What is Umeshu?

Umeshu is a traditional Japanese liqueur made by steeping ume — a stone fruit related to both plum and apricot — in alcohol with sugar. While most commercial umeshu uses shochu or neutral spirits as the base, premium producers like Kozaemon use sake, adding a layer of grain complexity and umami depth that elevates the liqueur far beyond the ordinary. Winemaker Description 

Kozlovic is family winery that started in 1904 in the Valle Valley of Istria, Croatia. The estate has been passed down from generation to generation, and the importance of family is at the center of what Kozlovic does. The vineyards are planted to the local varietals Malvazija, Muscat Momiano, Muscat Rose and Teran and grown on the hills of Valle, Santa Lucia and Kontarini in clay soils known locally as "Terra Bianca" (a mix of flysch, limestone and white clay). The vines are grown sustainably with minimal spraying and all grapes are hand-harvested. 

The Kozlovic Malvazija is made from 100% Malvasia Istriana, fermented and aged in stainless steel tanks for a few months and then aged in bottle for another two months. A small percentage of Malvazija is fermented and aged in oak barrels, then added back to the wine. Highly aromatic, the wine displays notes of acacia flowers, peaches, apples and herbs. On the palate, the wine features a bold, refreshing acidity that is mouth-watering. There is a wonderful mineral complexity with a subtle salinity on the palate and finish. This is an incredibly food-friendly wine that can pair with scampi risotto, scallops, white fish or pasta.

Winemaker Description

Teran is a Croatian speciality; the grape produces wines with an abundance of acidity and tannins. Kozlovic sun-dries a portion of his Teran grapes on hay (thereby reducing their acidity) after making several passes through the vineyard. The grapes are fermented in stainless steel and aged in large oak barrels for 12 months. The resulting wine has an exquisite texture and mouthfeel.

La Gritona is the passion project of Melly Cardenas, a female distiller working out of a small, fiercely independent distillery (NOM 1533) in the highlands of Jalisco — one of Mexico's most celebrated tequila-producing regions, known for its red volcanic soils and the exceptional quality of its blue agave. Everything about La Gritona is intentional and hands-on: from the agave harvested at peak sugar production and delivered to the ovens within 24 hours of cutting, to the hand-blown recycled glass bottles made by artisans in the Guadalajara neighborhood of Tlaquepaque.

The agave is baked in thick-walled earthen ovens for 24 hours, then rested for another 24 hours before crushing. The collected juice is allowed to ferment naturally — at a rate dictated solely by the surrounding air temperature, with no added yeasts or shortcuts. The fermented liquid is distilled twice, then rested for 8 months in reused American whiskey barrels before filtering and bottling. Every step of production takes place under one roof, overseen by a small team of local staff. Agave remnants are given to local farmers as cattle feed — nothing goes to waste.

The result is a Reposado of genuine character: subtle and distinctive, with the warmth and depth of barrel aging balanced by the bright, vegetal freshness of highland agave. The nose offers cooked agave, citrus peel and a whisper of vanilla and oak. The palate is smooth and approachable, with flavors of roasted agave, nopales, citrus and gentle spice, leading to a clean, lingering finish. Exceptional for sipping neat or on the rocks, and equally at home in a premium cocktail.
