It’s a blend of 40% Chardonnay, 30% Pinot Noir and 30% Meunier, with about 40% of reserve wine, and red wine accounts for 7% of the blend. Its delicate, subtly expansive flavours of raspberry and strawberry are enlivened by a tangerine-like acidity, and while it feels ripe and full in flavour on the palate, it never loses its sense of refinement and poise, finishing with detailed length and depth.

The mousse is elegant and integrates nicely into the wine.

In the vines, chemicals are never used and biodiversity is prioritized. Because of the Marne's extremely diverse terroirs, Benoit adapts his viticultural approach parcel by parcel, using the soil, grape and micro-climate to guide him.
While only contact treatments have been used for the past two generations, Benoît and Mélanie have decided to work towards organic certification.
"Our father fought for grass in the vines and to stop have garbage from cities being thrown in the vines as a fertilizer. It took five years. That was his fight. Organics seems like the challenge of our generation."
32% Pinot Noir/32% Chardonnay/32% Pinot Meunier/4% Petit Meslier + Arbanne + Pinot Blanc. This cuvée is the majority of Tarlant's production and "is my daily obsession", says Benoît Tarlant. Zero reflects the Tarlant emphasis on unadorned terroir, with no selected yeasts and no dosage.
The compostion is generally 60% of the base vintage--in this case 2017--plus 40% reserve wines. The organically farmed, hand-harvested fruit comes potentially from all 63 of Tarlant's parcels from across 4 villages (Oeuilly, Boursault, St-Agnan and Celles-lès-Condé), with each vinified separately to give maximum flexibility in dialing in the blend.
The fruit is gently pressed and the juice fermented with natural yeasts in Burgundy barrels ranging from new to 30 years old. The wine generally does not go through malolactic fermentation. Moved by gravity only, the new vintage is blended with barrel-aged reserve wines.
The 2017-base was bottled in 2018 and disgorged in 2023 with zero dosage, as the name of the wine emphasizes.

Oudiette Filles ‘Les Sablonnières’ Blanc de Noirs Extra Brut Champagne NV (2019) 750ml
Winemaker Description
Les Sablonnières comes from a tiny plot (23.64 ares) near the village of Beaunay in the Coteaux du Petit Morin. The parcel has a south-southwestern exposure at 200m planted to pinot noir and pinot noir droit (a small-berried clone prized for its structure) on sandy-clay topsoils, over a chalky subsoil. 2019 was the first time this vineyard was fermented alone and the results are stunning. Les Sablonnières is particularly suited to producing fine pinot noir that is both well-structured and immediately inviting, with a beautiful nose and effortless grace.
Handed harvested fruit is taken to a state-of-the-art press house located just five minutes from her vineyards in the village of Vert-Toulon, where they were pressed in a Coquard press with an inclined plate (the latest generation of Coquard). Only the heart, or the coeur de cuvée, of the first pressing is utilized. 90% of primary fermentation occurs in used (5-7 years old) 228L Burgundy oak barrels, and 10% in new barrels, without fining, filtration, or cold stabilization. Malolactic fermentation is natural and spontaneous in the barrel. Wines are naturally stabilized and aged for ten months in the same oak barrels with bâtonnage three times. Aged 36 months in bottle before disgorgement and a dosage of 3g/L from concentrated grape must from her vineyards.

Vinous 90 Points | The NV Brut Blanc des Noirs Rive Droite (base 2020) is laced with sweet red plum, kirsch, ginger, spice and dried flowers. Medium in body yet quite persistent, the Blanc de Noirs has a ton to offer. It's rich but not at all heavy, and certainly well balanced. Pretty floral accents lift the finish. The Rive Droite is a bit reticent but very nicely done.

Comprising 80% Pinot Meunier and 20% Pinot Noir—whose ripe skins impart a delicate pink hue—it unveils an expressive bouquet of candied orange peel, pear, peach, plum and pastry. On the palate, it is medium- to full-bodied, rich and multidimensional, with a concentrated core of fruit, succulent yet racy acidity and phenolics that lend a gently bitter edge to the long, resonant finish. While the residual sugar lends it a touch more giving style, it represents a considerable step up in complexity from L'Esquisse and comes highly recommended.

Cédric Moussé turns out some of the Marne Valley's most refined, charming Meunier wines from the south-facing slopes of Cuisles on the north bank of the Marne river.

William Kelley of the Wine Advocate writes 96 Points | Bollinger's 2015 Brut La Grande Année Rosé was disgorged in May last year with seven grams per liter dosage. Offering up deep aromas of orchard fruits, blood orange, mandarin rind and peach mingled with nuances of coffee, praline and fino sherry, it's medium to full-bodied, pillowy and layered, with a broad attack that segues into a vinous palate framed by high levels of structuring dry extract that makes its presence felt on the sapid, nutty and penetrating finish. Given the skin maturity and inherent structure of the year, the Bollinger team elected to include only 4.5% of still red wine in the blend, a comparatively low percentage.

Vinous 94 Points | The 2015 Brut Grand Année Rosé is quite open in its aromatics but much more reticent on the palate. It's a Champagne that is going to need some time to be at its finest. Chalk, white pepper, grapefruit, blood orange and mint lend notable presence in the bouquet. Today, the 2015 comes across as a touch ethereal and also quite different in overall feel than the Blanc. Dosage is 7 grams per liter. Disgorged: July 2023.

Generous and expressive, the latest rendition of Vilmart's NV Brut Premier Cru Cuvée Rubis is showing very well, bursting with aromas of red berries, plums, blood orange and dried flowers. Medium to full-bodied, fleshy and enveloping, with a sapid core of fruit, a pillowy mousse and a lively, delicately phenolic finish, it's already drinking well. This is based on the 2017 vintage, with reserve wines from the 2016 and 2015 vintages, and it was disgorged with nine grams per liter dosage.
- The Wine Spectator 93 Points | Fine and harmonious, this is lightly chalky and refined in texture, showing pinpoint integration of its well-spiced range of pureed raspberry, blood orange granita, lime peel, biscuit and mineral notes and its spine of chiseled acidity. The delicious and super-yeasty flavors possess fine depth on the clean and relatively dry finish, indeed this is notably drier than what is typical for the genre. Lovely and this is a wine that could be enjoyed now or held for a few years first.

With two-thirds of reserve wines dating back to 2012 and the remaining 33% from the 2019 vintage, it soars from the glass with scents of jasmine, grapefruit, nectarine and plums. On the palate, it's medium-bodied with a compact and taut profile, elegant mousse, incisive acidity and a long, penetrating finish. Vinified in used oak barrels (one-third) and enameled steel. It’s the most chiseled of the three non-vintage blends.
