Winemaker Description

The Cava Brut by Elvi is a highly drinkable sparkling wine made from grapes grown in Spain's fertile wine regions. The coloring is very light, and nearly translucent with a straw coloring and some greenness. The bubbles are nice and prominent, both pleasurable to the eye and mouth.

The aroma is complex, with many different notes. A touch of fruit, a touch of yeast, and a touch of almond swirl around in the nose. The texture feels nice in the mouth with lighter acids that fall away at the end and a shorter aftertaste. Very enjoyable and easy to drink.

An organic rosé cava, crafted with the Traditional Method and aged on lees for a minimum of 35 months. A gentle skin maceration gives the wine its delicate color. Bearing the seal of Elaborador Integral (Integral Producer), it is made from vines rooted in ‘sauló’, a sandy granitic soil, overlooking the Mediterranean Sea. Mataró is the most genuine variety in Alella and it is also the name of the Capital of the Maresme area

Winemaker Description

Compelling and fresh, this wine is redolent of grapefruit and red berries

One would be hard-pressed to find anyone as devoted to the concepts of ‘sustainable’ and ‘local’ as Thierry and Céline Tissot. Their vision is of a sustainable ecological future with a thriving local economy to pass on to their two children. All one has to do is admire the privileged vineyards the Tissots farm along the steep mountainsides surrounding their village of Vaux-en-Bugey. Here, Thierry has committed to replanting with traditional local varieties, namely altesse and mondeuse.

Meanwhile, Céline has implemented her experience as an agriculture engineer and enologist, employing strictly sustainable agriculture, with a particular focus on insect diversity. Their efforts earned organic certification in 2019. Their vineyards are surrounded by sub-alpine forests brimming with  biodiversity—birds’ nests, foxes, ladybugs, spiders—which Céline loves to share on social media as they work the vines with their dog Maya. The Tissot vineyards had never seen any herbicides, having been abandoned to the forest before the introduction of chemical treatments. The couple have steadfastly carried on this legacy with respect and dedication to their principles.

This méthode traditionelle sparkling wine is made with organically-farmed, estate gamay and mondeuse. As an Extra-Dry, it has an exceptional balance that will play well at the beginning and end of the meal (or throughout your picnic!). Céline and Thierry Tissot are showing that top quality méthode traditionelle sparklers can be made in Bugey, transmitting a clear and unique Bugey identity. The Tissots have been pushing the envelope with the development of their traditional method sparkling wines with a long lees-aging regimen.

Winemaker Description - Vintage 2022

The aromas on the nose are fresh, ranging from white fruit such as pear and apple, to tropical fruit like pineapple and plum.

Fresh and indulgent opening, with a tasteful balance between sweetness and acidity and fruity notes of acidic and white fruit appear in the finish.

Pairs with exotic flavors such as Thai Tom Yum soup, Peruvian sea-bass ceviche, Mexican quesadillas or Labneh and Tahini served with pita bread. Also, with traditional ham and cheese French omelet, buttered grilled corn on the cob, chicken pie, or wild mushroom risotto and even dessert like tarte Tatin or crema catalana.

Fruity and fragrant, palatable, fine and elegant in the mouth with a direct and clear flavour and a good persistence. Prosecco Col Fondo is characterized by the deposit of the yeasts on the bottom: it is made according to the 'Ancestrale' method, which was used since ancient times, of second fermentation in the bottle without disgorgement. What is obtained is a dry, fruity and refreshing wine. The prolonged contact with the yeast confers a sapid and decisive finish and well-balanced flavors, with bread crust, green apple and white peach aromas.

  Generous and expressive, the latest rendition of Vilmart's NV Brut Premier Cru Cuvée Rubis is showing very well, bursting with aromas of red berries, plums, blood orange and dried flowers. Medium to full-bodied, fleshy and enveloping, with a sapid core of fruit, a pillowy mousse and a lively, delicately phenolic finish, it's already drinking well. This is based on the 2017 vintage, with reserve wines from the 2016 and 2015 vintages, and it was disgorged with nine grams per liter dosage.

• The Wine Spectator 93 Points | Fine and harmonious, this is lightly chalky and refined in texture, showing pinpoint integration of its well-spiced range of pureed raspberry, blood orange granita, lime peel, biscuit and mineral notes and its spine of chiseled acidity. The delicious and super-yeasty flavors possess fine depth on the clean and relatively dry finish, indeed this is notably drier than what is typical for the genre. Lovely and this is a wine that could be enjoyed now or held for a few years first.

55% Xarel.lo, 35% Macabeu and 10% Parellada from four vineyards ("Cuc", "Figuera", "Triangle" & "Pupurri"), each located surrounding the winery in the hills of Penedes at different altitudes (200-500m), microclimates and Xilobí soils.

Grapes are hand harvested, fermented/aged in tank on the lees for 6 months, and then aged for an additional 26 months before being disgorged.

Our award-winning Hambledon Classic Cuvée Rosé is produced exclusively from our own estate on the South East facing chalk slopes of Windmill Down, in the historic village of Hambledon.

The rosé expression of our Classic Cuvée. Aged a minimum of 45 months, this Chardonnay-led blend will reveal aromas of wild strawberry and gentle vanilla. At the finish, Hambledon's chalky soils and the influence of the Pinot Noir red wine add a hint of phenolic bite.

The colour is vivid, a gentle salmon pink, and the fruit, reflecting the cooler 2019 vintage, has notes of green apple, crisp nashi pear and floral hedgerow scents of hawthorn and fresh sloe.

Toasty notes of roasted almond and vanilla wafer are deftly integrated with sun-dried black cherry, baked peach, blood orange sorbet and candied ginger flavors, all well-defined by racy acidity and a subtle streak of salinity. William Kelley of the Wine Advocate writes 96 Points | Bollinger's 2015 Brut La Grande Année Rosé was disgorged in May last year with seven grams per liter dosage. Offering up deep aromas of orchard fruits, blood orange, mandarin rind and peach mingled with nuances of coffee, praline and fino sherry, it's medium to full-bodied, pillowy and layered, with a broad attack that segues into a vinous palate framed by high levels of structuring dry extract that makes its presence felt on the sapid, nutty and penetrating finish. Given the skin maturity and inherent structure of the year, the Bollinger team elected to include only 4.5% of still red wine in the blend, a comparatively low percentage.

97 Points Wine Spectator:  Like a stallion out of the gate, this shows an initial explosion of power, in the form of mouthwatering flavors and fine texture, before quickly settling into an elegant gait. The racy acidity is seamlessly knit, buoying the lacy mousse and flavors of cassis, toasted brioche and tangerine, with accents of candied ginger, hazelnut and fleur de sel lingering on the long, creamy finish. 96 Points Wine Enthusiast:  The new release of this producer's prestige cuvée comes in its usual beautifully sculpted bottle. The Champagne, from a great vintage in the region, is just approaching maturity still showing minerality from the high amount of Chardonnay in the blend. Nutty flavors are creeping in, keeping the great texture adding complexity. Drink this very fine wine now although it will also age further.

The wine is produced in very limited quantities and is restricted to exceptional years, with only 11 vintages being declared over the past four decades of production. 70% Chardonnay, 30% Pinot Noir from selected grand cru vineyards. Simon Field MW: Gentle bead, lovely evolved notes of hazelnut, even a hint of praline, enrobed and ennobled by firm acidity and a persuasive finish. Alan Bednarski: Great, pure wine with still-fresh zesty flavours, delicate palate and sweet yeast notes, with a long flavourful finish of ripe melon. Tim Hall: A challenging, pressing start, wanting to overwhelm with shimmering and sharp attack, but shows intensity on the palate to match. Lovely lemon-apple notes and tempered texture.

96 Points Jeb Dunnuck: The 2008 Champagne Rare is luxurious with aromas of graham cracker, honeysuckle, quince, and orange zest. It is round and opulent, with a fine and pillowy mousse, and retains freshness throughout, with apricot and yellow flowers. It is impressive and long, and fully luxurious. Drinking well now, it is sure to hold its own for years to come. Drink 2022-2044.

93 Points Wine Advocate:  The newly released 2008 Brut Cuvée Rare is very promising, unwinding in the glass with a youthfully reserved nose of citrus oil, crisp green apple, freshly baked bread, iodine and oyster shell, as well as some rather herbaceous characteristics that depress my score a little, even if I suspect that they will resolve with a bit more bottle age. Medium to full-bodied, incisive and tightly wound, if the 2006 vintage was gourmand and demonstrative, the 2008 is slower to show all its cards. Built around racy acids and complemented by a pillowy mousse, this rendition of Cuvée Rare will reward a few years more on cork.
