Fernando de Castilla Manzanilla Classic San Lucar de Barrameda 375ml HALF BOTTLE
Producer Description
Grapes are sourced from Fernando de Castilla's partners' vineyards in the Jerez district. The soil type is Albariza. Picking takes place in early September. The wine is made from the first pressing of grapes, this gives a light fresh style. Fermentation takes place at relatively high temperatures to reduce fruit flavour. This makes a very neutral wine which is perfect for the production of sherry. The wine undergoes malolactic fermentation.
In the February after harvest the wine is fortified with grape brandy up to 15% abv. Once at this stage the wine is then added to fill 4/5ths of the butt (600-litre casks of oak American oak) in the youngest Criadera (scale) in the Solera (a Solera is the total number of scales which can be from 3 up to 9). The wine then begins its ageing process under flor. Periodically, a portion of the wine in a barrel is moved into the next scale, using tools called the canoa (canoe) and rociador (sprinkler) to move the wine gently and avoid damaging the layer of flor in each barrel. At the end of the series only a portion of the final barrel is bottled. This process is called "running the scales". Only 20% of finished wine can be removed from the Solera in one year. The ageing process of the Manzanilla Solera takes place in Sanlucar de Barrameda and the average age of the sherry is 3 years old.
Pale, straw yellow in colour. Decidedly tangy, yeasty and salty nose. Lighter, crisper and more crackly than its older sibling - Fino. The palate lures you in with soft apple and citrus flavours, then attacks with a savoury nutty tang, and finishes with a salty reminder of the fresh spray of the sea.

The Habla la Tierra is a cuvée of Tempranillo, Cabernet Sauvignon and Syrah. The grapes come from quite young vines planted around 2000 on slate soils. After the harvest, the grapes were cool pre-fermented and then fermented in stainless steel fermenters.
This was followed by ageing in French wood for four to five months. The Habla de la Tierra presents itself juicy ripe, dark and spicy on the nose. The unusual cuvée of Tempranillo, Cabernet and Syrah alternates between the scent of freshly sliced plums, figs, ripe elderberries, peonies and black pepper as well as anise, earthy pray and black tea. In addition, one thinks one can already perceive a trace of extract sweetness in the fragrance.
The Habla la Tierra 2021 shows itself very juicy on the palate. The dark fruit is ripe and accompanied by earthy aromas and herbal spice. In addition, a cool, fresh vein runs through the wine, while the tannin proves to be ripe and delicate. The red wine is down-to-earth in the most pleasant sense, uncomplicated and easy to drink, and at the same time it has character.

Winemaker Description
Ànima Negra was founded in 1994 when two self-taught friends — Pere Ignasi Obrador and Miquelàngel Cerdà — decided that the wines of their native Mallorca weren’t reaching full potential.
Taking advantage of some unused milk tanks at the dairy farm owned by Pere’s family, they made two barriques of wine from Callet grapes (a native Mallorcan varietal) they’d purchased from local farmers. The initial results were so encouraging that the friends decided to form a partnership and continue pursuing their newly found passion for wine.
Situated in the southeast of Mallorca, Ànima Negra winery produces its wines on the old country estate of Son Burguera, close to the town of Felanitx. The buildings date back to the 13th century, and contain a traditional winemaking area, which historically was used to supply wine for locals living on and near the estate.
Ànima Negra sources its grapes from more than 135 carefully selected parcels of land that the partners either own or control. Virtually all of these parcels are within a six-mile radius of the winery, and most of the vines are 50 to 85 years old.

Bodegas Portia is Grupo Faustino’s most recent winery project and is the 7th winery in the group. Located in the heart of Ribera del Duero, the Portia winery is a display of modern design, winemaking function and artistic detail. The brand offers very small production wines - intense, energetic & balanced.
Harvesting at night allows the grapes to maintain all of their organoleptic qualities, as well as a balance between alcohol content and acidity. Once in the winery, the grapes are cold-macerated for a few hours before being pressed. Fermentation takes place in stainless steel tanks at a low temperature to maintain all the characteristics of the best Verdejo white wine.
