Caze-Thibaut Naturellement Blanc de Noirs Extra Brut Base 2022 750ml
Importer Talking Points
Fabien Caze has hit his stride with an exciting range of wines that begins with his flagship “Naturellement.” Made entirely of Meunier from the 2022 vintage, grown in six parcels in the villages of Châtillon-sur-Marne and Vandières on the western edge of the Vallee de la Marne.
Naturally farmed, juice is pressed slowly and gently, then moved by gravity into steel tank. Each parcel is raised separately in a combination of 228, 350, and 330L barrels for a long, cold, and slow native yeast fermentation. Full malo. Aged 24 months sur lattes, Fabien Caze's "Naturellement" is vinous, pure, and precise." -I
The Cazé family have been growing grapes on the western side of the Vallée de la Marne for ten generations. Maison Cazé was created in 1953 when Roger Cazé became the first in his family to estate bottle. Since the 2013 vintage, Fabien Cazé has farmed 2.66 hectares of his family’s vines, which he selected for his own small and ambitious project. These vineyards are made up of a diverse and complex array of six different parcels in the villages of Châtillon-sur-Marne and Vandières on the right bank of the Marne River. He proudly continues the family tradition of meticulous farming and producing precise and elegant wines that transmit the character of these long-nurtured terroirs.
Through the seasons, Fabien passionately follows development in the vineyard. He “scratches” or hoes the soils preferring to minimally disrupt the soil structure and plant life. In the spirit of supporting life in and around the vineyards, no herbicides or pesticides are used, and the winery has been certified organic as of the 2018 vintage. Pruning and de-leafing are rigorous endeavors, done manually, and speak to the hand crafted nature of Fabien’s commitment.
Cedric Bouchard Champagne Roses de Jeanne Val Vilaine Blanc de Noirs VVR21 750ml
Crafted entirely from Pinot Noir grown in the chalky soils of the Val Vilaine parcel, this cuvée represents the precise, minimalist vision of Cédric Bouchard—one of Champagne’s most celebrated grower-producers.

On the nose, it reveals delicate aromas of red berries, crushed stone, and white flowers. The palate is focused and vibrant, with layers of wild strawberry, blood orange, and chalky minerality, all carried by a fine, persistent mousse. Bone-dry yet generous in expression, this Blanc de Noirs finishes with striking clarity and length.
An elegant, terroir-driven Champagne that rewards both immediate enjoyment and cellaring.

93 Points The Somm Journal | When it comes to finesse, this classic—roughly equal parts Pinot Noir and Pinot Meunier with a slightly smaller amount of Chardonnay—doesn’t miss: It’s comme il faut from the unending bead onward. Palmer Champagne Grands Terroirs Millesime 2015 750ml
Winemaker Description
Champagne Palmer & Co concentrates its vineyard holdings in the Montagne de Reims: in the grand cru villages of Mailly and Verzenay and the premier cru villages of Trépail and Villers-Marmery. While they also have holdings in the Marne Valley, the Côte de Sézanne and the Côte des Bar, their prestige cuvée Grands Terroirs, channels those north- and north-east-facing slopes with power and precision.
The 2015 vintage is blended from 50% Pinot Noir, 38% Chardonnay and 12% Pinot Meunier, sourced from Mailly and Verzenay as well as Trépail, Villers-Marmery, Ludes, Chigny-les-Roses and Rilly-la-Montagne. Palmer & Co refers to the vintage as “exceptional” because it combined high temperatures and little rainfall – spelling little disease pressure and even ripening. Sunny days and cool nights in August, they say, allowed for “perfect” ripening.
The nose, subtle and charming, opens with notes of orange blossom and acacia, mixed with notes of yellow fruits, then it evolves towards lovely and delicately spiced aromas of fried pineapple and tonka bean. The palate is characterized by freshness, with citrus fruits sublimating the notes of brioche and dried fruits. Its creamy texture stretches deliciously into a persistent finish.
Expert Reviews
92 Points Wine & Spirits | Markedly youthful in its smoky reduction, this wine sees its sulfur blow off quickly, leaving a flinty scent and an impression of clarity. It’s bright with pretty scents of black tea and herbs, firmed up by strong acidity.
92 Points James Suckling | A chalky and mineral Champagne with aromas of blanched almonds, chalk, seashells, biscuits, lemon pith and dried apples. Creamy mousse. Dry and bright, with a rounded finish. Drink now or hold.

James Suckling writes: Very dry and flavorful with dried strawberries, flowers, and dried roses. Medium-bodied with a dryness and complexity. It’s tight and focused with phenolic tension and intricacy. Tight and very long. Minerally. Chalky. Exciting. Drink now. - James Suckling 96
Alison Napjus writes: Dry and satiny on the palate, this offers up-front notes of white raspberry, delicate herbs, fleur de sel and orange peel that are more subtle through to the finish. Pinot Noir, Chardonnay and Pinot Meunier. Drink now. - Wine Spectator 90
Pares Balta Brut Nature Cava Organic NV 750ml
New York Times
"This might have been a classic cava, if all cavas were farmed organically and made with as much care. Instead, it stands out. Parés Baltà uses only the traditional grapes, xarello, parellada and macabeu, with the emphasis on xarello. It’s fresh, lively and dry. Other good Spanish sparklers to seek out include Gramona, AT Roca, Recaredo and Raveentos Blanc" - Eric Asimov’s New York Times Article Dec. 21, 2023.
