Stefan Wellanschitz, the winemaker at Kolfolk, likes the physical qualities of skin-fermented wines, or "orange" wines on the palate, but he wanted a way to make one that was also elegant, not just tannic and out-there. Enter intracellular fermentation: intact, uncrushed grapes rested in a large fermentation vessel where native yeasts slowly started the fermentation process inside of the berries, leading to a gentler extraction from the skins.
After some weeks, the grapes were pressed off to finish fermentation in 1100 and 1500L (i.e. really big) used oak barrels. A unique winemaking approach that results in a tropical-but-elegant white wine, full of structure, pale in color, with notes like a fistful of flowers. Producer Description.

Wine Review Online 92 Points | This Zinfandel is a breath of fresh air. Unlike the Zins of a decade ago, this one is not dark or inky on the pour but an elegant medium ruby. On the nose, typical aromas of strawberry jam and sweet cherry come through, but even on the nose, the heightened acidity of the wine is detectable. These jammy notes carry through on the palate, where they are met with a kiss of vanilla, fine-grained tannins, and a moderate 14.5% alcohol. As the aromas alluded to, the acidity is indeed lifted and fresh. This wine showcases well what Zinfandel can do when approached with finesse.

Jean-Baptiste Souillard has a wonderful way of coaxing the best out of his small parcels of Syrah from the rocky hillside vineyards of Saint Joseph.
He makes four cuveés from Saint Joseph: three lieu-dit from Sarras and Andance in the centre of the region and Saint-Pierre de Boeuf in the northern reaches - and this, the village wine made from a blend of the three sites.
Souillard has a penchant for whole bunch which creates wonderful tension and energy in his Syrahs. His preference for old, large barrels only further highlighting his respect for the fruit and his desire to make more transparent expressions of the region.
Dashe Cellars Dry Creek Valley Lily Hill Vineyard Zinfandel Late Harvest 2018 375ml HALF BOTTLE SWEET

We create the conditions for making Late Harvest Zinfandel by allowing the grapes to hang on the vine approximately 3--4 weeks after they normally would be picked for a dry wine. These grapes were picked on October 30th on a beautiful Fall day, and the grapes arrived at the winery at 40° Brix of sugar. We crushed the grapes into a small 1,500-gallon tank and as is our tradition at Dashe Cellars, we fermented the grapes naturally, using the native yeasts that naturally live on the skins of the grapes. We let the grapes macerate to gain color and flavor, and then allowed the tank to warm.
The fermentation took off quickly, and then naturally halted when the alcohol had reached about 15.5% and the sugar level was about 9%. We always allow the wine to achieve its balance of sweetness and alcohol naturally, by letting the fermentation finish on its own.
The wine was aged in older French oak barrels so as to not overpower the intensity of the fruit. We bottled the wine as soon as possible to maintain its fresh fruit flavors and conserve its sweet concentration and purity. The wine is unfined and received minimal handling to the bottle.

Shaw + Smith was established in 1989 by the current owners, cousins Martin Shaw and Michael Hill Smith. Michael had just completed his Master of Wine in the UK, and Martin was running a “flying winemaker” business in Europe when they decided – somewhat on a whim – to make wine together. While a family business, Shaw + Smith is more about a partnership of two cousins with a unified vision and complimentary skills, now joined by a small team of bright talented wine people who are dedicated to taking the business forward. Shaw + Smith aims to make exciting, refined wines exclusively from the Adelaide Hills that rank amongst Australia’s best.
They specialize in varieties suited to the cooler climate region, namely Sauvignon Blanc, Chardonnay, Pinot Noir, and Shiraz. Shaw + Smith owns two vineyards in the Adelaide Hills, at Balhannah and Lenswood, with a total of 136 acres (55 hectares) under vine. The Balhannah vineyard, which surrounds the winery, was planted in 2000 with Sauvignon Blanc, Pinot Noir, and Shiraz. The soil is free-draining sandy loam over red clay, with underlying quartzite and shale. The average altitude is 1,375 feet (420 meters). The Lenswood vineyard was planted in 1999 primarily with Chardonnay and Pinot Noir, with a small amount of Sauvignon Blanc. The soil is brown loam over clay, as well as thinner topsoil areas on the ridges with broken shale and stone. The property is undulating with some very steep areas that provide east and west facing orientation and aspect. The property stands at 1,640 feet (500 meters) at its highest.
Growing outstanding grapes, working with the best growers, and using minimal intervention to make exciting wines with a strong sense of place is the core philosophy of Shaw + Smith.
Stylistically, a slow evolution of the wines over time has occurred. Sauvignon Blanc winemaking has changed little, although the quality of fruit has improved significantly as the plantings have gone higher and cooler. Chardonnay continues to refine and evolve due to access to better vineyards, earlier picking to protect valuable acidity, whole bunch pressing, a preference for wild yeasts, less malolactic, and less battonage. Pinot Noir has improved as the vines have aged, and as they move to more whole-bunch and whole-berry in fermentations. The refinements for Shiraz are ongoing: better vineyards and a move to whole-bunch and whole-berry, along with less reliance on new oak.

Pied à Terre is a phrase that translates to “foot to earth.” We feel that the farmer’s footprint is the best fertilizer and the most important sight in a vineyard. When the land is well-trodden, the vine will be well-tended, and the details not overlooked.
2018 was the first “normal” vintage in many years, with none of the climatic difficulties that complicated previous years of the past decade. Cooler temperatures and moderate weather led to a long growing season, allowing grapes to ripen smoothly. It was an epic vintage that produced wines with great structure and concentration without being overripe.

Frog's Leap Zinfandel Napa Valley 2021 750ML

Using their now well-established technique of cold-soaking the Petite Sirah portion of the co-ferment and then infusing it into the fermenting Zinfandel ten days later, Frog's Leap locks in the freshness of the fruit and accentuate the elegance of the resulting wine.
A dash of Carignane adds additional acidity and structure, preserved nicely by their practice of aging Zinfandel largely in small concrete tanks. The resulting wine is beautiful: deeply flavored, balanced, and fresh—a great summer drinker to be sure, especially with a quick chill. But don’t be afraid to put a few bottles away in the cellar; like all Frog's Leap Zins, this wine has decades of life ahead of it.
