Domaine du Castel is the founding estate of modern Israeli fine wine. In 1988, Eli Ben Zaken planted the first contemporary vineyard in the Judean Hills in the backyard of his home in Ramat Raziel — almost by chance, and almost entirely by conviction. Within four years, family and friends gathered to harvest the grapes that would become Castel Grand Vin 1992, and a benchmark was set. Today, Eli’s children carry the tradition forward: Ariel (CEO, trained in Beaune), Eytan (winemaker alongside Eli), and Ilana (Director of Export & Procurement). But with time, the green apple and gooseberry notes, touched with acacia blossoms and spice, open up on the palate. The texture is lively and fresh, yet there is substance here as well. The grapes are assembled from 10 parcels throughout Montmains, including some in Forêts and Butteaux. Séguier explains that Butteaux is deep in the valley and further from the Serein so it ripens later. The grapes are fermented in tank and older casks for 40–50% of the harvest.

The Cline family has farmed the Sonoma Coast for decades, and their 'Seven Ranchlands' Chardonnay draws from two of their most prized sites — Catapult Ranch and Tolay Vista — situated in the Petaluma Gap, the cool corridor where Pacific air funnels east through the Sonoma mountain range and slows ripening to a crawl. Handpicked before dawn, each parcel is vinified separately: destemmed, lightly crushed, and pressed to extract richness, then racked after 24 hours to retain solids. In the northernmost commune of Barolo, perched in a castle that has stood since the early 1500s, the Burlotto family has quietly produced some of the most elegant Nebbiolo in Piedmont. Castello di Verduno has been theirs since 1909, and the Massara vineyard — planted on the chalky Marne di Sant’Agata soils that define the commune’s signature minerality — is among its finest expressions.

The 2022 Massara is, by any measure, a seriously impressive Barolo. Vinified in open-top wooden vats with an extended maceration using the traditional submerged cap method, then aged in large Austrian and Slavonian botti grandi, it carries the full weight of its terroir with uncommon grace. Bottled unfined and unfiltered — nothing added, nothing taken away.

An attractive greenish-yellow colour. Its ageing in foudres has lent it citrus and green chilli pepper aromas, as well as saline notes. In the mouth, it is very structured and tense thanks to its high acidity and minerality. The finish is clean and persistent, with a subtle saline note coming through. This highly complex Sauvignon Blanc tempts you to enjoy it with food.

Block 22 is located on the first terrace of the river Huasco. It has very old, stony soils from the river which have very special qualities: a little clay and a lot of calcareous soil – lime, calcium carbonate – white soils. Characterized by low yields of grapes with very concentrated fresh fruit. In the Atacama Desert in the Huasco valley, the temperatures were fresh, especially at night. The Nicosia “Cru” wines of Etna come from the Monte Gorna estate, located in the Trecastagni area, very close to the wine cellar. A red and a white wine, made with organic grapes, that authentically represent the great expression that this terroir and its native vines can offer.

These DOC wines are the demonstration that on the volcano each slope, each area, each vineyard can produce wines with different characteristics, giving unique and unrepeatable sensations. The composition of the eruptive materials gave life to composite soils, often made up small sized pumice stones, known as "ripiddu", found mostly on extinguished volcanic cones such as Monte Gorna; thier elevated drainage capacity and their wealth of potassium paly an important role in balancing the grape's maturation process.

Even the climate distinguishes the Etna area respect to the rest of Sicily. The average temperatures on the mountains are lower and the climate also changes depending on the slope and the alyitude.
