The Edom M Series is Psagot’s flagship red blend: a Merlot-led Bordeaux-style assemblage of Merlot, Cabernet Sauvignon, Petit Verdot, and Malbec crafted to express the full depth and complexity of this ancient terroir. Named for the Hebrew word for “red,” Edom is the apex of Psagot’s portfolio — a wine of real ambition and presence that reflects the Judean Hills’ unique continental climate, limestone soils, and centuries of winemaking heritage. The nose is deep and inviting: inky garnet in the glass with aromas of raspberry, juniper berry, blackberry, pomegranate, and green bell pepper, with layers of black pepper, oregano, and thyme. On the palate, the wine is rich and structured with a nice combination of bright fruit and mouth-pleasing tannins, flavors of blackberry and pomegranate, and a bright yet velvety finish with excellent length.
