Torrebruna · Sangiovese · IGT Toscana · Tuscany · Italy · 2020

Torrebruna is one of Tuscany’s most reliable over-achievers at the value end of the spectrum — a Sangiovese-based IGT Toscana that consistently punches well above its price point. Organically farmed pinot noir grapes from our home ranch, Redwood Valley Vineyards, were hand-harvested in mid September. The bunches were carefully destemmed into a stainless steel tank for fermentation. The mixture of skins, seed , and juice were cold soaked for 24-48 hours to begin flavor extraction. After a CCOF (California Certified Organic Farmers) approved yeast was added, the must was mixed two times per day to continue extracting color and tannin.

These pump-overs are critical to enhancing the aroma and flavor from the pinot noir grape. Once fermentation is complete, the must was delicately pressed and aged on French oak for 8 months.

This medium garnet-colored wine presents enticing aromas of dried cranberry, sweet rhubarb, and subtle hints of cinnamon and nutmeg. On the palate, flavors of delicate caramel, bright red cherries, and a touch of licorice meld seamlessly with soft tannins and a smooth texture, achieving a harmonious balance of fruit and oak.

Toyo Bijin Junmai Ginjo — Yamaguchi Prefecture, Chugoku, Japan

Toyo Bijin — “Asian Beauty” — is one of Japan’s most evocatively named sakes, and the story behind it is as memorable as the sake itself. Sumikawa Brewing Company, based in Yamaguchi Prefecture in the Chugoku region of western Japan, was founded by a brewer who named his label in honor of his late wife — a tribute that has since become one of the most recognized and beloved sake brands in the country.

This Junmai Ginjo is brewed from Yamada Nishiki rice — the gold standard of sake rice — and fermented in the Ginjo style at low temperatures. But where many Ginjo sakes lean toward delicate and floral, Toyo Bijin takes a bolder path: this is a very dry sake, famously described as “strong enough to kill a devil.” Assertive, umami-rich, and deeply satisfying.

Clear and luminous in the glass. The nose opens with red apple and a fading whisper of nutmeg spice. On the palate it is full-flavored and bone dry, with a firm structure, pronounced umami, and a long, clean finish. Serve chilled.

• Brewery: Sumikawa Brewing Company, Yamaguchi Prefecture, Chugoku, Japan
• Style: Junmai Ginjo
• Rice: Yamada Nishiki
• Size: 300ml
• Tasting Notes: Red apple, nutmeg spice, pronounced umami, bone-dry finish
• Best Paired With: Yakitori, sashimi, aged cheeses, miso soup, oysters

Named for a beloved wife. Brewed with conviction. A sake bold enough to kill a devil — and elegant enough to honor her memory.

On the palate, it is light and smooth, with a delicate sweetness and a clean, refreshing finish that makes you reach for another pour. Serve chilled for maximum freshness — or gently warmed to bring out its subtle rice character.

T Cuvée Rosso is a light, fruity red wine which is perfect for summer and is best served chilled. It’s a combination of the history and winemaking tradition of Alto Adige. The grapes come from vineyards planted in calcareous clay and gravel soils at an altitude between 250 and 550 meters.

Trediberri Barolo del Comune di La Morra — Piedmont 2022

Trediberri is one of La Morra’s most exciting young estates — a small, precision-focused domaine that has quickly earned a reputation for wines of exceptional purity and finesse. Their Barolo del Comune di La Morra is a single-commune bottling sourced primarily from the high-altitude Berri vineyard, with approximately 18% from the legendary Rocche dell’Annunziata cru. Aged 21 months in large Slavonian oak casks, the wine is built for transparency: no new oak, no extraction, no shortcuts — just the pure voice of La Morra Nebbiolo. The 2022 vintage, shaped by heat and drought, delivered lower yields and concentrated fruit; in the hands of Trediberri, the result is a wine of remarkable balance, freshness, and early approachability, with a drinking window stretching to 2036 and beyond.

The color is a classic translucent garnet. The nose is lifted and perfumed: cranberry, redcurrant, fresh cherry, rose petals, pepper, and brushwood, with hints of dried herbs and earth that take some coaxing — and reward patience. On the palate, it is tightly knit and slender but beautifully endowed: juicy red berries, cardamom, and floral tones framed by lively acidity and al dente tannins. There is a beautiful sense of tension and precision — no heaviness, just clarity and energy. The finish is long, mineral-driven, and classically Barolo.

Decanter 93 — “A quiet charmer. Precision and purity as its strengths — lively acidity meets al dente tannins. Do not take this for a pushover.” — Michaela Morris, Decanter. (Vintage 2022).

Winemaker Description

Aromas of plum, raspberry and cherry are layered with earthy tones of mushroom, sage and pine. Soft on the palate, flavors of black cherry and red plum with notes of dark chocolate lead to a bright finish.

Winemaker Description

The 2021 vintage overall was very similar to 2018. July, August, and into September were warm and very humid with significant rain during the fall with some places receiving up to 9” of rain in 24-36 hour periods at several different times over the three months.

Rains and frequent cloud cover during September and October made the season challenging. however, the long fall season gave us bright acidity and a fresh palate. The fruit was hand harvested on October 7, being carefully sorted in the field to only select the most clean fruit.

Winemaking: The fruit was hand harvested and gently destemmed. After pressing, the juice was cold settled for 48 hours before being racked to a combination of four French oak barrels made by Dargaud Jagle, all medium toast (one new, one once used, one twice used, and one neutral). The juice was inoculated with VIN13 yeast and went through a swift but healthy fermentation followed by full Malolactic fermentation.

The wine aged sur lie for 11 months being stirred biweekly by rolling the barrels with special racks meant to agitate the lees without introducing oxygen. After racking, it was gently fined with a small amount of bentonite prior to bottling. It bottled in November and was aged in bottle for 9 months prior to release in August 2022.

Winemaker Description

The 2023 vintage overall was a classic vintage for the Finger Lakes. Budbreak was early and a hard freeze on May 13th threatened many vineyards.  June and July were very wet with frequent rains and high disease pressure.  Finally, mid-August the region saw some sun although rains continued at regular intervals.  The long fall season dried out a bit to make the vintage a very classic style with bright acidity and cool climate fruit flavors. It also allowed us to fully ripen the Cabernet Franc that makes up most of this blend in this fresh style of Rose.

Winemaking: To produce our Rose, we used Cabernet Franc which was pressed quickly to ensure a delicate rose color and minimal skin tannins. We allowed the pressed juice to sit on gross lees for several days before racking to enhance the body and texture of the final wine. Then a long, cool fermentation in stainless steel maximized the intense aromas and flavors. For the final blend we added a small amount of our Chardonnay fermented in a neutral French Oak barrel to lengthen the finish and solidify the acid backbone of the wine.
