Stein is actually a vineyard that Bernhard farms that’s in the Kamptal, specifically the village of Engabrunn. Bernhard’s village of Feuresbrunn is right on the border of Kamptal and the Wagram and Bernhard has roots in these Engelbrunn vineyards going back to his Great Grandfather who started farming these sites in 1889. Stein means stone and as the name would suggest, this vineyard is loess with a lot of gneiss. It might remind you more of the wines from Renner than the heavy loess wines from Rosenberg, which recall the Lamm more than any other site. Estate grown and sustainably farmed. Fermentation vessels are predominantly stainless steel, with a very small percentage in French Oak, to contribute a layer of texture. Fermentation takes place at approximately 15 degrees Celsius and lasts approximately 3 weeks. Skin contact is avoided and the wine rests on lees for approximately 6 weeks. Lightly fined and filtered prior to bottling.
Oudiette Filles ‘Les Sablonnières’ Blanc de Noirs Extra Brut Champagne NV (2019) 750ml

Les Sablonnières comes from a tiny plot (23.64 ares) near the village of Beaunay in the Coteaux du Petit Morin. The parcel has a south-southwestern exposure at 200m planted to pinot noir and pinot noir droit (a small-berried clone prized for its structure) on sandy-clay topsoils, over a chalky subsoil. 2019 was the first time this vineyard was fermented alone and the results are stunning. Les Sablonnières is particularly suited to producing fine pinot noir that is both well-structured and immediately inviting, with a beautiful nose and effortless grace.
Handed harvested fruit is taken to a state-of-the-art press house located just five minutes from her vineyards in the village of Vert-Toulon, where they were pressed in a Coquard press with an inclined plate (the latest generation of Coquard). Only the heart, or the coeur de cuvée, of the first pressing is utilized. 90% of primary fermentation occurs in used (5-7 years old) 228L Burgundy oak barrels, and 10% in new barrels, without fining, filtration, or cold stabilization. Malolactic fermentation is natural and spontaneous in the barrel. Wines are naturally stabilized and aged for ten months in the same oak barrels with bâtonnage three times. Aged 36 months in bottle before disgorgement and a dosage of 3g/L from concentrated grape must from her vineyards.

Winemaker Description
In 2021, the vineyards experienced unseasonably dry conditions with the second lowest rainfall in Opus One’s history. The vineyard team took advantage of the dryness to cultivate early to avoid unnecessary competition for the limited water available. Cooler temperatures prevailed, and rains in late March arrived just in time for the slightly delayed bud-break on April 7th.
Warmer weather in April and May allowed for ideal shoot growth and flowering began on May 17th. Reduced water led to lower-than-average yields, which gave the fruit exceptional concentration and flavor at harvest. The summer months were very warm; however, there were no prolonged periods over 100 degrees. Harvest began on August 31st and was steady and brief, with completion occurring on September 24th.

Made from 66% Cabernet Sauvignon, 23% Cabernet Franc, 8% Merlot and the rest Petit Verdot, it hits the palate with full-bodied richness, an incredible display of finesse paired to power, remarkable sweetness of fruit, and a finish that leaves you looking for another sip. Another heavenly wine from this estate, I’d put this in the list of desert island wines for yours truly.

There are intense blackcurrant aromas on the nose, which is direct and lifted, giving real finesse. For a Pritchard Hill Cabernet it shows a light touch, with moderate tannins and good acidity. The 2023 vintage offers a very pure expression of Napa Valley Sauvignon Blanc, a captivating balance of weight and intensity with bright, fresh acidity. Aromas of lemongrass, orange blossom, pink grapefruit, and Key lime pie are mirrored on the focused, layered palate.
A dynamic interplay of ripe fruit, rich sur lie texture, and brisk acidity amplifies and extends through the mid-palate, introducing hints of white pepper and crushed rock. The finish is long and mouthwatering, the bracing high notes slowly melting into an echo of candied grapefruit peel.
My intention with Jayson Sauvignon Blanc is to make a wine that is incredibly bright and energetic with a beautiful purity of fruit bolstered by a broad, textural midpalate. In the vineyard, I manage the canopy to encourage early ripening with acidity retention. I’m blending acid-driven valley floor fruit with intense, ripe fruit from our mountain vineyards that’s given longer hang time to fully evolve, a range of ripeness bringing nuance and detail. Lees are stirred just enough to impart a balancing richness while retaining freshness. The finished wine is a complete package of energy and crispness, complexity and depth.

Sorì means the first place where the snow melts with the first winter sun rays. Ancient rule to select the best plots for Nebbiolo. Serraboella is the most famous cru in the Southern Neive. A long hill exposed to West that gently bends towards South getting steeper. On this very side: the steepest and the warmest, the Barbaresco has a unique expression. Power, volume are laced by a elegant texture.

The 2020 Barbaresco Serraboella Sorì Paitin is a special selection of fruit from a pinpoint area within this greater cru site in the village of Neive. Certified for organics, it does indeed show slightly riper and sweeter fruit, which is expected given the very warm temperatures seen during this growing season. This wine does not have the same austerity that we get in the wider selection from Serraboella. Instead, this bottle offers a softly layered expression with cassis, red rose, peony, apricot, spice and iodine. (2020).

There are no studies on the Monica vine capable of identifying its exact origin. What is certain is that it was brought to Sardinia and planted in 1400 by the Camaldolese monks around their monasteries.
From here, grapes of the monks, grapes of monks and then Monica … many theories, many memories of other vines that the character of Sardinia has transformed and adapted. Today Monica is a perfectly integrated son of Sardinia, the south-eastern part is his land of choice… and therefore at home in the Pala family.

Champagne Palmer & Co concentrates its vineyard holdings in the Montagne de Reims: in the grand cru villages of Mailly and Verzenay and the premier cru villages of Trépail and Villers-Marmery. While they also have holdings in the Marne Valley, the Côte de Sézanne and the Côte des Bar, their prestige cuvée Grands Terroirs, channels those north- and north-east-facing slopes with power and precision.
The 2015 vintage is blended from 50% Pinot Noir, 38% Chardonnay and 12% Pinot Meunier, sourced from Mailly and Verzenay as well as Trépail, Villers-Marmery, Ludes, Chigny-les-Roses and Rilly-la-Montagne. Palmer & Co refers to the vintage as “exceptional” because it combined high temperatures and little rainfall – spelling little disease pressure and even ripening. Sunny days and cool nights in August, they say, allowed for “perfect” ripening.
The nose, subtle and charming, opens with notes of orange blossom and acacia, mixed with notes of yellow fruits, then it evolves towards lovely and delicately spiced aromas of fried pineapple and tonka bean. The palate is characterized by freshness, with citrus fruits sublimating the notes of brioche and dried fruits. Its creamy texture stretches deliciously into a persistent finish.
