Brooklyn Cured - Finocchiona, sliced (3 oz)
Brooklyn Cured Finocchiona — Brooklyn, New York
Finocchiona has its roots in Renaissance Tuscany, where fennel was used to season pork salami in a tradition that has endured for centuries. Brooklyn Cured's version is a love letter to that heritage — made in Brooklyn with the same artisan integrity that defines everything they produce. Seasoned with fennel pollen rather than fennel seed, this salami is brighter, more aromatic, and more refined than most. At 3oz pre-sliced, it is ready for the board, the sandwich, or the moment.
The slices are deeply savory with a gentle sweetness from the fennel pollen that lifts the richness of the pork. The texture is tender and supple, with a clean, lingering finish that is herbaceous and satisfying without being heavy. It is the kind of salami that disappears from the board first.
- Producer: Brooklyn Cured, Brooklyn, New York, USA
- Style: Finocchiona — Tuscan-style fennel pollen pork salami
- Key Ingredient: Fennel pollen (not fennel seed)
- Size: 3oz, pre-sliced
- Tasting Notes: Savory pork, aromatic fennel pollen, gentle sweetness, tender texture, herbaceous finish
- Best Paired With: Aged pecorino or Parmigiano, crusty bread, Castelvetrano olives, a glass of Chianti or light-bodied red
Artisan salami made with craft and intention — Brooklyn Cured's Finocchiona is the benchmark for what American-made Tuscan-style charcuterie can be.

Brovia Roero Arneis Piedmont 2024 750ml
Winemaker Description
Arneis produces a lightly styled white wine with beautiful straw yellow colour. Citrus edged orchard fruits, pear and apricot are attractive on the palate with slightly bitter floral note that can resemble almonds. L'azienda Brovia is a traditional Piemontese family wine growing estate in Castiglione Falletto, in the heart of Barolo country. The wine is appreciated for its refined elegance.
The sole white wine of the estate is produced in the Roero district from an 0.80 hectare plot in Vezza d’Alba. The soil is essentially sandy in composition and sits at 340 meters altitude on south-facing slopes. The vineyard was planted in 1980. Harvest (manual) normally occurs in mid-September.
The grapes are briefly macerated and the fermentation occurs at controlled temperatures (around 15 degrees Celsius) for two to three weeks. The wine rests in stainless steel until the early spring months of the following year and is usually released to the market, after several months of bottle aging, in late summer/early fall.
Approximately 4500 bottles are produced annually, 3,000 of which are shipped to the USA.
Memo Pairing Notes
This Arneis is incredibly versatile. Its freshness and body make it a perfect match for:
-
Raw and Cooked Seafood: Oysters, raw tuna, grilled octopus, and white fish.
-
Vegetable Dishes: Vegetable-based pasta, light risottos, or asparagus.
-
Cured Meats & Cheese: Light ham or salami, and fresh, milky cheeses like Burrata or soft goat cheese.

• Silver Medal (Bartender Spirits Awards 2025): Recognized for its consistency and "go-to" status in the heavily peated category.
Producer Description
Port Charlotte 10 year old is conceived, distilled, matured and bottled only on Islay. Made from 100% Scottish barley, it is trickle distilled through tall, narrow-necked stills for a balanced, heathery style of barbeque smoke.
Our Port Charlotte 10 year old expression is everything an Islay whisky can and should be.
With an ambition to make the ultimate “Islay” whisky, this is a single malt made by people not software; a whisky watched over every day of its maturing life by those who made it; a whisky born of a community with a vision and a mission to kick start a single malt whisky revolution. This Port Charlotte 10 year old is who we are. This is where we’re from.
We believe an “Islay” whisky should live and breathe the fresh salt tang of Islay air, all its life. This is not a spirit distilled on the island and immediately shipped off to the mainland to mature in an undisclosed warehouse.
This is a spirit born from the island and the community, a true expression of the land, the culture, the people.
Memo Summary Notes
Bruichladdich is known for transparency; this expression is non-chill filtered and coloring-free, distilled, matured, and bottled exclusively on Islay.

Bruno Giacosa Roero Arneis DOCG 2023 750ml
Expert Review - Vintage 2023
James Suckling 93 Points | A fresh and crunchy white with light lemons, mangoes and bitter limes. It’s medium- to full-bodied with lots of fruit. The hot growing season comes through, but it remains fresh at the end.
The Bruno Giacosa 2023 Roero Arneis will be a smaller release due to fruit that was damaged during a hailstorm the first week of July. Nonetheless, this wine remains salty, mineral-driven and bright with citrus and white peach. It is executed in stainless steel only. Perhaps this vintage is a little thinner in terms of mouthfeel, but it draws to a close with lingering acidity.
Winemaker Description
Intense straw colored with greenish glints. The nose presents lemon, pineapple, peach and apricot notes with floral hints. On the palate, it is fresh, full-bodied, with mineral notes and a persistent finish.
Buelan Compania De Sacas Las Canciones No.01 Mirador Manzanilla Manzanilla Sanlucar de Barrameda 375ml
Producer Description
Varieties : 100% Palomino Fino. Vinification Method : This wine is sourced from a solera at bodegas Del Rio of Luis del Rio in Sanlúcar. Nick selected barrels on the warmer side of the bodega, giving the wine a fresher, more playful character.
Buelan Compañia de Sacas is a bottling project of barrel-selected sherries created by Nick Africano, musician and founder of En Rama Sherry Co.
Nick works with the wines of Ramiro Ibañez of Cota 45 and Willy Perez of Bodegas Luis Perez through his work with Spanish wine in New York City and with his experience working with José Pastor Selections. He was thrilled when he learned of Ramiro and Willy’s joint project, M. Ant. De La Riva, imported by José Pastor. After meeting Ramiro and Willy a few times in Spain, Nick immediately connected with their ethos, and knew he wanted to work with them in some capacity beyond selling their wine in NYC.
They are true modern masters, and will one day be legends of the category. For Nick, it felt like a dream come true to work with them for his first release: an idea Nick had to bottle a sherry to be co-released alongside a new song of the same name.
Buelan aims to bottle sherries that capture a depth of meaning and place, of metaphor and artistry, and, most importantly, they aim to capture the stories of the people who make the wines. Each bottling expresses a particular theme, be that a song, an idea, or just a certain style of sherry Nick wants to highlight.

Burklin-Wolf Estate Riesling Trocken Biodynamic 2024 750ml
Bürklin-Wolf Estate Riesling Trocken — Pfalz 2024
Dr. Bürklin-Wolf is one of Germany's most storied wine estates, with roots in the Pfalz stretching back to the 17th century. Under the stewardship of Bettina Bürklin-von Guradze — one of Germany's most celebrated woman winemakers — the estate converted fully to biodynamic farming in 2005, becoming a benchmark for sustainable viticulture in the region. The vineyards, which include grand cru sites Gaisböhl and Gerümpel, are farmed without synthetic inputs, guided by lunar cycles, and harvested by hand. The result is a range of Rieslings that express the Pfalz with uncommon precision and vitality.
The 2024 Estate Riesling Trocken is sourced from young vines — fifth and sixth leaf — from Gaisböhl and Gerümpel, fermented spontaneously with native yeasts, half in traditional Doppelstück oak casks and half in stainless steel. The combination preserves freshness while adding a subtle textural complexity that sets this wine apart from its peers at the price. Bone dry, vegan, and built for the table.
Pale gold in the glass with a luminous clarity. The nose is pristine and aromatic — abundant peach, Amalfi lemon, preserved citrus, and a delicate mineral flicker of flint. On the palate it is medium-bodied and juicy, with the characteristic Pfalz generosity of stone fruit balanced by vivid lemon acidity and a long, saline finish. Crisp, focused, and deeply satisfying — a Riesling that rewards both the casual pour and the considered pairing.
Expert Reviews - Vintage 2024
James Suckling — 92 Points
“Abundant peach and Amalfi lemon fruit, plenty of structure and bright mineral acidity on the juicy, medium-bodied palate. Pronounced preserved lemon and salt flavors in the long finish. From biodynamically grown grapes. Vegan.”Vinous — 90 Points
“A very subtle flicker of flint accompanies bright citrus and crushed citrus foliage. The palate brings the typical Pfalz juiciness with some stone fruit, but the lemon overtone is a constant in this vivid, bone-dry expression.”

Bürklin-Wolf Ruppertsberg Riesling Trocken 2023 750ml
Dr. Bürklin-Wolf | Ruppertsberg Riesling Trocken 2023 | Pfalz, Germany
Dr. Bürklin-Wolf is one of Germany's most storied biodynamic estates, farming the Pfalz with meticulous precision. Their Ruppertsberg Ortswein (village-level wine) is an open secret among Riesling lovers: sourced primarily from the estate's exclusively owned Gaisböhl Grosse Lage (Grand Cru) vineyard, it delivers Grand Cru-quality fruit at a village-level price. Certified biodynamic, vegan, and sealed with a screwcap for pristine freshness.
The 2023 vintage in the Pfalz produced wines of remarkable juiciness and precision. This bottling opens with a coolish, pure bouquet of star fruit, ripe citrus, and smoky mineral notes. The palate is mouth-filling yet elegant — creamy on entry, then salty minerality and electric acidity drive the finish long. Bone-dry, clean, and built to reward a few years of cellaring.
Tasting Notes - Vintage 2023
James Suckling — 94 Points: What a stunning village wine. The mouth-filling juiciness (think star fruit and the ripest citrus) is backed up with ample power. Creamy front palate, then the salty minerality and animating acidity kick in and push the finish way out there. A cuvée based on the Gaisböhl GG site of Ruppertsberg. Drink or hold.
Wine Advocate — 92 Points: Opens with a remarkably coolish, pure and refined bouquet with bright, elegant fruit and smoky aromas. Lean and elegant on the palate yet with ripe and juicy fruit — a very fine, elegant-finishing Riesling whose savory grip and tension will be better integrated after a few years of bottle age.
Vinous — 90 Points: A lovely flicker of reduction on the nose leads to an immensely juicy, rounded palate. Lemon-fresh Reine Claude plums with a lovely undertow of yeast. Absolutely bone-dry and clean on the bright finish.

CACHACA 51 Brazil 1.0L LITER
Cachaça 51 — Pirassununga, São Paulo, Brazil (1.0L)
Cachaça is Brazil's national spirit and one of the world's great distilling traditions — produced since 1543, when the process was first developed near the port of Santos, São Paulo, making it one of the oldest distilled spirits in the Americas. Unlike rum, which is distilled from molasses, cachaça is distilled directly from the fresh juice of unrefined sugarcane — called garapa — preserving the raw, vibrant character of the cane itself. Cachaça 51 is produced in Pirassununga, São Paulo, in the heart of Brazil's sugarcane plantation country, from top-quality cane varieties selected for their freshness and flavor. It is Brazil's leading cachaça brand and, as of 2013, the second best-selling distilled spirit in the world — sold from corner markets in São Paulo and Rio de Janeiro to the farthest reaches of the Amazon. The 'Cool Spirit' of Brazil, Cachaça 51 is the essential base of the world-famous Caipirinha cocktail and the definitive introduction to Brazil's most beloved spirit.
Unaged and crystal clear, Cachaça 51 is fresh, clean, and vibrant — the unmistakable scent of sugarcane on the nose, with a lively, slightly sweet character on the palate and a clean, crisp finish. Versatile and approachable, it is equally at home in a classic Caipirinha, mixed with fruit juices, or sipped neat over ice.
"Made from top quality cane varieties in Brazil's plantation heartland. The biggest selling brand of its type in the world — and the essential base for an excellent Caipirinha." — Cachaça 51, Producer

Cade Cabernet Sauvignon Howell Mountain Estate 2022 750ml
Critical Acclaim for the 2022 Vintage:
James Suckling - 94 Points: Savory aromas of blackcurrants, cedar, tobacco leaves and mocha. The palate is full-bodied with firmly framed tannins and balanced acidity, giving notes of blackberry bush, bark, graphite, licorice and spices. Layered black fruit has been finely integrated with a powerful undertone. Drink or hold.
Jeb Dunnuck - 92 Points: Absolutely textbook Howell Mountain notes of darker currants, black cherries, chocolate, bouquet garni, and leafy, herbal, forest notes all shine in Cade's 2022 Cabernet Sauvignon Howell Mountain, a medium to full-bodied, ripe, nicely concentrated 2022 that has integrated tannins and acidity, terrific overall balance, and outstanding length. As opposed to many 2022s, this has solid underlying structure and depth and is a rock-solid beauty that will evolve nicely over the coming 10-12 years or more.
The Wine Advocate - 92 Points: There are 9,000 cases of Cade's 2022 Cabernet Sauvignon Estate, a reasonable volume for Howell Mountain. Classic hints of pine needles and resiny notes accent blueberry fruit on the nose, while the full-bodied palate is richly textured and concentrated, framed by grainy tannins on the long, dark chocolate-tinged finish.
Cade Sauvignon Blanc Napa Valley 2024 750ml
Producer Description
Our 2023 Sauvignon Blanc has aromas of grapefruit, lime zest, white flowers, white peach, lemon grass, and orange peel. On the palate are aromas of pineapple, guava, tropical fruit, Asian pear, candied lemon, and green melon. The wine has a bright acidity and wonderful texture on the mid-palate.
While the core of this wine is Sauvignon Blanc, the Musqué, Sémillon, and Viognier add a lot of floral notes and viscosity to this vintage. We captured these wonderful floral notes by fermenting each variety separately in concrete eggs, stainless steel drums, and tanks.
The French oak barrels, in which 10% of the wine aged in, were very lightly toasted to preserve the delicate fruity aromas and provide a creamy texture to the mid-palate of the wine.

Cakebread Cellars "Dancing Bear Ranch" Howell Mountain 2017 750ml
Expert Reviews - Vintage 2017
The top Cabernet is the 2017 Cabernet Sauvignon Dancing Bear Ranch, which comes all from the Howell Mountain AVA. It's another inky colored beauty boasting a terrific perfume of black and blue fruits, ground herbs, spice box, graphite, and forest floor. With brilliant minerality on the palate as well as full-bodied richness and an expansive, opulent texture, it has sweet tannins and is approachable today, yet will benefit from short-term cellaring and cruise for 25-30 years. It's one of the few 2017s to come close to its 2016 counterpart. Bravo! Drinking 2024 to 2054. Jeb Dunnuck 97
Bottled only three weeks ago, the 2017 Cabernet Sauvignon Dancing Bear Ranch is composed of 89% Cabernet Sauvignon, 10% Cabernet Franc and 1% Merlot, having spent 22 months in 60% new French oak. Very deep garnet-purple in color, it reveals beautiful notions of kirsch, red and black currant preserves, raspberry pie and warm plums with hints of red roses, stewed tea, underbrush and cinnamon stick. Medium-bodied, the palate has wonderful red fruit and floral intensity intermingled with black fruits, framed by firm, grainy tannins and a wicked backbone of freshness, finishing very long and mineral laced. Very different from the epic 2016 Dancing Bear, but very exciting! Drinking 2020 to 2038. - Robert Parker Wine Advocate 95+
The 2017 Cabernet Sauvignon Dancing Bear ranch is a gorgeous Howell Mountain red. Succulent black cherry, plum, licorice, spice, new leather, rose petal and blood orange all run through this deep, resonant, unctuous Cabernet Sauvignon from Cakebread. This is a very pretty wine. Drinking 2022 to 2032. - Vinous 93
