It s robust, with a deep amber hue and rich caramel scent. The flavor profile shows toffee, campfire smoke and a mouthwatering butterscotch note on the exhale. It almost reads like a peated Bourbon.

The result is a symphony of understated opulence. Having spent years working both independently and for the Mexican Trade Commission throughout Europe – promoting and establishing reciprocity of the Tequila Denomination of Origin – Jose Luis later started working closely with producers in Jalisco in order to source and provide quality Tequila directly to European brands and bottlers.

We had been wanting to collaborate with someone on bottling a PM Spirits Project Tequila for quite some time. Jose Luis' passion for and knowledge of the spirit was apparent to us from day one, and we could think of no better person to have worked with to make this project happen. Thank you, Jose Luis.

Highland Park 12 Year Old — Orkney Islands, Scotland

Highland Park is one of Scotland's most celebrated and distinctive single malt distilleries — located on the remote Orkney Islands at the very northern tip of Scotland, where the wild Atlantic climate, ancient Viking heritage, and unique local heather peat combine to create a whisky unlike any other. The Dalmore 12 is recognized as a whisky with character far beyond its age. The spirit is initially matured in American white oak ex-Bourbon casks, yielding soft vanilla and honey notes. A proportion of the spirit is then finessed in pinnacle Sherry casks, including 30-Year Old Matusalem Oloroso casks, exclusive to The Dalmore, to give the whisky a rich, nutty character.

Forbes Magazine: This is an exceptionally smooth Cognac. Matured for four years. On the nose, it offers up rich floral aromas of violet, jasmine, roses, white flowers and peonies, along with intense fruity notes of sweet caramel apples, honey and both fresh and dried fruit, especially prune, peach and apricot, along with Sauterne like notes of golden raisin and fig, as well as some passion fruit and a touch of vanilla. There is also an earthy, black tea like quality in the background, and a hint of waxiness.

Recently, Camus, the largest of the family owned Cognac producers, released a new addition to its core range of Cognacs—labeled Intensely Aromatic. The Cognacs were the culmination of a two-decade long effort to craft Cognacs that are notably more aromatic and flavorful than the norm.

Camus’ Cognacs have always had a reputation for being particularly aromatic. To further enhance that character Camus developed a proprietary distillation protocol, which it calls “Intensity,” that measurably increases the concentration of terpenes and esters in their Cognac, producing what the company describes as an “instant of intensity.”

Terpenes are a large and diverse class of organic compounds, produced by a variety of plants. They are closely associated with floral aromas. Esters are chemicals produced by the interaction of alcohols and fatty acids, and are closely associated with fruity aromas.

In crafting Intensely Aromatic, the firm utilized older casks made from lightly toasted, fine grained oak. The age and toasting of the casks minimized the aroma and flavor components that were contributed by the cask wood and further enhanced the prominence of fruit and floral aromas.

On the nose, this whiskey offers notes of over-ripe cherry, sweet apples, raisins, almonds, leather and fresh-cut hay. On the palate, it shows honey, cherries, blackcurrant and fig, with a nutty brine and walnut characteristics. Each stage lends different qualities to the resulting single malt- the traditional casks, having previously held Bourbon, soften and add character, whilst the Sherry Wood brings depth and fullness of flavour.

Most tequila is aged in common American oak. Conversely, ours is aged exclusively in premium toasted, not charred, French Oak Barrels for a more complex flavor profile. These refined, rich, elegant flavors create an aromatic essence that is distinctively Casa Noble.

Long before becoming one of the first to use certified organic agave, our devotion to preserving the land was present in everything we did. From establishing agave fields on a high altitude estate, to making our own compost, we continue giving back to nature because of everything it’s given us.

We nurture and harvest our 100% Blue Weber agave in the rich, volcanic soil of our high-altitude fields, tended to until they reach full maturity.

Producer Description 

Patrón Añejo is a delicate blend of uniquely aged tequilas, all aged in small white oak barrels for a minimum of 12 months. Similar to winemaking, each vintage of Patrón Añejo is carefully blended to produce a smooth and sweet tasting tequila. It’s distinct oakwood flavor complemented by vanilla, raisins, and honey with a caramel and smoky finish makes it perfect for sipping. Each bottle is numbered by hand and crafted from recycled glass.

Color: Clear, warm amber.

Aroma: Medium oak wood, vanilla and raisins with faint hint of citrus.

Taste: Smooth and sweet. Distinct oak wood complemented by vanilla, raisins and honey, with a hint of melon.

Finish: Caramel and smoky notes.

Wine Enthusiast 90 Points | After an initial touch of agave, most of the flavor is on the big caramel finish. This is not a bad thing. Vibrant yellow, mild smoky scent, smooth texture.
