Bright gold. Aromatic with notes of vanilla, cut flowers and beneath, a clean, toasty note. Increasingly sweet and creamy, with fresh citrus, lemon cheesecake. Light and smooth body. A crisp mid-palate then butter icing, lemon cheesecake and freesias. The finish is herbal and drying, a little like potpourri.

This subtly sophisticated Lowland Single Malt Scotch Whisky is a superb pre-dinner drink; try it with a few drops of water.

Melt into the rich flavor of Caol Ila 12 Year Old Single Malt Scotch Whisky. With a subdued, citric fruitiness and a sweet start, our whisky ends with a lengthy, slightly sour finish. Consider pairing our 86 proof whisky with the provincial olive dish, tapenade, which helps bring out Caol Ila's peaty and salty notes, while the mix of capers and herbs accentuates the citrus flavors.

For more than 100 years, small coal-fired “puffers” like the SS Pibroch brought barley, coal and empty casks to the distillery, returning her whisky to the mainland through the Sound of Islay.

Today, Caol Ila’s secret bay is only known to true Islay devotees. The barley used here is still malted locally at Port Ellen and pure spring water still rises from limestone in nearby Loch Nam Ban, then falls to the sea at Caol Ila in a clear crystal stream, just as it always has.

This has some barley, sugar, vanilla, malt and coffee on the nose with a hint of oak. The palate is made up of toasted cereal, honey, barley sugar, malt and some sweet vanilla.

Immediately quite soft with clean, fresh notes, faint hints of milk chocolate and lemon and then developing fragrant tea-scented smoke alongside nose-drying, maritime aromas, with subtle cereal.

A prickliness seen earlier now develops, while the trademark Lagavulin dryness emerges as fresh newsprint. Softly sooty. Softer, fuller and more rounded with water: it’s not hugely fruity but there’s just a trace of red berry preserve, perhaps, beneath the smokiness, which comes sharply into focus.

Light, growing pleasantly oily. A soothing light texture, with a magnificently full-on Lagavulin taste that’s somehow even bigger than you expect; sweet, smoky and warming, with a growing, smoky pungency, then dry, with more smoke. Charred, with minty, dark chocolate. Beautifully balanced midpalate then salty, oven-charred baked potato skins and smoke. Water rounds things, the taste still mighty yet more succulent, sweeter, spicier and now tongue-tingling, mint-fresh and warming.

Hailing from the tropical shores of Goa, this exotic Indian single malt, in rich shades of dark copper, has complex aromas of fig and apricot with a rare hint of banana. On the palate are tremendous flavours of sweet barley with creamy butterscotch, dry fruits and a profuse Christmas cake. The finish is long and exquisite, with delectable chocolate fudge, delicate orange peel and hints of exotic wine drenched nuts. Much of The intrinsic characteristics of the Paul John PX owes allegiance to the famed intensely sweet and dark Spanish dessert sherry, having been gloriously finished in handpicked Pedro Ximenez casks. With its copper-bronze color, its flavor notes of fruit and spice.

The spirit is initially matured in American white oak ex-Bourbon casks, yielding soft vanilla and honey notes. For its final maturation, the whisky is transferred into casks which have held 30-Year Old Matusalem Oloroso Sherry.

 These casks are exclusively provided to The Dalmore from the renowned Gonzalez Byass bodega and give the whisky its rich, deep chocolate character.

Producer Description 

A departure from the typically lightly peated single malt, the Campbeltown Heavily Peated Kilkerran is released twice per year at cask strength and around 115 proof. Although the maturation can vary, it is typically matured predominantly in Bourbon casks.

In typical Kilkerran style, there is a citrus element on the nose with notes of lemon and key lime pie, along with touches of toasted rye bread and peat smoke.

There are notes of toasted marshmallows and campfire embers immediately on the palate, with hints of vanilla and custard.

The smokiness carries through to the finish, along with a mineral note to round off this dram.

Craigellachie 17 year old shows an evolution of the distillery style, the tropical fruit flavours are developing more exotic characters and there is an underlying sweetness as some cask development begins to show. This is a really special whisky and fun to explore, thinking about where the different flavours are coming from.

Tasting Notes by Advocacy Host Craig: Craigellachie is often referred to as 'The Bad Boy of Speyside,’ and after tasting the 17 it’s not hard to see why. Thanks to the use of traditional worm tub condensers, they produce a heavier and ‘meatier’ style of whisky.
Starting with a combination of sweet vanilla and caramelized apple, the 17 explodes with flavour when a drop of water is added, bursting forth with pineapple, citrus and lightly charred oak. It has a long finish that doesn't overstay its welcome.

Craigellachie was built in 1891 by the experienced whisky team of Peter Mackie and Alexander Edward. They needed a Single Malt as an ingredient for White Horse Blended Scotch, so the distillery was designed to produce a very specific distillery style which the team replicate to this day.

Craigellachie features some very specific production techniques: barley from an oil fired kiln giving more weight, short stills and worm tub condensers to minimise copper contact. The team do 21 mashes per week, have 8 wash backs and 4 copper pot stills.
People always talk about 'sulphur' flavours, which can be distracting. Craigellachie has a roasted brimstone character alongside a meaty quality. Way back in the 1890s Alfred Barnard described ""the chief characteristic of the Craigellachie brand is the pineapple flavour it develops with age"". This tropical fruit style is what makes the brimstone and meat flavours work, achieving a balance that gets beautifully complex in older age statements.

This is a single malt from the Yoichi distillery, Nikka's first distillery built in 1934. The founder Masataka Taketsuru chose Yoichi in Hokkaido because of the similar environmental conditions to Scotland, where he learned whisky making.

Yoichi single malt has pleasant peaty notes and smokiness originating from the traditional direct coal-fired distillation as well as a briny hint delivered by the sea breeze during the aging process.
