Rewarding with extraordinary depth and poise, the drinking pleasure of 2021 Signature Cabernet Sauvignon begins with notes of royal cassis that fan out on the palate and continue with silky black cherry and refined dark berry fruit framed by bakers’ chocolate, cedar, and toasted sage. A lush, supple midpalate displays firm yet suave tannins balanced by a juicy texture lent by a deft blending of Merlot from the estate’s hillside vineyards. This is both a classic wine and vintage, finishing like it begins, with a flourish of brambly blackberry fruit lifted by accents of violets and bergamot.

Winemaker Description

We create the conditions for making Late Harvest Zinfandel by allowing the grapes to hang on the vine approximately 3--4 weeks after they normally would be picked for a dry wine. These grapes were picked on October 30th on a beautiful Fall day, and the grapes arrived at the winery at 40° Brix of sugar. We crushed the grapes into a small 1,500-gallon tank and as is our tradition at Dashe Cellars, we fermented the grapes naturally, using the native yeasts that naturally live on the skins of the grapes. We let the grapes macerate to gain color and flavor, and then allowed the tank to warm.

The fermentation took off quickly, and then naturally halted when the alcohol had reached about 15.5% and the sugar level was about 9%. We always allow the wine to achieve its balance of sweetness and alcohol naturally, by letting the fermentation finish on its own.

The wine was aged in older French oak barrels so as to not overpower the intensity of the fruit. We bottled the wine as soon as possible to maintain its fresh fruit flavors and conserve its sweet concentration and purity. The wine is unfined and received minimal handling to the bottle.

Dassai "23" is the sake that defines Dassai. It is made with rice that has been milled so that only 23% of the original size of the grains remains, this is the highest degree of milling of any sake in the world. Going to this extreme allows us to create a sake like no other, a sake that is the pinnacle of refined elegance, subtlety, and delicate flavors and aromas.

To craft the ultimate Junmai-Daiginjo sake, we polished down Yamada-Nishiki rice to 23%. Delivering delicate floral aromas with a palate reminiscent of honey and an elegant lasting finish. The delicate and complex olfactory expression opens on aromas which remind of white flower, exotic fruits. There is a very beautiful complexity for a vintage where the end-of-season’s sun brought a lot to the aromas. Excellent complexity that translates into great and elegant richness. Nice attack, straight and bright, it takes place with elegance on fruity notes associated with a dense structure and a beautiful acidity which brings a great length in the end of the mouth. There are aromas of exotic fruits (litchi, mango).

The vineyards are in Pouilly-Fumé Contrôlée, which includes Pouilly-sur-Loire, Saint-Andelain and Tracy-sur-Loire at the eastern end of the Loire Valley (including the vineyard of the Château du Nozet estate).

Both clay and limestone influence the delicate characteristics in Ladoucette Baron de L Pouilly-Fumé. This Grande Cuvée of Pouilly Fumé is produced exclusively in the best years and from the first pressing of the estate’s grapes. Winemaker Description.

It's that kind of forward-thinking that led Master Blender Ian MacMillan to marry a bevy of young single-malts and set them to rest in new toasted but un-charred American oak. 

Heady virgin oak, bursting with aromas of lemon zest and sweet barley sugar, with delicious notes of apple and nutmeg. What are we up to? In Decideret we make wild fermented ciders and fruit pét-nats. We use surplus garden apples and organic fruit from the best orchards in Denmark.  We make highly enjoyable vinous ciders with little intervention. At the same time we aim to push the boundaries for what cider can be. It is time for a real cider culture Our ciders are quite vinous, dry but at the same time juicy like a pét-nat.

They can be quite different from what is normally perceived as cider. We are working to prove that a cider can be every bit as quenchy as beer, as complex as wine, as sour as lambic, and as fruitful as freshly pressed juice.  We crush and press apples, ferment juice into cider, and bottle it by hand in small and big bottles – cider can be kept well in both a wine cellar and in a breast pocket. Some ciders are to be drunk young and fresh with a full throttle fruity flavour. Other ciders release their potential when aged in oak or with a long maceration.
