It's medium to full-bodied, firm, tannic and sturdy but essentially ripe, with a softness to its structure that suggests early accessibility. The long, mocha-tinged finish lingers elegantly, a delicious capstone to a super wine.

The Dalmore Highland Single Malt Scotch Whisky recently introduced a new 21 Year Old, the newest whisky in the brand’s Principal Collection. This expression will be an annual release, and is limited to only 1,000 bottles available in the U.S. In a statement from the distiller.
The Dalmore 21 is described as the essence of the carefully-composed spirit produced by The Dalmore’s stills, with a character developed over two decades. This new expression rests for an initial period in American white oak, ex-bourbon barrels. The whisky is then matured in rare casks sourced from Sherry makers Gonzalez Byass of Jerez, Spain.
These casks were previously used within the solera system to produce The Dalmore’s 30 Year Old Matusalem Oloroso Sherry. The distiller’s notes show that The Dalmore 21 features the brand’s characteristic flavors of bitter chocolate, Seville blood orange and subtle spice.
The Dalmore team sought to create harmony in this whisky, balancing the characteristics of Colombian coffee on the nose, sweet licorice on the palette and peaches on the finish. Master Whisky Maker Gregg Glass said that only after 21 years can a whisky of this quality and depth emerge, creating a distinguished single malt.

Israel. Matatia is an extraordinary gift, honoring the man whose vision is the inspiration for Dalton Winery. Produced during outstanding years and in limited quantities, Matatia is about supreme quality and selectiveness. This wine embodies an eminence which is as rare and exceptional as the man himself. Matatia is a project that is always several years in the making and is named after Mat Haruni, without whom there would be no Dalton Winery.

Matatia is dark purple in colour, rich with fragrant notes of forest fruit, blueberries and raspberries, spiced with earthy hints of tobacco and licorice. The wine is full-bodied, well-structured complex and elegant with very good aging potential.
All Dalton wines are strictly Kosher Le Mehadrin and Kosher for Passover. They are under the supervision of the Merom Galil Rabbinate, Rabbi Yoseph Mishalil; Beit Din Yoreh Deya, Rabbi Shlomo Machpud; Rabbi Mordechai Ungar of Monsey New York and the Orthodox Union (OU).
The vineyards for the wine were preselected and attended special care throughout the years. Yields were dramatically reduced in order to increase the flavour concentration in the remaining grapes. Harvest was in late September and early October. The grapes for this wine came from separate vineyards that were picked and fermented separately. During fermentation, the grape cap was pumped over several times a day to increase the depth of colour and levels of extraction of the wine in the gentlest way possible.
Before completing fermentation, the wine was pressed out, and the free run wine was separated and used to make this wine. Malolactic fermentation was then encouraged and when completed the wine was racked into a mix of new and old French oak barrels for 24 months. Once the aging was complete each individual barrel was tasted for quality and only the wines of the very highest quality made it to the final blend. The wine was further aged for a year in the bottle before release.

Our 2021 MC² transports us to an Italian kitchen, homemade spaghetti sauce (the recipe passed from ancestor to ancestor) simmering on the stovetop. The nose and palate harken the mind to dried herbs and a fresh garden, but not in the way one would usually imagine.
The expected berry notes differ from the usual and instead give the impression of heirloom tomatoes like Black Cherry (the tomato kind), Mr. Stripey and the Chocolate Stripe as well as the beloved hybrid Sungold, with just a flirt of actual black cherries as well. Sips conjure oregano, black pepper, thyme, and black currant, rubbing elbows with those luscious tomatoes and cherries. Tannins satisfy our desire for grip while leaving us wanting more.
Overall, another feather in the cap of our much-loved MC² collection.
Vintage Notes: Winter of 2021 gave us some surprisingly warm days and just enough snow to be protective when the temperatures dipped low. Early spring was lovely - sunny and mostly dry with undisturbed flowering and fruit set. Beginning in June, the summer rains arrived and persisted through August. Once into September and more so in October, we were blessed with warm and dry weather, allowing us to round out our harvest season in good conditions.
The abundant moisture during the summer months resulted in a smaller crop but yielded very fruit-driven and expressive reds and sparkling and bright and refreshing whites and rosés.
