Winemaker Description

This single-vineyard wine is produced solely from Cabernet Sauvignon grapes harvested from Allone Habashan Vineyard, which is located in the central Golan Heights at an elevation of 600 meters (2,000 feet). The vineyard’s basalt soils have high clay content (~40%), resulting in high water-holding capacity. The wine aged for 18 months in French oak barrels.

Vermouth is a spirit that many drinkers have at home, but some aren't quite sure how to use.

The Dalton Vermouth has a bright amber color.

This is a fortified wine, that is very complex and can be used as a standalone beverage served with an ice cube or as a cocktail ingredient.

Kosher for Passover.

The wonderful aromas of the Sauvignon Blanc grapes are thanks to the fertile slopes of Zichron Ya'akov. Upon tasting this wine, one experiences a rich, delicate sensation, herbaceous fragrances and fruity flavors.

Winemaker Description

Israel. The Yarden Merlot Allone Habashan 2016 is the first release from this vineyard. The wine presents a fragrant blend of aromas featuring ripe red and black fruits, flowers, spice, tobacco, orange zest and chocolate.

This attractive single-vineyard wine is full-bodied, flavorful and complex. The wine aged for 18 months in small French oak barrels, of which 70% were new. While ready to enjoy upon release the wine will improve in the bottle over the coming years, and should stay in excellent drinking condition for a decade or more from harvest.

Winemaker Description 

Israel. Jordan Katzrin Chardonnay presents aromatic characteristics of ripe lemons, pears and tropical fruits, alongside hints of minerality, toasted baguette and French oak. This is a full-bodied Chardonnay wine, rich in flavors, elegant and pleasant to drink.

The wine will be a great accompaniment to halibut fish with lemon and garlic butter, whole festive smoked duck, or wild mushroom risotto.

Jordan Katzrin Chardonnay is produced exclusively from our best Chardonnay plots in the north of the Golan Heights, certified to a sustainable standard.

Israel. Matatia is an extraordinary gift, honoring the man whose vision is the inspiration for Dalton Winery. Produced during outstanding years and in limited quantities, Matatia is about supreme quality and selectiveness. This wine embodies an eminence which is as rare and exceptional as the man himself. Matatia is a project that is always several years in the making and is named after Mat Haruni, without whom there would be no Dalton Winery.

Pair with turkey, hamburgers, pizza, or even dark chocolate.

Matatia is dark purple in colour, rich with fragrant notes of forest fruit, blueberries and raspberries, spiced with earthy hints of tobacco and licorice. The wine is full-bodied, well-structured complex and elegant with very good aging potential.

All Dalton wines are strictly Kosher Le Mehadrin and Kosher for Passover. They are under the supervision of the Merom Galil Rabbinate, Rabbi Yoseph Mishalil; Beit Din Yoreh Deya, Rabbi Shlomo Machpud; Rabbi Mordechai Ungar of Monsey New York and the Orthodox Union (OU).

The vineyards for the wine were preselected and attended special care throughout the years. Yields were dramatically reduced in order to increase the flavour concentration in the remaining grapes. Harvest was in late September and early October. The grapes for this wine came from separate vineyards that were picked and fermented separately. During fermentation, the grape cap was pumped over several times a day to increase the depth of colour and levels of extraction of the wine in the gentlest way possible.

Before completing fermentation, the wine was pressed out, and the free run wine was separated and used to make this wine. Malolactic fermentation was then encouraged and when completed the wine was racked into a mix of new and old French oak barrels for 24 months. Once the aging was complete each individual barrel was tasted for quality and only the wines of the very highest quality made it to the final blend. The wine was further aged for a year in the bottle before release.

Winemaker Description

The estate is situated in Ramat Raziel, west of Jerusalem. It is produced in the "Methode Traditionelle". Brut Nature - Zero Dosage. 

Bottled by Domaine Du Castel. It is a dry wine.

Winemaker Description

Fruity aromas lead to a palate of wild strawberry, green apple, lemon zest, flowers and toasted baguette. This Rosé is delicate, crisp and refreshing. 

While delicious upon release, Yarden Brut Rose should age well for ten years or more from vintage. This versatile wine pairs well with subtle dishes such as yellowtail tartare, savory dishes such as gravlax, or sweet desserts such as chocolate-covered raspberries.
