Just 100% Chardonnay from Santa Barbara County, fermented and aged six months in stainless steel, stripped of everything that typically softens, butters, or blurs the grape. What remains is electric — a wine that tastes like the soil and the sea. The name itself is a clue: diatomaceous earth, the plankton fossil-rich geology beneath Santa Barbara's vineyards, is the terroir this wine is designed to express. The Wine

Each label in the series features artwork inspired by iconic New York City neighborhoods and landmarks. The Gran Reserva Guarda Superior is Oscar's prestige Cava selection: a 2018 vintage Brut Nature crafted from the three classic white varieties of El Penèdes — Xarel·lo, Macabeo, and Parellada — fermented separately and aged a minimum of 48 months sur lattes in the traditional Champenoise method. Guarda Superior is Cava's highest quality tier, reserved for wines aged at least 18 months — this wine more than doubles that requirement, delivering a level of complexity and autolytic depth that rivals wines at several times the price.
