Cidrerie du Vulcain's Poire (Perry) Comment is a perry made from late-season perry pear varieties (end of October-December) such as Plant de Blanc, Fausset and Cloche, Gaubert, Courcou, and Rouge Vigné.
Pear cider from Domfrontais, Normandy made from late season varieties. 2 years aging in bottle and then disgorged. A little residual sugar.
The pure perry juice is fermented on its own wild yeasts and coarsely filtered on white clay. Ancestral method without disgorging: partial fermentation in stainless steel and resin vats, then aging in bottle. No added sulfites.

Winemaker Description
In clay-chalk soil, the vine is grown biodynamically in order for the terroir to fully express itself. The nose is particularly complex and fruity. Whilst the absence of sulphur during vinification is evident, it remains precise. On the palate, fruits and spices are the notes that dominate. Its supple mouthfeel is supported by unctuous tannins. A wine that pairs well with either white or red meat.
The domain might still carry the name of his parents, but Stéphane Tissot (and his wife Bénédicte) took over the family business over 20 years ago. In 1995, Stéphane began to reduce the amount of fertiliser so as to pave the way for organic viticulture. Around this time he also stopped using chemical herbicides altogether. In 1999, the then 28 hectares (now 46 hectares) became entirely organic and, after a few years, the whole domain became biodynamic in 2004 (Demeter certification). Stéphane's hard work has transformed the quality of the grapes. With such good quality fruit, vinifications are relatively easy and require very little intervention. Natural yeasts are used in fermentation and a very small amount of sulphites are added, nothing else. The end result is an excellent expression of terroir with intense aromas. Stéphane's quest to convey his many different terroirs has led him to produce nearly 50 different cuvées from many different grape varieties using various vinification methods. For example, for the Savagnin, a variety typical of the Jura, the property produces wines with and without oxidation (i.e. topping up of the barrels) and vin jaune. This domain is at its zenith and is one of the Jura's (and iDealwine's) best kept secrets.

Château Sainte Roseline, Lampe de Méduse, with its unique shape, is the iconic and historic cuvée of the estate. Since 1950, it has been the heart of the production of this famous Cru Classé vineyard.
Famous as a historic site but also for its premium Rosés, Château Sainte Roseline is a Provence icon.
Its pale color is slightly salmony. The complex and intense nose reveals fine notes of peaches and mangos. The beautiful liveliness and persistence of the aromatic notes at the end of the palate make this a very crunchy wine. A minty finish sublimates its beautiful freshness.

Billy Norris of Vinous writes | The 2023 Rosé Lampe de Meduse is dark and alluring on the nose, displaying watermelon, red berry fruit and orange peel aromas. Rounded and honeyed on the palate, there's just enough acidity to propel this past the finish line. Rosemary and thyme hints hang around after the close, kicking this wine more into the savory spectrum than I expected. This is interesting and characterful. Drinking 2024 - 2025.
Jancis Robinson writes 16 Points | Drier and more substantial than their Prestige 2023 bottling. Lots of fruit with a (just) sufficiently dry finish. Some intrigue.

Much like the Lavières, there is a positively gorgeous, even silky, texture to the lighter-bodied flavors thanks to the ultra-fine tannins shaping the overtly stony, dusty and youthfully austere finale. This is textbook Ile de Vergelesses.

Wine Advocate 100 Points | One of the wines of the vintage is the 2020 La Conseillante, a blend of 86% Merlot and 14% Cabernet Franc that wafts from the glass with inviting aromas of raspberries, red cherries and mulberries mingled with exotic spices, violets and rose petals. Medium to full-bodied, satiny and vibrant, it's a beautifully elegant, sensual wine with a deep core of fruit framed by powdery tannins, concluding with a long, extravagantly floral finish. This is a Pomerol of striking purity and sophistication. Congratulations to Marielle Cazaux and her team for surpassing even what they achieved in 2016 and 2019 with this brilliant 2020!
Jeb Dunnuck 99 Points | Another utterly brilliant wine from this team, the 2020 Château La Conseillante is based on 87% Merlot and 13% Cabernet Franc that saw 70% new French oak. Unquestionably in the same league as the 2019, this beauty offers an incredible bouquet of pure blue fruits, cassis, violets, spring flowers, and truffle. This carries to a full-bodied, seamless, incredibly elegant, layered Pomerol offering perfect tannins, the vibrant, focused, structured style of the vintage, impeccable balance, and a gorgeous finish. As always, this wine is more about purity, finesse, and elegance than power. It offers pleasure even today yet should be given a decade in the cellar, and it will be a 40- to 50-year wine.

The combination gives a wine with obvious power and concentration wrapped in fruit that is perfumed, ripe and shot through with terrific acidity. In the end, those tannins will give the essential structure for long-term aging.

Elegant translucent pale-peach pink color with shiny reflections. Very fresh and very fruity, the nose is particularly seductive, combining notes of red fruit and juicy summer fruit such as nectarines and peaches. Great vivacity on the palate with beautiful fruity aromas. Well balanced by a slight bitterness on the finish which brings a lot of savoriness. La Vieille Ferme Rose is a blend of Cinsault, Grenache and Syrah grapes.

Vinous 92 Points | The 2020 Gevrey-Chambertin Lavaux Saint-Jacques 1er Cru has a mineral-driven bouquet with dark berry fruit, sous-bois and just a touch of dessicated orange peel. The palate is medium-bodied with supple tannins and fine acidity. Is it the most complex Lavaux? This ‘Sea and Mountains’ wine (Catalan) is a combination of equal parts Syrah and Grenache (45% each) with a touch of Grenache added for good measure. Juice is semi-carbonically vinified in cement, which keeps the wine fresh, light on its feet, and easy to drink.
Notes of red fruit, wet rocks, and garrigue dominate the wine’s seriously satisfying palate. For a delicious taste of the Roussillon, look no further than this bottle.

95-97 Points Wine Enthusiast | Barrel Sample. This is a very aromatic, precise wine. Ripe fruits and density are balanced by the wine's freshness and acidity. It has structure that brings out creamy tannins to balance the succulent black fruit flavors.
96 Points Vinous | The 2021 Haut-Bailly is incredibly poised, even if it is clearly a wine of reserve in this vintage. Its vertical build speaks of pure sophistication. Time in the glass brings out hints of dried herbs, menthol, licorice, pine, blackberry and underbrush. Most of the blend is Cabernet, so the flavor profile and overall structural feel is quite savory. I can't wait to see how the 2021 ages. It may very well surprise down the road. (

The fruit just keeps coming back behind. A stunning result from a lesser known 1er Cru. Drink from 2028-2036. (2021).

Points Decanter | Quince and pear. Rich and ripe but not overly so, it's silky on the palate, fairly high in alcohol, enjoyably full and opulent, with a fresh core. Includes a new parcel this year of 70-year-old Marsanne, so is now around 90% Marsanne, 10% Roussanne. The rest is a mix of 60-year-old and seven-year-old vines. Vinified in oak.

Jeb Dunnuck | The 2020 Cornas Chaillot comes from a mix of lieux-dits (it's mostly Chaillot) as well as some younger vines. It's an incredible wine in its own right and certainly doesn't give much in terms quality to its big brother. Awesome aromatics of crème de cassis, violets, crushed stone, and bouquet garni-like notes all define the aromatics, and it hits the palate with full-bodied richness, a deep, concentrated mid-palate, and ultra-fine tannins. It's a touch more finesse-driven and elegant compared to the Reynard and should round into form with just 5-7 years of bottle age. This is legit awesome Cornas that will have 20-25 years of ultimate longevity. (2020).

Jeb Dunnuck | The 2020 Cornas Reynard will most likely merit a perfect rating in a decade, and it's a legendary Cornas in the making. Saturated purple-hued, with incredible aromatics of cassis, liquid violets, new leather, and bloody, iron, meaty nuances, it hits the palate with full-bodied richness, building tannins, and flawless overall balance. It has an inward, massive, backward style (it reminds me slightly of the 2010) and tastes like the blood of Cornas. It will need 7-8 years (a decade will be better) to hit the early stages of its prime drinking wine and will absolutely blow you away over the following two decades. (2020).

Grown without pesticides, this silky-smooth pinot noir reveals a bouquet of dark wild berries, cassis, rose petals, blood orange, exotic spices and liquorice.

Tollot-Beaut’s Les Vercots 1er Cru is rustic and robust with aromas and flavors of red cherries, spice, and earth with substantial weight and ripe tannins. It is aged for 18 months in 50% new Burgundian pièce.
Red Burgundy might be the world’s most flexible food wine. The wine’s high acidity, medium body, medium alcohol, and minimal tannins make it very food-friendly. Red Burgundy, with its earthy and sometimes gamey character, is a classic partner to roasted game birds, grilled duck breast, and dishes that feature mushrooms, black truffles, or are rich in umami. Jasper Morris | 11 barrels for one hectare equates to about 25 hl/ha. Because Vercots has a heavy soil they put some extra fine pinot clones in this vineyard, which has paid off in the quality of the fruit. Slightly paler in colour but with some finesse. A savoury sandalwood touch to the oak this time, but the vineyard tannins are not fierce. Made with an agreeably light touch. Drink from 2025-2030.

Cathiard is a tiny domain - there never is very much wine. You enter a spick and span white stucco suburban home in the center of the small village of Vosne Romanee. There is a walled vineyard outside the front door. Go down the staircase and you are in a minuscule cuverie and barrel room.
Sebastien Cathiard has been slowly assuming control of this top estate in Vosne-Romanée from his father Sylvain. He is now fully in charge, but the wines have been so good for so long that he wisely has changed very little. They continue to farm meticulously, de-stem and rigorously sort all the fruit prior to fermentation. The only thing he has changed is the gradual reduction of new oak, seeking a bit more purity of terroir expression.

"An ultra-fresh and very bright nose freely offers up its array of red berries, plum and even more floral wisps. There is again a lovely textured to the beautifully delineated and stony middleweight flavors that conclude in a youthfully austere, linear and chiseled finale. This is also really quite good and worth considering."
