This wine displays a pale straw colour with brilliant green edge. On the nose the wine
opens with crisp green apple and lime blossom. This evolves to incorporate a complex
melange of lemongrass, petrichor and subtle blackcurrant leaf. The palate is bright
and refreshing with a focussed tension that suggests longevity and a characteristic
oyster shell salinity.

Food pairing: Best served cold and drunk as an aperitif or with fresh summer oysters,
fresh grilled yellowtail with salsa verde or salmon roses with kewpie mayo and caviar.

Toyo Bijin Junmai Ginjo — Yamaguchi Prefecture, Chugoku, Japan

Toyo Bijin — “Asian Beauty” — is one of Japan’s most evocatively named sakes, and the story behind it is as memorable as the sake itself. Sumikawa Brewing Company, based in Yamaguchi Prefecture in the Chugoku region of western Japan, was founded by a brewer who named his label in honor of his late wife — a tribute that has since become one of the most recognized and beloved sake brands in the country.

This Junmai Ginjo is brewed from Yamada Nishiki rice — the gold standard of sake rice — and fermented in the Ginjo style at low temperatures. But where many Ginjo sakes lean toward delicate and floral, Toyo Bijin takes a bolder path: this is a very dry sake, famously described as “strong enough to kill a devil.” Assertive, umami-rich, and deeply satisfying.

Clear and luminous in the glass. The nose opens with red apple and a fading whisper of nutmeg spice. On the palate it is full-flavored and bone dry, with a firm structure, pronounced umami, and a long, clean finish. Serve chilled.

This traditional grappa has a bright, crystal clear color. The aroma is aromatic, intense, enveloping the nose with fine, fresh fragrant and delicate floral notes of breir rose petals, orange blossoms, lily of the valley, elderberry, sage, citrus fruit and typical Moscato scents.

The fruit comes through on the smooth, well-rounded palate, with apple and pineapple dominant. There are background notes of bread crust.

This traditional grappa has a clear, intense golden yellow to amber color. The nose is delicate and complex, with hints of bread, orange peel, wild flowers, elderberry, vanilla, plum, dried fruits, raisins and amaretto.

Master's Keep Voyage is said to be a 10 year old Kentucky bourbon whiskey finished for at least five weeks in hand-selected Appleton Estate ex-rum casks - casks which previously housed 14 year old pot still Jamaican rum. Offered in curated quantities, expect a nose of island fruits, citrus, and oak coated in molasses. The palate explores hints of caramel, brown sugar, and trails of warm spice. Rare Breed is a "barrel-proof bourbon," meaning it is bottled directly from a variety of barrels at the proof it reaches in those barrels, with no added water to lower the proof or dilute the flavor. This bourbon is a unique marriage of Wild Turkey 6-, 8- and 12-year-old stocks, which give the whiskey a rich, exceptional flavor that is remarkably smooth, considering its high alcohol content. 

It is assertive with hints of light oranges, mint, and tones of sweet tobacco that will remind you of your grandfather's pipe-bowl. The finish is long, warm and nutty and lingers in the mouth with hints of hot peppers and well-toasted whole wheat bread.

Our small batch Kentucky Straight Bourbon Whiskeys are offered as a Small Batch, up to 12 barrels per batch, which was the result of one fermenter. The goal of the Small Batch is to capture the total essence of more complex notes from multiple barrels from distillate of the same fermenter. Weve decided to release the Small Batch Bourbon as a Bottled in Bond so fans of our Wheated Single Barrel Bourbon can do a side-by-side comparison.

Our Small Batch release mash bill is 64 percent corn, 24 percent rye and 12 percent malted barley using our yeast strains. We entered the cooper select, toasted and #4 char barrel at 110 proof after coming off the still around 137 proof. All of our whiskeys are aged and matured on our 168-acre campus inside any one of our six rickhouses. We have more than 100,000 barrels aging onsite.
