Winemaker Description 

Pale gold in colour. Rich with complex, sweet flavour, Dereszla's Tokaji Aszu shows vibrant aromas of caramel and floral notes.

The palate is smooth with intense honey, nuts, apricots, marmalade, mango and papaya flavours leading into a perfectly balanced, spicy finish. Pair it with blue cheese drizzled with honey and topped with walnuts.

Winemaker Description

Harvest is done by hand to select the best fruit. Only the most mature berries are chosen, it is followed by a secondary selection to avoid any compromise on quality. Wild yeasts (pied de cuve) that are naturally present on the skins of the berries are used to obtain exceptional wines that really reflect the terroir with complex flavors and texture. After resting with the skins for 30 days, the juice is fermented in Troncais barrels of French oak barrels for 12-15 days with frequent pump overs. The wine then ages 18 months in Slavonian oak barrels and at least an additional 6 months in the bottle.

The end result is a wine with garnet color with red fruit and cassis aromas
with licorice, smoke and caramel notes with silky tannins.

A very subtle, aromatic Cognac. Its subtle vanilla bouquet also has floral overtones of roses and violets, leading into hints of prunes and apricots. Pierre Ferrand Ambre is superbly balanced on the palate. The aromas found on the bouquet linger on the palate for several minutes.

This rich and aromatic wine features notes of black fruit, black pepper, dark chocolate, dried flowers, and minerals. It has a compact structure with a velvety texture and a distinct acidic tone Type of soil.

The Wine Advocate 92 Points | Normally a bit darker in fruit tone than the blended bottling, the 2018 Cornish Point Pinot Noir features black cherries and a hint of licorice, plus some vaguely floral notions. It's medium to full-bodied, with supple tannins and just a bit of chocolate on the finish, reflecting the warmth of the vintage. 

The Wine Enthusiast 91 Points | This Pinot, from a low lying vineyard almost completely surrounded by water, is simultaneously the most reductive, floral and fruity of this renowned biodynamic producer's lineup. The reduction gives a salty edge but it doesn't overpower the plump cherry and plum fruit or rose petal aromas. The palate is nicely textured with a solid line of acidity that buoys the plush fruit and flows to a long cocktail bitters finish. While this lacks the vibrancy and elegance of some of FR's other single-site wines, it's nevertheless an appealing drop.

Jeb Dunnuck 96 Points | The 2022 Pinot Noir Les Dijonnais comes from the oldest vines on the property, planted in 1995 with all Dijon clones. Bottled in late January of this year, the wine sports a vibrant ruby hue and shows off notes of wild raspberries, mixed berries, a hint of fresh violets, clove spice, forest herbs, and brambly earth. It’s chiseled in its structure, with coiled tannins and a good deal of youthful tension, and also offers mineral persistence, with wonderful salinity and dark undertones of earth. It demands another few years in cool cellars to soften and expand as it evolves and will drink well over the long haul. Drink 2026-2040. 590 cases were produced.

Winemaker Description 

Planted in 1995, the Dijon block is now in its prime, delivering the complexity and elegance one expects from carefully tended twenty-six-year-old vines. The 2021 “DJ,” as it is known in-house, shows characteristic black raspberry and rose hip notes. Consistent with previous vintages, it displays Asian five spice, briar and even hints of blood orange coupled with a refreshing acidity and persistent finish. It is a superior vintage, one of the best of the decade. While the 2021 Les Dijonnais Pinot Noir is delicious right now, it will reward patience after a few years in a cool cellar.  Winemaker Description.

Jeb Dunnuck 96 Points | A bright red color, the 2023 Pinot Noir Roserock Zephirine offers focused and expressive notes of wild raspberries, framboise, rosy perfume, and sweet herbs. Medium-bodied, it has ripe tannins and an approachable feel, with its underlying mineral focus shining through the midpalate and finish. It’s delicious now but will only improve over the next 6-7 years and drink well over the coming 15 years.

Vinous 93 Points | The 2023 Pinot Noir Zéphirine wafts up with an understated blend of dried flowers, spiced citrus and wild strawberries. A stern mineral core and brisk acidity enliven the tart wild berry fruits. Youthful tension pinches at the cheeks, leaving angular tannins and admirable freshness.

Incredibly rich amber colour with golden mahogany reflections, this 10-year-old Tawny emanates from the opening of the bottle a superb aromatic bouquet: with initial notes of almond, walnut, fig, dried fruit, currants, candied orange, then evolving for roasting and wood notes. In the mouth the same complexity, a rich, concentrated, deep structure supported by a magnificent acidity. It evolves with energy and firmness and as an exceptionally long finish. Forbes Magazine: This is an exceptionally smooth Cognac. Matured for four years. On the nose, it offers up rich floral aromas of violet, jasmine, roses, white flowers and peonies, along with intense fruity notes of sweet caramel apples, honey and both fresh and dried fruit, especially prune, peach and apricot, along with Sauterne like notes of golden raisin and fig, as well as some passion fruit and a touch of vanilla. There is also an earthy, black tea like quality in the background, and a hint of waxiness.

Recently, Camus, the largest of the family owned Cognac producers, released a new addition to its core range of Cognacs—labeled Intensely Aromatic. The Cognacs were the culmination of a two-decade long effort to craft Cognacs that are notably more aromatic and flavorful than the norm.

Camus’ Cognacs have always had a reputation for being particularly aromatic. To further enhance that character Camus developed a proprietary distillation protocol, which it calls “Intensity,” that measurably increases the concentration of terpenes and esters in their Cognac, producing what the company describes as an “instant of intensity.”

Terpenes are a large and diverse class of organic compounds, produced by a variety of plants. They are closely associated with floral aromas. Esters are chemicals produced by the interaction of alcohols and fatty acids, and are closely associated with fruity aromas.

In crafting Intensely Aromatic, the firm utilized older casks made from lightly toasted, fine grained oak. The age and toasting of the casks minimized the aroma and flavor components that were contributed by the cask wood and further enhanced the prominence of fruit and floral aromas.

The Wine Advocate by Kristaps Karklins 92 Points | Paillard’s NV Bouzy Grand Cru Les Parcelles XX hails from the 2020 vintage and, in keeping with the tradition, incorporates 20% reserve wines. It embodies the signature blend of 80% Pinot Noir and 20% Chardonnay, sourced exclusively from the sun-drenched, south-facing slopes of Bouzy. The bouquet is expressive, unfolding with aromas of pear, ripe citrus and warm spices, mingling with nuances of toasted bread and orange zest. El Mero Mero Tobala has fruit on the nose with notes of grapefruit and buttermilk on the palate. They are cultivating Tobala to increase sustainability. El Mero Mero Tobala is made with maguey Tobala that is crushed by tahona, fermented in Encino Oak tubs, and distilled in copper.

The arid region of San Dionisio Ocotopec, where this mezcal is made, is known for producing agave with high sugar content, which can come through in the flavor and complexity of the mezcal.

The limestone-rich soil of this region can be harsh on the maguey Tobala, which take 12-15 years to reach maturity in this area. Due to the long maturation times, only small batches of 150-200 bottles of Tobala can be made at once.

The palate has pure, bright apple fruit, a lemony verve, and a very delicate mousse backed by gently salty autolysis. The Wine Enthusiast 93 Points | The nonvintage cuvée from this producer, based on the southern slopes of the Montagne de Reims, is beautifully judged. It is rich while also showing great freshness from citrus fruit flavors.

Beginning with this release, they have changed the name of this cuvée to better reflect the method of production, which utilizes their perpetual reserve as a key component in the blend, although it’s the same as it’s always been. Made from 66% Pinot Noir, 32% Chardonnay, and the rest Meunier, the nose is inviting and pure, with gorgeous red fruits that shine brightly in this release, and while it has intensity, it’s approachable and pretty, with notes of almond, peaches, red berries, and fresh bread. The mousse is elegant and integrates nicely into the wine.

The Wine Spectator 92 Points | A baseline of chalky minerality supports juicy pear and white cherry fruit, lemon peel and pickled ginger alongside rich accents of crystallized honey and biscuit in this sleek and creamy Champagne. The Wine Advocate 90 Points | Comprising 44% wine from the 2021 vintage and 56% reserve wines held in perpetual reserve, Philipponnat’s NV Réserve Perpétuelle Brut—formerly known as Brut Royale Réserve—opens with an inviting bouquet of ripe peach, red berries, pear and pastry.
