Winemaker Description
Harvest is done by hand to select the best fruit. Only the most mature berries are chosen, it is followed by a secondary selection to avoid any compromise on quality. Wild yeasts (pied de cuve) that are naturally present on the skins of the berries are used to obtain exceptional wines that really reflect the terroir with complex flavors and texture. After resting with the skins for 30 days, the juice is fermented in Troncais barrels of French oak barrels for 12-15 days with frequent pump overs. The wine then ages 18 months in Slavonian oak barrels and at least an additional 6 months in the bottle.
The end result is a wine with garnet color with red fruit and cassis aromas
with licorice, smoke and caramel notes with silky tannins.

Jeb Dunnuck 96 Points | The 2022 Pinot Noir Les Dijonnais comes from the oldest vines on the property, planted in 1995 with all Dijon clones. Bottled in late January of this year, the wine sports a vibrant ruby hue and shows off notes of wild raspberries, mixed berries, a hint of fresh violets, clove spice, forest herbs, and brambly earth. It’s chiseled in its structure, with coiled tannins and a good deal of youthful tension, and also offers mineral persistence, with wonderful salinity and dark undertones of earth. It demands another few years in cool cellars to soften and expand as it evolves and will drink well over the long haul. Drink 2026-2040. 590 cases were produced.
Winemaker Description
Planted in 1995, the Dijon block is now in its prime, delivering the complexity and elegance one expects from carefully tended twenty-six-year-old vines. The 2021 “DJ,” as it is known in-house, shows characteristic black raspberry and rose hip notes. Consistent with previous vintages, it displays Asian five spice, briar and even hints of blood orange coupled with a refreshing acidity and persistent finish. It is a superior vintage, one of the best of the decade. While the 2021 Les Dijonnais Pinot Noir is delicious right now, it will reward patience after a few years in a cool cellar. Forbes Magazine: This is an exceptionally smooth Cognac. Matured for four years. On the nose, it offers up rich floral aromas of violet, jasmine, roses, white flowers and peonies, along with intense fruity notes of sweet caramel apples, honey and both fresh and dried fruit, especially prune, peach and apricot, along with Sauterne like notes of golden raisin and fig, as well as some passion fruit and a touch of vanilla. There is also an earthy, black tea like quality in the background, and a hint of waxiness.
Recently, Camus, the largest of the family owned Cognac producers, released a new addition to its core range of Cognacs—labeled Intensely Aromatic. The Cognacs were the culmination of a two-decade long effort to craft Cognacs that are notably more aromatic and flavorful than the norm.
Camus’ Cognacs have always had a reputation for being particularly aromatic. To further enhance that character Camus developed a proprietary distillation protocol, which it calls “Intensity,” that measurably increases the concentration of terpenes and esters in their Cognac, producing what the company describes as an “instant of intensity.”
Terpenes are a large and diverse class of organic compounds, produced by a variety of plants. They are closely associated with floral aromas. Esters are chemicals produced by the interaction of alcohols and fatty acids, and are closely associated with fruity aromas.
In crafting Intensely Aromatic, the firm utilized older casks made from lightly toasted, fine grained oak. The age and toasting of the casks minimized the aroma and flavor components that were contributed by the cask wood and further enhanced the prominence of fruit and floral aromas.

Palo Cortado is unusual, in that it first ages under a film of yeast ‘flor’ which protects it from oxygen, but unexpectedly loses its flor and ultimately ages oxidatively. Only 1-2% of all sherries produced ultimately become a Palo Cortado. Thus, the freshness of Manzanilla and Oloroso and the complexity of dry Amontillado are combined. When aged over twenty years it is entitled to the designation VOS (Very Old Sherry). This sherry was once sold to British troops under the name ‘Wellington’, and the 1st Duke of Wellington’s portrait is still used on the label today.
The palate is full rich and rounded. A very light amber color given its advanced age, and a bouquet that demands attention. Delicate and pure on the nose. Penetrating aromas, nutty yet with tangy freshness. Completely dry, but notes of butterscotch and walnuts. A clean, racy style, with almond and hazelnut husk notes backed by toasted corn, walnut and singed sandalwood accents. A touch of dried persimmon echoes on the very dry finish. One of the great dry sherries. 17.5% ABV.

The arid region of San Dionisio Ocotopec, where this mezcal is made, is known for producing agave with high sugar content, which can come through in the flavor and complexity of the mezcal.
The limestone-rich soil of this region can be harsh on the maguey Tobala, which take 12-15 years to reach maturity in this area. Due to the long maturation times, only small batches of 150-200 bottles of Tobala can be made at once.

Deep garnet-purple in color with well-expressed notes of black cherries, fresh blackberries, and black raspberries with suggestions of dried Mediterranean herbs, dark chocolate, eucalyptus, and cracked black pepper. A blend of 81% Cabernet Sauvignon, 15% Merlot, and 4% Petit Verdot, it is a superb access point to the Ridge house style at a more approachable price.
