The three grape varieties are fermented separately and then the wine do the second fermentation in the bottle like the method Champenoise in the CAVA aging more than 48 months.
Recommended Serving Temperature: 6oC
Aspect: Pale straw yellow in color. Brilliant appearance with constant release of fine bubbles forming a crown on the surface of the glass.
Aroma: Has the special aroma from the second fermentation in the bottle and evolution in the cellar. Extremely fine and fresh. An aroma from the ageing process that gives it a personality of its own like croissants, almonds, white fruit, salinity and minerality.
Taste: Still conserves the varietal flavors mingled with those of the ageing process to achieve a perfect balance. It is fine on the palate with a certain rejuvenating acidity producing a pleasant and extremely harmonious combination.
A fairly long finish in the mouth. The bubbles are very small and delicate and It’s very elegant.
Food and wine pairing:
It’s perfect with tapas, with sea food, fish, cheeses, chicken, white meat and dry desserts.

Luis Gutierrez writes: The 2019 Selección Especial, cropped from a warm and dry year, is composed of 64% Tempranillo, 15% Cabernet sauvignon, 14% Syrah, 6% Merlot and 1% Petit Verdot and has 14.5% alcohol, coming through as riper than the 2020 I tasted next to it. It's also darker, round and powerful, with plenty of tannins, wide and concentrated. Joaquin Hidalgo writes: The 2019 Selección Especial is a blend of 69% Tempranillo, 13% Cabernet Sauvignon, 11% Syrah, 4% Merlot, 2% Graciano and 1% Petit Verdot from Abadía Retuerta in Castilla y León and was aged for 12 months in French and American oak barrels. Garnet-red with a purple sheen. Cedar complements plum, camphor and spice aromas on the nose. Dry and fairly fruity, the finely-grained tannins support a mild, polished mouthfeel. It has 13.8% alcohol and comes through as a powerful white that should age nicely in bottle. It's an unusual blend of 86% Sauvignon Blanc and 14% Verdejo, a little à la Bordeaux. It was bottled in June 2023. It finished fermenting in barrel, where it matured with the lees for seven months.

A clean and bright wine. Fragrant at first, with aromas of white flowers, elder and acacia. It also has refreshing notes of ginger, and citric hints of mandarin, grapefruit and lime. When poured, hints of stone fruit come through, such as apricot and nectarine, along with mature fruits like melon. Persistent, long, creamy and unctuous. It has a fresh and well-integrated acidity, almost crystalline, ensuring that this is a highly age-worthy wine.

Andalucía has a long tradition of producing non-fortified wines—reds and whites made from the same grapes used for fortified wines (Sherry). In Andalucia these still wines are known as Vinos del Marco de Jerez or Vinos de Pasto. It is important to highlight that these wines do not belong to the Jerez-Xeres-Sherry DO. In recent years, producers like Willy Pérez, Ramiro Ibanez and others have led a movement to bring these wines back into the spotlight, aiming to place them on tables around the world.
During a recent in-store tasting with Nacho Monclús, Spanish & South American Portfolio Manager at T. Edwards Wine & Spirits, he introduced me to a producer from Sanlúcar de Barrameda, Andalucía: Juan Jurado of Agricola Calcarea.
Mr. Jurado represents a new generation of winemakers who have spent years working abroad, gaining experience in vineyards as well as in both front- and back-of-house roles in the restaurant industry. These experiences have enriched their perspective, and upon returning home, many have sought to revive the long-standing traditions of their ancestors. Mr. Jurado is one such story.
After more than a decade away, he returned to Andalucía and founded Agrícola Calcárea, producing wines in a small-scale, garage-style setting. His wines quickly gained national recognition, attracting the attention of the press. Now, his work has reached New York City, where wine lovers can experience his unique expressions firsthand.
When Nacho presented the wines to me, I was immediately drawn to their beautifully designed labels. The three wines I tasted featured indigenous Andalusian grape varieties, including Palomino (also known as Listán Blanco) and Tintilla Rota. All three expressions stood out, but my palate that day had a particular affinity to Agrícola Calcárea Porfía Tinto 2023 — an electric, vibrant red made from Tintilla Rota.
Porfia Tinto 2023 is unlike any other Spanish red currently available in the NYC market, this wine is a testament to the energy and innovation defining the new wave of Andalusian winemaking.
Porfia Tinto 2023 opens open with an alluring nose of sun-kissed black fruit: black cherries, black berries with undertones of dried Mediterranean herbs. On the palate this red is harmonious walking a tight rope of tannins, acidity and flavor: Suave tannins, crisp acidity and just perfect fruit quality.
Pair this red with Pan-Roasted Quail lightly dressed in thyme butter sauce.

Agricola Calcarea Sin Bulla Blanco 2022 750ml
Winemaker Description
Juan Jurado belongs to a new generation of young winemakers who see potential in the Marco de Jerez region beyond traditional fortified wines. After living away from his native Andalusia for many years (from Sitges to Australia via London), during which time he trained in the world of wine and sommellerie, he decided to return to his roots to start a project focused on authentic wines that reflect the diversity of the Jerez Region beyond Finos and Olorosos.
In 2022, Jurado invested all his savings to purchase a small vineyard in the Miraflores de Sanlúcar estate, along with winemaking equipment including a press, destemmer, casks, and jars to produce his first vintage. This marked the birth of Agrícola Calcárea, a project dedicated to crafting honest wines using minimal yet sufficient intervention to showcase the unique characteristics of each vineyard through classic and ancestral varieties of the Marco region.
The resulting wines are highly aromatic, featuring stone fruit, citrus, and white flower notes, with chalky and salty undertones. On the palate, they are savory and mineral, with a touch of bitterness.

Producer Description
Akutain’s Rioja Reserva — a blend of Tempranillo with a touch of Garnacha and Viura — is fermented in a combination of stainless steel and fiberglass tanks, then aged for 35 months in predominantly neutral American oak with a small amount of French barrels. Mid-Ruby in color, this Reserva possesses a beautiful bouquet of ripe berry fruit mixed with notes of dried herbs, tobacco and rose petals.
The full-bodied palate displays concentrated flavors of black cherry, cooked-down strawberries and earth balanced by velvety, textured tannins. The finish exhibits enduring depth and complexity. The perfect companion to grilled, roasted or braised meats and game.


Alfredo Maestro El Marciano Garnacha Sierra de Gredos 2023 750ml
Winemaker Description
This 100% Garnacha wine boasts a big, bold, and funky flavor with a touch of freshness. Its dense, fruity palate is complemented by a prolonged finish and ample acidity, preventing it from feeling too heavy.
The producer purposefully maintains some of the CO2 for a spritzy texture, giving it a slightly effervescent quality. For the full expression, allow it to aerate. The vineyards of Alfredo Maestro Tejero are nestled within the Ribera del Duero. These natural wines are produced without the addition of sulphur in either the vineyard or winery. All grapes are carefully hand-harvested.

Joaquín Hidalgo of Vinous writes 95 Points | The NV Solera 1927 is a sun-dried Pedro Ximénez wine sourced from Sierra de Montilla. Aged for 20 years in a very old solera, this mahogany-colored wine offers aromas of caramel, saffron and tar, along with licorice and herbal notes. Very sweet and concentrated, the palate reveals a wild herb core with a balanced and potent mouthfeel. Despite its sweetness, it maintains balance with a warm, rich heart—a unique sip from Montilla.
Natalie Maclean write 92 Points | This lovely sweet-style Pedro Ximenez Solera 1927 Sherry is not vintage dated but does have some wine from the 1927 vintages blended in. Dark-hued, rich and complex with aromas of fig jam, molasses and espresso. Great dessert wine.

Producer Description
Avinyó Cava is a premier, hand-made, artisanal sparkling wine house which stands in stark contrast to the status quo of the industrial Cava machine. Located in the Catalan countryside in the remote village of Avinyonet del Penedès, the Esteve family traces their history to 1597 in the same farmhouse, Can Fontanals.
Their spirit of innovation and respect for traditions, driven by an undercurrent of constant self-improvement and a relentless drive for quality, are the defining characteristics that set Avinyó Cava apart.
Avinyó Brut Nature is a refined expression of terruño-driven Cava from a vineyard selection of organically-grown, old-vine 70% xarel-lo, 25% macabeo, and 5% parellada from their Can Fontanals masía at 250m to 275m.
Vinification – After a night-time grape harvest to avoid oxidation and for optimal temperature, the grapes are pressed very gently in a pneumatic press. The base wine is fermented in temperature-controlled stainless steel between 14°C and 16°C. After cold stabilization, the wine begins its secondary fermentation in bottle with the addition of yeasts and sugar in late January. It is then aged a minimum of 24 months on the lees before being disgorged on demand. No dosage.

Polished, dusty tannins spread evenly across the medium-bodied palate, with juicy, vivid plums and berries. Nothing showy here, but it’s beautifully balanced and understated, showing real fruit vibrancy and harmony. Drinkable now, but will hold well, too.
Wine Advocate 94+ Points | When tasted next to the 2020, the 2019 Lanzaga comes through as a little more closed and austere, with a little less alcohol (14% vs 14.5%) and with rounder tannins. It comes from 15 to 20 hectares of their own organically farmed vineyards. It fermented in concrete with indigenous yeasts and matured in 225-liter barrels and 1,500- and 2,500-liter oak foudres for 14 months. 24,527 bottles produced. It was bottled in June 2021.
Tim Atkin 92 Points | The"basic" Lanzaga red - if such a thing can be said of a wine that retails at €25 - comes from bush vine plantings of mostly Tempranillo with some Graciano and Garnacha in Lanciego. Aged in large wooden foudres, it's all about fruit and focus rather than wood. Youthful, taut and tangy with lots of perfume, stony minerality and good ageing potential.

Winemaker Description
Rico Nuevo is a relatively new player in the Spanish wine scene, but they’re already making plenty of waves. The winery is right near Leon in the heralded Gredos Region. All eight wines they submitted to Parker’s Wine Advocate got at least a 90-point score.
The key to success here is the region of Gredos itself as well as the 77-year old Garnacha vines that the winery taps into. The region is known for making a more savory, higher toned expression of Garnacha, but Rico Nuevo really epitomizes that elegance.
They divide their own property with 40 micro parcels, all along the highest elevations of the north side of the Gredos Mountains. Here everything is organic and biodynamic and they’re very hands off in the vineyard, letting the gnarly old-vines do all the talking. It works so well.
Tasting Notes: Beautiful red fruit - cherry, cranberry, raspberry. Floral notes and Mediterranean herbs.

In a 200-year-old company with sixteen bodegas, sometimes suprising things get found. In this case, Barbadillo discovered old tonic wines of indeterminate age and recipe, and called on winemaker Montserrat Molina to develop a new vermouth recipe to approximate the flavor profiles of what they had found.
The result, Atamán, is a potently delicious sipping vermouth built on Manzanilla sherry with quassia, bitter orange, wormwood, elderberry and rosemary dominating the botanical roster.

The barrels has an extremely special toast, medium toast for a long time at a very low temperature, in order to obtain the perfect marriage with the Tempranillo variety. Attractive on the nose with aromas typical of the Tempranillo variety, rose petals, red fruit and liquorice accompanied by mineral notes and sweet spice.
On the palate notable presence of fruit and liquorice combined perfectly with the chocolate note from the American oak giving a mocha character. Perfect with smoked and salted dishes, red meat, roasts and Iberian cured meats.

Medium to full-bodied. Great length and integration. Serious but approachable.

Manzanillas are my ideal apéritif wine to awaken the palate before a meal.

The nose is expressive with pain grille, underbrush, brier, minerality, blueberry and blackberry fruit. On the palate is a plush, opulent wine with great density, savory flavors, and a lengthy finish.

Brick red deep covered. Clean, complex and with a good intensity on the nose. Red fruit aromas well conjoined with those of the aging. Balsam, spices (pepper), tobacco and leather. Well structured, tasty, large, soft but with character and a good harmony in its flavors. Complex and retronasal clean.

Decanter 95 points | The Escudero family started making wine in 1852 and, four generations on, it is still very much a family business. They own a total of 150ha of vineyards, of which 120ha are located on the southern slopes of the Monte Yerga mountain range, where the grapes for this wine are produced. The vines are grown at between 450m-800m above sea level and are approximately 40 years old. Predominantly made from Tempranillo blended with Mazuelo and Garnacha, this reserva was aged for 14 months in five-year-old American oak barrels followed by a further 28 months in bottle.

Palo Cortado is unusual, in that it first ages under a film of yeast ‘flor’ which protects it from oxygen, but unexpectedly loses its flor and ultimately ages oxidatively. Only 1-2% of all sherries produced ultimately become a Palo Cortado. Thus, the freshness of Manzanilla and Oloroso and the complexity of dry Amontillado are combined. When aged over twenty years it is entitled to the designation VOS (Very Old Sherry). This sherry was once sold to British troops under the name ‘Wellington’, and the 1st Duke of Wellington’s portrait is still used on the label today.
The palate is full rich and rounded. A very light amber color given its advanced age, and a bouquet that demands attention. Delicate and pure on the nose. Penetrating aromas, nutty yet with tangy freshness. Completely dry, but notes of butterscotch and walnuts. A clean, racy style, with almond and hazelnut husk notes backed by toasted corn, walnut and singed sandalwood accents. A touch of dried persimmon echoes on the very dry finish. One of the great dry sherries. 17.5% ABV.
