano makers. It has, by almost any measure, done an amazing job. Thanks to its work parmesan is the single most admired—and eaten—cheese in the world. But there is a gnawing flaw. The consorzio does not mention the maker and ager so it gives the impression that the cheese is a commodity, that there is no real difference from one wheel to the next.
Cheesemongers know better
People may have a sense that Parmigiano Reggiano is an interchangeable cheese, one wheel no better than another. But while its production is controlled by a strict PDO, there’s nothing in the rules that says farmers, makers and agers can’t try to do better. Some do—and you can taste it.
Mountain Pasture
The milk for Cravero Parmigiano Reggiano comes exclusively from cows that eat flora harvested from the nearby mountains of Benedello di Pavullo, a radius of 5km from the creamery. Not all Parmesans are made in the mountains, but it makes a difference. The diverse mountain ground cover gives these cheeses a distinct terroir, a flavor that can’t be replicated from lowland grass.
Massimo's Marvel
Head cheese maker, Massimo pictured here, makes just ten wheels of cheese per day. His dairy is called Caseificio Sociale San Pietro and it’s one of the smallest makers in the Parmigiano Consorzio. Plus he's one of only a few dozen of the 300 Parmigiano Reggiano cheesemakers who make a cheese from exclusively mountain pastures.

Feta Voras is made in the far Northwestern corner of Greece, in the province of Florina. This is mountainous land, covered in wildflowers and herbs.
It’s about as far away from the island of Lesbos and M. Tastanis’s feta as you can get and still be in Greece, but the cheese is still proper feta, recognized with the PDO protected status for traditional feta.
The small third generation firm, run by brothers Andreas and Sokratis, makes a creamy, crumbly cheese that you’ll want as a staple in your home.

Background: Marcel Petite was an affineur (ager of cheese) who, in the 1960s, established an aging facility at a former military fort called Fort Saint Antoine. Though Marcel Petite passed away in the 1980s, his legacy and philosophy of aging has endured. Fromageries Marcel Petite specializes in slow, cool maturation of Comté, coaxing out complexity and nuance from the ripening wheels. Marcel Petite was the first person to practice this aging technique and, of the 150 fruitières in the region, the company works with 35. In their words, they are “the biggest of the little affineurs.” 7,000 tons of Comté passes through their caves each year and fruitières deliver cheese roughly twice per month, bringing in anywhere from 20 to 40 wheels at a time, depending on the size of their cooperative.

Centerbe Faccia Brutto is our take on a European herbal liqueur that is both refreshing and delicious. A number of fresh and dried herbs are used in the blend and macerated in non-GMO neutral grain spirit.
