Miho Imada, one of Japan’s only female brewery owners and toji (master brewer), devoted over 10 years of her life to reviving Hattanso — an extinct heirloom rice variety from the Akitsu region of Hiroshima that had disappeared from cultivation entirely. She learned to grow it, learned to brew with it, and then made a deliberate choice to mill it less than most Junmais, believing that minimal polishing best expresses the full flavor, balance, and complexity of this ancient grain.
