Te Mata Estate has been making wine in Hawke's Bay since 1896. The 2025 Estate Sauvignon Blanc comes from estate vineyards in the Bridge Pā Triangle, Dartmoor and Havelock Hills, where the warm climate and free-draining soils help shape ripe fruit balanced by fresh acidity.

The winery’s tasting note describes a brilliant pale gold wine with lifted aromas of lime, blackcurrant, gooseberry, fennel, guava and passionfruit. The palate carries that citrus and tropical character through a creamy mid-palate, mouth-watering freshness and a long, balanced finish. Serve chilled with oysters, grilled fish or fresh goat cheese.

Winemaking

Te Mata reports that the grapes were chilled and gently pressed, with the juice cold-settled before fermentation in stainless steel tanks to preserve the variety’s aromatics and flavors.

The 2025 Estate Vineyards Sauvignon Blanc leads with notes of cassis, white currant and passion fruit, alongside hints of white pineapple and yellow guava. A highly detailed approach to viticulture at Te Mata enables smaller, more selective harvest picks, contributing to the precision and detail evident in the finished wine. The palate here is soft and textural yet also restrained and persistent, with impressive length and a distinctly mouthwatering acidity. Fermentation was managed with approximately 200 NTU (nephelometric turbidity units) retained in tank, while different yeast strains were employed across individual vineyard blocks to enhance complexity and site expression. This is very good.

Unlike many Marlborough SBs, which contain a small amount of sugar, this is fermented totally dry, with a rush of lemony acidity and some subtle textural weight beneath. The wine is dry, round and supple, with a beautiful refreshing acidity. It gives off notes of ripe fruits, peaches and pink grapefruit… On the palate, it gives immediate pleasure and has lovely weight.
 

Producer Description 

Our 2023 Sauvignon Blanc has aromas of grapefruit, lime zest, white flowers, white peach, lemon grass, and orange peel. On the palate are aromas of pineapple, guava, tropical fruit, Asian pear, candied lemon, and green melon. The wine has a bright acidity and wonderful texture on the mid-palate.

 While the core of this wine is Sauvignon Blanc, the Musqué, Sémillon, and Viognier add a lot of floral notes and viscosity to this vintage. We captured these wonderful floral notes by fermenting each variety separately in concrete eggs, stainless steel drums, and tanks.

The French oak barrels, in which 10% of the wine aged in, were very lightly toasted to preserve the delicate fruity aromas and provide a creamy texture to the mid-palate of the wine.

Te Koko 2023 is initially reticent on the nose, but with time in the glass opens to reveal notes of just-ripe mango, lemon verbena and juicy sun-warmed lemon. The palate is concentrated and mouthwateringly complex. The sun-warmed impression continues, with notes of meadow hay, preserved citrus, and white nectarine, with layers of salted almond and a gentle smoky minerality leading through to a long and focused finish.

The Yarden Sauvignon Blanc is produced exclusively from the Sauvignon Blanc grapes by the Golan Heights Winery in northern Israel. Almost completely transparent in color, the wine has a pleasantly refreshing and fruit-forward nose with aromas of lemons, apples, and some cantaloupe. with green undertones. 

Aged in French oak barrels for 2 months adds a light toastiness to the already complex fruit and herbaceous characters typical of the Sauvignon Blanc varietal. The wine is medium-bodied with a mouthful that is pleasantly dry, with vibrant acidity reminiscent of lemon and lime flavors on the palate. It's got a lingering and rather acidic finish that makes it a great food wine for pasta or even something a little heavier like chicken. Winemaker Description.

This wine’s tart, spiky glints of passion fruit tease the nose amidst all its lemony freshness. With a little air, the passion fruit note grows smoother and fuller. Salt River Sauvignon Blanc is a blend of five different vineyard sites located around Stellenbosch. The anchor of the wine is the now a 35year-old bush vine vineyard grown on the slopes of Bottelary. The other components are trellised and bush vine vineyards, with various different aspects, planted in granitic soil. These vineyards have combined exceptionally well in creating the saline mineral style of Sauvignonn.

Our 2022 Red Mountain Sauvignon Blanc an ideal example of a perfectly balanced Red Mountain white wine—rich and full on the midpalate, bright tropical fruit flavors balanced with crisp mouthwatering acidity. The vineyard sourcing blends a newer, but well known, extremely warm growing site in Quintessence with the more established and slightly cooler Artz and Klipsun vineyard plantings from the early 1980’s. The result and complex and delicious expression of Sauvignon Blanc. On the aroma we get pineapple, lemon pith, and wet rocks. The palate is full yet crisp and refreshing — passionfruit, mango, and white peach.
