An exceptionally refined expression of Chardonnay, Billecart-Salmon Le Blanc de Blancs is crafted entirely from Grand Cru vineyards in the Côte des Blancs, one of Champagne’s most celebrated terroirs for Chardonnay.
The cuvée brings together fruit from the prestigious villages of Avize, Chouilly, Cramant and Le Mesnil-sur-Oger, producing a Champagne of remarkable purity, precision and mineral intensity. Billecart-Salmon blends wines from two different years, allowing the House to capture both freshness and complexity while maintaining its signature elegant style.
Made from 100% Chardonnay, the wine is vinified in stainless-steel tanks to preserve its delicate fruit and mineral character. Between 20% and 50% reserve wines are incorporated into the blend, adding depth and complexity, while extended aging of approximately 4 to 5 years on the lees creates its refined texture and beautifully integrated mousse.
In the glass, Le Blanc de Blancs displays a luminous golden color with subtle green reflections and an exceptionally fine stream of bubbles. The mousse is delicate yet generous, giving the Champagne an elegant and polished appearance.
The bouquet is precise and mineral-driven, revealing aromas of white flowers, fresh butter and brioche, followed by bright citrus and subtle chalky notes. With time in the glass, the wine develops additional layers while retaining a remarkable sense of finesse and freshness.
On the palate, it is beautifully creamy yet vibrant. Flavors of fresh almond, lemon zest and citrus are carried by a distinctly chalky texture, reflecting the limestone-rich soils of the Côte des Blancs. A delicate meringue-like richness adds softness and depth, while the Champagne’s natural acidity keeps the palate fresh, energetic and beautifully balanced.
The finish is long, smooth and mineral, with a subtle saline note that adds precision and makes the wine particularly compelling at the table. Billecart-Salmon describes the cuvée as combining impressive vinosity with an unexpectedly fresh finish — a style that appeals especially to lovers of elegant, mineral-driven Champagne.
Winemaker Notes
The fine mousse of delicate bubbles elegantly accompanies the glints of its gold color. A cuvée that will surprise you with its pure intensity of dry fruits aromas, almonds and fresh hazelnuts mixed with those of fruits of white flesh. The creamy sensation of the bubble associated to aromas of buttered brioche and mineral aromas. Persistent finish with a fresh and elegant sweetness.
