Palate entry is mildly hot and spicy, giving off deep tastes of dried red chili pepper; at midpalate, there's a brief respite but at the finish the chili pepper heat returns, most pleasantly.                

The Mirabelle plums are pitted and crushed. Fermentation begins at temperature control between 22º and 25º followed by distillation in copper alambics at a minimum temperature of 60º. The aroma and the taste of the original fruit is extracted and conserved during the distillation process using steam heated stills. Distillation is a single continuous process with the elimination of the initial “head” and final “tail” distillate in order to keep only the best of the distillation called the “heart.” The Mirabelle Brandy then undergoes aging in stainless steel for a minimum of 16 months.

While Bourbon must legally be matured in new, charred American oak, Michter’s Unblended American Whiskey is a little bit different. Aged in used, whiskey-soaked barrels – and therefore not legally a Bourbon – this whiskey has a a more spirit-forward flavour profile rich in caramel popcorn, butterscotch and dried fruits, with a cinnamon and nutmeg spice.

Unlike Bourbon or Rye, which, by definition, must be aged in new oak barrels, our US1 Unblended American Whiskey is aged in a way that utilizes whiskey-soaked barrels to achieve a rich and unique flavor profile. Situated within the picturesque Spey valley, Rothes is home to five distilleries all tucked along the tiny main street - unbeknown to passing visitors. Amongst these is Glenrothes hidden in a small glen on the outskirts of the village. 

Today Glenrothes single malt is used as the heart of Cutty Sark blended whisky. Approaching the distillery your eyes are drawn to the right where the village graveyard stretches up the hill. As whisky matures it evaporates, this is known as 'the angels share.' Feeding off the evaporated whisky is a black sooty fungus, which gives an eerie atmosphere to the place. The blackened grave stones under the shadows of tall trees surrounded by distillery buildings.

Tasting Notes: Toasted malt with fruit aromas, hints of green apples and fresh coconut. A subtle salty sea air is also present. Sweet with floral and fruit flavours, banana, and lemonade with a slight walnut edge.

The aroma is fresh clean, well-balanced and delicately fruity with notes of just-picked Pinot Grigio grapes, ripe pears, small berries, peach , citrus fruits, vanilla , chamomile and some floral hints. Pirassununga Cachaca is Brazil’s potent cachaca liquor distilled from fermented sugar-cane juice (While rum is distilled from molasses, cachaca is distilled directly from the juice of the unrefined sugar cane.)
