This glass was designed as a result of a series of workshops in 1992. The final product has an elongated thistle shape on a truncated stem, and incorporates a small, slightly outturned lip which highlights sweetness.
Sommeliers was the world’s first wine friendly glass collection and a design revolution created by Claus J. Riedel (9th generation). The range adheres to the Bauhaus design principle of form follows function, as Claus J. Riedel had discovered that certain wines showed more depth and better balance when enjoyed from certain shapes. Created as a tribute to Elisabeth Salmon, co-founder of the House of Billecart-Salmon, Cuvée Elisabeth Salmon is one of the estate’s most prestigious and sought-after Champagnes. First created in 1988, this exceptional rosé represents the pinnacle of Billecart-Salmon’s savoir-faire, combining extraordinary finesse, depth and complexity with the graceful elegance that defines the House style.
The 2013 vintage is composed of 53% Pinot Noir and 47% Chardonnay, sourced exclusively from exceptional Grand Cru and Premier Cru vineyards. The Chardonnay comes from Oger, Cramant and Le Mesnil-sur-Oger, while the Pinot Noir is drawn from Mareuil-sur-Aÿ, Aÿ and Bouzy. Less than 10% of the Pinot Noir is vinified as red wine, using fruit from old vines in Mareuil-sur-Aÿ with a southern exposure, adding color, structure and subtle red-fruit richness to the final blend.
Only 5% of the wine is vinified in oak casks, allowing the cuvée to develop additional texture and complexity without sacrificing purity or precision. It then undergoes an extraordinary 115 months of aging on the lees, giving the Champagne remarkable depth and maturity while preserving its freshness and finely detailed character. A restrained dosage of just 4.4 g/L keeps the finish dry, energetic and beautifully defined.
In the glass, Elisabeth Salmon 2013 reveals a luminous salmon-pink color with delicate copper reflections, animated by an exceptionally fine and graceful mousse.
The bouquet is captivating and complex, opening with wild strawberries, ripe red berries and blood orange, followed by fragrant rose, violet and subtle sweet spices. As the Champagne develops in the glass, deeper notes of blueberry, cherry, pastry and gently toasted brioche emerge, accompanied by a distinctive saline and mineral character.
On the palate, the wine combines remarkable delicacy with measured power. Flavors of cherry clafoutis, orchard apple and blood orange unfold over a silky, beautifully structured texture. The mousse is refined and persistent, while vibrant acidity provides freshness and lift. A precise chalky minerality carries through the palate, leading into a long and elegant finish marked by citrus zest and subtle pastry notes.
There is impressive richness here, but never heaviness. Pinot Noir contributes depth, fruit and structure, while Chardonnay provides finesse, freshness and a beautifully sculpted mineral backbone. The result is a Champagne of exceptional harmony, combining maturity and complexity with remarkable energy.

97 VINOUS: The 2013 Brut Rosé Cuvée Elisabeth Salmon is much more exuberant than the 2012, even though on the surface, that does not exactly align with the respective vintages. The decision to use a bit more new oak, more still red wine and a touch higher dosage to soften the natural austerity of the year paid off handsomely. Rose petal, blood orange, spice and kirsch confer a decidedly exotic flair. The ample, substantial finish is striking. Dosage is 4.4 grams per liter. Disgorged: January 2024. (AG)

It's beautifully fresh and saline on the palate, with fantastic concentration, but in a delicate, silky way. 96 Jeb Dunnuck: The 2013 Champagne Elizabeth Salmon Rosé pours a deeper copper/salmon color, but not too dark, with more orange undertones. It offers notes of smoky wet stone, pithy grapefruit, and licorice. It has a long, fruity feel on the palate, with verticality and a fluffy mousse. The focus and backbone of Chardonnay really play into it in this vintage, which I prefer. Drink over the coming 20 years. Made from 53% Pinot Noir from Aÿ (sélection massale) and Bouzy, with red wine from parcels in Mesnil-sur-Aÿ, and 47% Chardonnay from Oger, Cramant, and Le Mesnil-sur-Oger. It was 5% barrel vinified and 95% stainless steel.
94 Robert Parker's Wine Advocate: Disgorged in January 2024 with a dosage of 4.4 grams per liter, the 2013 Rosé Elisabeth Salmon emerges from this cool, late-ripening vintage as a rather giving, generous rendition. It unfurls in the glass with aromas of dried apricot, dark cherry and grapefruit mingled with a subtle hint of mocha. On the palate, it is full-bodied, ample and enveloping, offering a sweetly fruited core underpinned by tangy acidity, culminating in a precise, perfumed finish. This is a fleshy, though somewhat old-fashioned Champagne that, at present, does not quite attain the depth of Louis Salmon of the same vintage; however, it would not be surprising to see it improve considerably with additional time on cork following disgorgement. It is composed of an almost equal blend of Chardonnay and Pinot Noir and was vinified almost entirely in stainless steel, with full malolactic fermentation. Rating: 94+

Billecart Salmon Champagne Brut Reserve Red Label 750ml
The wine itself is Billecart-Salmon’s classic Brut Réserve, presented in the distinctive red-and-black limited-edition label. Billecart-Salmon and (RED) first collaborated nearly a decade ago and have renewed the partnership with a limited release, with a portion of each bottle sold supporting critical healthcare programs in communities most affected by AIDS.
Crafted from the three classic Champagne varieties — Meunier, Chardonnay and Pinot Noir — Brut Réserve is sourced from outstanding sites throughout Champagne. The blend incorporates a significant proportion of reserve wines, giving the cuvée impressive consistency, complexity and depth while retaining the graceful, refined character for which Billecart-Salmon is known.
In the glass, it shows a brilliant straw-gold color and an exceptionally fine stream of persistent bubbles. The bouquet is clean and precise, opening with white stone fruits, fresh orchard fruit and delicate floral notes, followed by subtle hints of biscuit and toast.
The palate is beautifully balanced and silky, with flavors of crisp apple, pear and citrus complemented by gentle roasted and biscuity notes. Fine mousse and vibrant acidity give the wine wonderful energy, while a mineral backbone carries through to a long, fresh and elegant finish.

Created exclusively for the American market, this special cuvée also highlights the longstanding relationship between the United States and Billecart-Salmon, one of Champagne's most respected family-owned houses.
For this exceptional release, Billecart-Salmon selected the outstanding 2018 vintage, a year of impressive ripeness, concentration and freshness. The Champagne is composed of 65% Pinot Noir from the Montagne de Reims and 35% Chardonnay from the Côte des Blancs, sourced from prestigious Grand Cru and Premier Cru vineyards.
Only a small portion — approximately 3% — was vinified in oak, with the remainder in stainless steel to preserve freshness, purity and precision. The Champagne then spent an impressive 63 months aging on the lees, developing complexity and texture while retaining the finely etched character that defines the Billecart-Salmon style. A restrained Extra Brut dosage of 4.9 g/L emphasizes the wine's mineral structure and remarkable purity.
In the glass, it displays a luminous pale-gold color with a fine, energetic stream of bubbles. The bouquet is sophisticated and expressive, revealing nectarine, mirabelle plum and blueberry, layered with delicate white and violet flowers and subtle chalky minerality. Notes of biscuit and brioche emerge as the wine opens, adding further depth and complexity.
The palate begins with a beautifully creamy texture before developing remarkable energy and precision. Poached pear, white flowers and brioche are framed by an intensely chalky mineral backbone. The cuvée brings together fruit from the prestigious villages of Avize, Chouilly, Cramant and Le Mesnil-sur-Oger, producing a Champagne of remarkable purity, precision and mineral intensity. Billecart-Salmon blends wines from two different years, allowing the House to capture both freshness and complexity while maintaining its signature elegant style.
Made from 100% Chardonnay, the wine is vinified in stainless-steel tanks to preserve its delicate fruit and mineral character. Midleton Meets Málaga
The 5th installment in the famed Redbreast Iberian Series sees Master Blender David McCabe travel to the sun-drenched hills of Málaga, Spain, to source Moscatel wine casks for finishing Redbreast’s signature Single Pot Still Irish Whiskey. Spanish Moscatel is celebrated for its floral aromas and notes of pineapple, peach, and honey — characteristics that weave beautifully into Redbreast’s rich pot still character.
The Moscatel wine is aged in American Oak for 24 months before the casks are emptied and transferred to Midleton Distillery, where Redbreast’s Single Pot Still Irish Whiskey has been maturing in these casks since June 2024.

Redbreast’s Iberian Series celebrates Gilbey’s storied history of importing fortified wines and sherry from the Iberian Peninsula since the late 1800s. Craigellachie 17 year old shows an evolution of the distillery style, the tropical fruit flavours are developing more exotic characters and there is an underlying sweetness as some cask development begins to show. This is a really special whisky and fun to explore, thinking about where the different flavours are coming from.
Tasting Notes by Advocacy Host Craig: Craigellachie is often referred to as 'The Bad Boy of Speyside,’ and after tasting the 17 it’s not hard to see why. Thanks to the use of traditional worm tub condensers, they produce a heavier and ‘meatier’ style of whisky.
Starting with a combination of sweet vanilla and caramelized apple, the 17 explodes with flavour when a drop of water is added, bursting forth with pineapple, citrus and lightly charred oak. It has a long finish that doesn't overstay its welcome.
Craigellachie was built in 1891 by the experienced whisky team of Peter Mackie and Alexander Edward. They needed a Single Malt as an ingredient for White Horse Blended Scotch, so the distillery was designed to produce a very specific distillery style which the team replicate to this day.
Craigellachie features some very specific production techniques: barley from an oil fired kiln giving more weight, short stills and worm tub condensers to minimise copper contact. The team do 21 mashes per week, have 8 wash backs and 4 copper pot stills.
People always talk about 'sulphur' flavours, which can be distracting. Craigellachie has a roasted brimstone character alongside a meaty quality. Way back in the 1890s Alfred Barnard described ""the chief characteristic of the Craigellachie brand is the pineapple flavour it develops with age"". This tropical fruit style is what makes the brimstone and meat flavours work, achieving a balance that gets beautifully complex in older age statements.

This extremely hearty whiskey ages in new charred oak barrels for no less than 15 years. Straight out of the barrel, uncut and unfiltered, the taste is powerful, flavorful and intense. Open it up with a few drops of water, sit back and ponder the wonders of the universe. This bourbon was distilled in the spring of 2007 and aged in Warehouse K for 15 years and 5 months prior to bottling.
Nose: The nose invites you in with caramel-stuffed chocolates, vanilla extract and sour cherries.
Palate: The palate is rich and luscious, a slow-moving, sticky river of caramel, leading to peanut shells and coffee grounds.
