Second Maturation in port barrels

Our malt mill, glistening copper mash tun and traditional wooden washbacks form part of a vigorous but carefully attended process. Our elegant copper pot stills distil and re-distil the richest spirit which is then filled into the finest casks and left patiently maturing in our warehouses. Nearly 70% of the flavour in whisky is derived from the cask it has been matured in. Wood’s important, which is why we adopt a ‘no compromise’ approach when choosing our world renowned sherry casks to enrich our whisky. Producer Description 

The Dalmore Highland Single Malt Scotch Whisky recently introduced a new 21 Year Old, the newest whisky in the brand’s Principal Collection. This expression will be an annual release, and is limited to only 1,000 bottles available in the U.S. In a statement from the distiller.

The Dalmore 21 is described as the essence of the carefully-composed spirit produced by The Dalmore’s stills, with a character developed over two decades. This new expression rests for an initial period in American white oak, ex-bourbon barrels. The whisky is then matured in rare casks sourced from Sherry makers Gonzalez Byass of Jerez, Spain.

These casks were previously used within the solera system to produce The Dalmore’s 30 Year Old Matusalem Oloroso Sherry. The distiller’s notes show that The Dalmore 21 features the brand’s characteristic flavors of bitter chocolate, Seville blood orange and subtle spice.

The Dalmore team sought to create harmony in this whisky, balancing the characteristics of Colombian coffee on the nose, sweet licorice on the palette and peaches on the finish. Master Whisky Maker Gregg Glass said that only after 21 years can a whisky of this quality and depth emerge, creating a distinguished single malt.

Producer Description 

The Balvenie French Oak is a vibrant single malt finished in casks previously held wine from the French Charentes vineyards. Pineau des Charentes is a fortified wine made from unfermented grape juice, to which a Cognac eau-de-vie is added and then matured. Pineau us also found as a home-made product in the neighbouring Deau-Sevres and Vendee departements. 

The Balvenie USA brand ambassador Lorne Cousin suggested Malt Master David C. Stewart MBE explore these casks after a trip to the region with his family where he fondly remembers sipping an aperitif. This is the first of The Balvenie finishes to explore French Oak.

Pineau is akin to cognac in terms of production and flavour, allowing us to capitalise on the rise of this flavour profile and its premium credentials.

95 Points Whisky Advocate | Part of the permanent Ardbeg range since 2008, Corryvreckan is created from a blend of standard Ardbeg and Ardbeg aged in virgin French Limousin oak casks. Smoky bacon and seaweed, plus dark berries, prickly spices, walnuts, lemon, and sweet peat on the nose. Sweet and savory on the palate, with more lively spice, woodsmoke, phenols, and licorice. The finish is lengthy, with peat, sea salt, pepper, and black coffee. Editors’ Choice.

Wine Enthusiast 95 Points | No shrinking violet, this copper penny-hued Scotch hits the nose and palate with a robust but harmonious mix of toffee and peat smoke, in equal measures, finishing dry and spicy. Darkest is an apt description for a whiskey partly matured in former oloroso Sherry casks, which adds deep, raisiny tones.

This is the 12 year old, Sherry cask finished expression from Glenmorangie, dubbed The Lasanta. It first matures in bourbon casks before being moved over to Oloroso and Pedro Ximénez Sherry casks for a finishing period. Plenty rich and creamy with dark chocolate, dried fruit and fresh honey.

Allow a little time for the aroma to emerge, and a splash of water for maximum flavor. The reward is a thick caramel aroma and flavor, with mouthwatering spicy notes of clove, cassia bark and a hint of orange peel.

Over the course of 18 years our Master Distiller, Alan Winchester, takes this expression through a combination of cask types, including both first and second-fill American oak (for tropical fruitiness) and ex-sherry oak (for spicy complexity).
