Caol Ila Distillery | 12 Year Old Single Malt Scotch Whisky | Islay, Scotland

Caol Ila — pronounced "Cull Eela" — is one of Islay's most storied and beloved distilleries, situated on a secret bay on the northeastern shore of the island, overlooking the Sound of Islay toward the Paps of Jura. Founded in 1846, the distillery has long been a cornerstone of Islay whisky culture, its remote location accessible only by sea for much of its history. For over 100 years, small coal-fired "puffers" like the SS Pibroch brought barley, coal, and empty casks to the distillery, returning her whisky to the mainland through the Sound of Islay.

Today, Caol Ila remains true to its heritage. The barley is still malted locally at Port Ellen, and pure spring water still rises from limestone in nearby Loch Nam Ban, falling to the sea at Caol Ila in a clear crystal stream — just as it always has. The result is a whisky of genuine Islay character: peaty and maritime, yet more restrained and elegant than many of its island neighbors.

The 12 Year Old is Caol Ila's signature expression — a beautifully balanced Islay malt that showcases the distillery's distinctive style. The nose is fresh and complex — subdued peat smoke, citric fruitiness, sea salt, and a hint of malt. On the palate, a sweet start with peaty and salty notes, citrus, and a touch of olive brine, leading to a lengthy, slightly dry, smoky finish. Elegant, approachable, and endlessly rewarding.

The Volstead Act of 1920 which initiated Prohibition in the USA granted permits to six distillers in Kentucky to continue to bottle bourbon for medicinal purposes. Through one of these permits, Old Forester continued to be produced as medicinal whiskey on Louisville’s famed Whiskey Row. It is the only bourbon continuously sold by the same company that has been available for sale before, during and after Prohibition.

During this time, all whiskies had to be bottled at 100 Proof. With a barrel entry proof of 100, the “angel’s share” would have created a 115 proof whiskey after maturation. To pay homage to this era, Old Forester presents 1920 Prohibition Style Bourbon at 115 proof to represent the rich flavor profile this bourbon had nearly 100 years ago.

An intense medley of cherry preserves, drippy caramel, dark chocolate, thickened maple syrup and seasoned oak spiciness. 

Aged only in first-fill American bourbon barrels, this spirit has taken up a delicate oaky spice to match the expected light flowery scents on the nose. Released in 2023, the Wild Turkey Master's Keep Voyage Kentucky Straight Bourbon Whiskey is the latest edition to the coveted Master's Keep series. This premium 106-proof (53% ABV) iteration is a collaborative bottling between two Campari powerhouses - Master Distiller Eddie Russel and Appleton Estate Master Blender Joy Spence.

Master's Keep Voyage is said to be a 10 year old Kentucky bourbon whiskey finished for at least five weeks in hand-selected Appleton Estate ex-rum casks - casks which previously housed 14 year old pot still Jamaican rum. The May 2015 inaugural release of Michter's US1 Barrel Strength Rye marked yet another milestone in that quest. For maturation, the Rye distillate is entered into the barrel at 103 proof, rather than a more industry standard higher proof. Barrel entry at a lower proof of 103 rather than a higher proof costs Michter's more money in terms of barrels and warehousing, but they believe it yields a richer, smoother, more full-bodied whiskey after proper maturation. Each year as part of the Parker's Heritage Collection, we select a special whiskey to be released in the name of our late Master Distiller Parker Beam. The barrels selected for this series include Bourbon, Rye, and Wheat Whiskeys, among others, and are some of the finest and most diverse American Whiskeys ever produced. They are a fitting tribute to the expertise of Parker Beam.

The 17^th edition of the Parker’s Heritage Collection consists of 10-year-old Kentucky Straight Rye Whiskey pulled from 142 barrels. For this release, we used our traditional rye mashbill of 51% rye, 35% corn and 14% malted barley. It was barreled in August, October or December of 2012 and aged on the first floor of Rickhouse H1 and H2, the fifth floor of Rickhouse FF, the third and seventh floors of Rickhouse BB, and the second floor of Rickhouse DD.

At bottling, the liquid was non-chill filtered. This is only the second Rye in the collection and is the longest-aged Rye Whiskey in the Heaven Hill Distillery portfolio, making this a truly special edition.
