B&B By Bénédictine is one of the oldest premixed cocktails. In the 1930s, during Prohibition in the United States, a barman at Club 21 in Manhattan came up with the idea of mixing brandy with Bénédictine. 

In 1937, Le Palais Bénédictine decided to produce this by blending 60% Bénédictine with 40% fine French Brandy, allowing the flavors to rest and harmonize in small, vintage French oak barrels that have previously been used to age only the finest cognacs.

Fresh Oregon and Washington cherries are crushed, fermented, and distilled into clear, delicate Cherry Brandy, also known as Kirschwasser. In German, Kirschwasser translates to “cherry water”, and is an integral ingredient in Swiss fondue.

We use dark, sweet table cherries, giving the spirit a soft aroma of vanilla and almond.

Blue Plum Brandy, known as Slivovitz in much of Eastern Europe, in France as Quetsch and in Germany as Zwetschgenwasser, is pot distilled from a pure fermented mash of Italian Blue plums grown in the Pacific Northwest.

Clear Creek makes it much as it has been made in Europe for centuries and believe the result is smoother, more aromatic, and more sophisticated than any European Blue Plum Brandy. It makes a great sorbet.

The Japanese Bitters - Yuzu have a gorgeous floral fragrance and sour flavour, landing somewhere between grapefruit and lime. 

The Yuzu is a citrus fruit and plant originating in Southern Japan. It is believed to be a hybrid of sour mandarin and Ichang papeda. This fruit resembles a very small grapefruit with uneven skin texture and can be either yellow or green depending on the degree of ripeness.

 Yuzu fruit are purchased directly from the farmers in Tokushima prefecture, where it is known as the yuzu production district. Yuzu bitters are made with fresh and fragrant Citrus junos. Try it in place of orange bitters in a Martini or add drops to the surface of a Clover Club for added aromatics.

Water, alcohol, sugar, raspberries and burnt sugar are blended together in refrigerated vats. When the alcohol content reaches a desirable level, the mixture is then filtered and bottled. The producer, which goes by the full name Antica Erboristeria Cappelletti, was first established in 1909. For most of their first century they were located in the historic Piazza Fiera in the center of Trento. Today they are located 20 km south of Trento in Aldeno, surrounded by vineyards and apple orchards. As the name would suggest, the firm was and is still today focused on products from traditional herbs, roots and flowers. They achieved fame in the region for their productions of amari and aperitivi, including the classic red bitter Aperitivo Cappelletti. All production is done in house by the fourth generation of the family, Luigi and Maddalena Cappelletti.

Cappelletti Alta Verde Amaro is a true and traditional wormwood amaro. The principal ingredient is assenzio, a variety of wormwood. A complementary blend of alpine herbs, citrus and spice frame and lighten the classic bitter profile. Amaro Alta Verde’s hallmark flavor was common long ago throughout the Adriatic, though seldom found in the last half century. Best enjoyed with citrus and tonic or soda, or just alone over ice with a big squeeze of lemon. In cocktails, Alta Verde adds depth and a drying effect to balance sweeter drinks. The label depicts the spa around the year 1600. The herbs in this amaro grow wild and are infused along with cardamom, cinnamon and bitter orange peel. This is a Gin produced by Nikka Whisky, with all of the base distillate made in their "Coffey Still" imported from Scotland in 1963. The Coffey Still produces a base with a silky texture, rich body, and more flavor than modern column stills.

Its aromatic complexity relies on the delicate balance of various botanicals including Japanese citrus such as Yuzu, Kabosu, Amanatsu and Shequasar. The distillery, located approximately 3,281 feet above sea level at the foot of the Andes Mountains in the region of Colchagua, producing Nix Gin in small copper stills, ensuring maximal control of the distillation temperature and delicate handling of each of its ingredients.

Their energy-efficient processes feature state-of-the-art equipment and electronic temperature control that minimize the loss of thermal energy. All wastewater and organic waste are then efficiently treated and reused for the irrigation of flora and conservation of the surrounding nature. Their bottles are made from 90% recycled glass. Their endemic botanicals are organic and grow wild.

Master distiller, Gustavo Carvallo distills the gin in a 400-liter alembic still, where they mix the macerate together with botanicals in the gin basket. Two 50-liter stills allow him to create distillates from separate botanicals with a high degree of precision and patience, in order to best extract their essentials oils. Nix gin infuses for at least one month in stainless steel barrels at a controlled temperature, which allows the different flavors and aromas to blend together perfectly.

Nix gin uses only fresh botanicals from the Colchagua region, working with small producers and gatherers of organic botanicals and pays them fairly.
