Producer Description 

Distilled from estate-grown Blue Weber agave from 300 ha lowland site, practicing organic farming. Agave are roasted at 120° C for 15 hours and allowed to rest for another 15 hours. Fermented in El Llano's original cement vat with house yeast for six to seven days to about 4-5% abv. Twice distilled in stainless steel pot stills with interior copper condenser by Eduardo Orendain before being aged in ex-Bourbon barrels for 11 months.

Featuring fruity-sweet flavor notes, the tighter cut of the distillate ensures less acetone flavors and puts an emphasis on a mid-palate wash of mint, pepper, vanilla, and ripe apple and plum.

Most tequila is aged in common American oak. Conversely, ours is aged exclusively in premium toasted, not charred, French Oak Barrels for a more complex flavor profile. These refined, rich, elegant flavors create an aromatic essence that is distinctively Casa Noble.

Our tequila Reposado starts off life as Blanco. It’s then rested in lightly charred, new American oak barrels to create a more complex and well-rounded character uniquely Espolòn. This one begs to be shared in cocktails that deserve even greater tequila character. 

Profoundly aromatic with floral glimmers of jasmine and orange blossom. This overproof tequila fully shows its complex terroir, high minerality and wet cement.

Yellow apple and cooked, mature agave round out this expression and make it soft and smooth despite its higher proof. Grassines from volcanic well water shows in this pure and ethereal tequila.

Clase Azul Tequila Gold is an incomparable tequila joven, a blend that combines Clase Azul Tequila Plata with a special reposado tequila matured in French oak casks and an eight-year-old Extra Añejo aged in American whiskey casks and finished in sherry casks.

Originally only offered to close friends and family, Reserva de la Familia Extra Anejo is made from only the hearts, or pinas, of 8-10 year old agave plants. The agave cooks at distillery La Rojena for 48 hours total - 36 hours through direct vapor and then 12 more hours with just its own heat.

Our fermentation is a 100% natural process, in which the raising of the alcohol content is closely monitored. When ready, the tequila is double distilled in a copper pot, preserving all of the characteristics and elements obtained in the fermentation, creating a product with an outstanding profile and cleanliness

The tequila is a dark amber hue. Aromas of oak, almonds, apple, olives and cinnamon. Flavors of rich oak, toasted almonds, vanilla and cinnamon. The finish is long and silky.

Each bottle is numbered, dated, and sealed in wax. All by hand.
