Winemaking & Aging

The grapes are harvested from the steep vineyard terraces of Portugal’s Douro region at full ripeness. During Port production, fermentation is interrupted by the addition of grape spirit, preserving natural grape sweetness while creating the richness and structure characteristic of the style.

Vintage Port is intended to complete most of its maturation in bottle. With time, its youthful power gradually softens, the deep color begins to evolve and its components become increasingly integrated and complex.

The 2000 Maynard’s has now benefited from substantial bottle age, offering the opportunity to experience a Vintage Port with mature development while retaining the depth and structure for which the style is known.

Tasting Notes

Maynard’s describes the 2000 Vintage Port as having superb color, a full body and a particularly fine aroma and flavor. A distinctive mint character adds freshness and aromatic lift.

With bottle age, the wine gradually softens and develops greater structural and aromatic complexity. The result is a mature, harmonious Port combining richness with elegance and a long, lingering finish.

Serving & Decanting

Serve at approximately 16°C / 61°F.

Mature Vintage Port naturally forms sediment, or “crust,” during bottle aging. Stand the bottle upright for approximately 24 hours before opening so the sediment can settle, then decant carefully before serving.

A generous Port or red-wine glass is recommended to allow the wine’s mature aromas to open and develop.

Food Pairing

Vintage Port is traditionally enjoyed after dinner and is an outstanding partner for Stilton, Gorgonzola and other blue cheeses.

It can also accompany dark chocolate, walnuts, dried fruit and rich desserts. For a savory pairing, Vintage Port can be served alongside richly flavored dishes such as steak au poivre.

Cellaring

Store the bottle horizontally in a cool, dark location with a stable temperature and minimal vibration. Because Vintage Port develops sediment naturally during aging, careful handling and decanting are recommended when the bottle is eventually opened.

Benoît Déhu’s Cuvée Initiation Rosé Extra Brut is an expressive grower Champagne from Fossoy, on the western edge of the Vallée de la Marne in Champagne, France. Déhu is an eighth-generation vigneron whose family estate dates to 1787. After working at Champagne Bollinger, Benoît returned to his family domaine and developed his own highly personal range of naturally farmed, terroir-driven Champagnes.

The 2022 Initiation Rosé is composed of 78% Meunier and 22% Pinot Noir, with 7% still red wine blended into the cuvée to create its delicate rosé character. Meunier plays a central role in Déhu’s work, particularly from his celebrated La Rue des Noyers vineyard, while Pinot Noir brings additional structure, depth and red-fruit character.

Déhu farms with a strong commitment to biodynamic and natural viticulture, including work according to the lunar calendar and the use of traditional vineyard practices. Benoît Déhu Champagne Cuvée Initiation Rosé Extra Brut (Base 2022) 750ml

Benoît Déhu’s Cuvée Initiation Brut Nature is a distinctive grower Champagne from Fossoy, on the western edge of the Vallée de la Marne in Champagne, France. Déhu is an eighth-generation vigneron whose family Champagne house dates to 1787. After working at Champagne Bollinger, he returned to the family estate and began pursuing a highly personal approach centered on biodynamic farming, parcel expression, low-intervention winemaking and the potential of Meunier.

Initiation is a blend of Meunier and Pinot Noir. The Meunier comes from Déhu’s celebrated La Rue des Noyers parcel, while the Pinot Noir is sourced from a small parcel lower on the hillside with predominantly clay and sand soils. Déhu planted the Pinot Noir using massale selections derived from a Pommard clone from Burgundy, bringing an intriguing Burgundian influence to this deeply Champenois wine.

La Rue des Noyers forms the heart of Déhu’s independent project: a 1.7-hectare parcel farmed biodynamically, with a portion traditionally worked by horse. Déhu is particularly known for fermenting and aging his wines in oak, including barrels made from trees harvested in the nearby forest of Fossoy. His Champagnes favor tension, energy and minerality rather than overt richness.

For the 2021 base, malolactic fermentation was blocked and the wine was bottled with no dosage, giving the Champagne its taut, dry and mineral-driven personality. The finished wine combines crushed-stone minerality with floral, herbal and red-fruited nuances, showing impressive energy and precision. The wine was disgorged on April 26, 2024.

Champagne Geoffroy's 2017 Volupté Millésime is a refined and deeply expressive Blanc de Blancs from two chalk-rich lieux-dits in Cumières Premier Cru — Tourne Midi and Les Chênes — parcels prized for the mineral precision and white-fruit character they bring to Chardonnay. Fermented in equal parts oak and enamel-lined steel, aged without malolactic fermentation and disgorged in November 2024, it is a silky, chiseled Champagne with a long, chalky and beautifully defined finish.

The Place

Cumières is a historic Premier Cru village in Champagne's Vallée de la Marne, situated west of Hautvillers and overlooking the Marne River. Although the village is more commonly associated with Pinot Noir and Meunier, its chalk-rich lieux-dits of Tourne Midi and Les Chênes are especially well suited to Chardonnay, producing wines with mineral precision, white-fruit clarity and the freshness to support extended lees aging.

The Grape: 100% Chardonnay

Chardonnay is Champagne's most mineral-expressive variety and the sole grape in Volupté. In the chalk-influenced soils of Tourne Midi and Les Chênes, it develops white peach, ripe lemon and green apple character alongside a pronounced chalky minerality and the hazelnut complexity that emerges with extended lees contact.

Winemaking

The grapes are harvested by hand at optimum ripeness and carefully sorted. Vinification is conducted in an equal combination of oak barrels and enamel-lined stainless-steel tanks — oak contributing texture and breadth, steel preserving freshness and aromatic precision. Malolactic fermentation is avoided, retaining the vintage's natural acidity and mineral tension.

After assemblage, the wine undergoes secondary fermentation in bottle and spends approximately 90 months aging on its lees — gaining exceptional texture, aromatic complexity and finely integrated bubbles. It is disgorged in November 2024 with a dosage of just 2 g/L, keeping the finish dry, focused and distinctly mineral.

Tasting Notes

The 2017 Volupté displays a bright straw-gold color with an elegant, persistent stream of fine bubbles. The bouquet opens with white peach, ripe lemon, green apple and smoky wet stone, joined by raw hazelnut, subtle mocha and a delicate reductive tension that lifts and focuses the nose.

The palate is medium-bodied and silky, with a creamy mousse, polished texture and bright, persistent acidity. Candied citrus, white fruit and toasted nuts lead into a long, chalky and beautifully defined finish. Spicy and overt, with lanolin and exquisite green apple and lemon interplay, the wine shows chewy acidity and polished phenolics that give it both energy and elegance.

The Producer

The Geoffroy family has cultivated vineyards in Cumières since the 17th century. A singular expression of old-vine Meunier from the northern Montagne de Reims, Pierre Paillard's Taissy 2020 is a vintage Blanc de Noirs Champagne produced from a single Premier Cru vineyard. Combining generous fruit with chalky precision, it reveals the depth, elegance and naturally saline character Meunier can achieve when grown in an exceptional terroir.

The wine comes from the lieu-dit Les Dessus de Monthouzons in the Premier Cru village of Taissy. The Meunier vines were planted in 1963 on the lower, north-facing slopes of the Montagne de Reims. Here, a thin layer of clay lies directly over Champagne's chalk bedrock, giving the wine both richness and a firm mineral structure.

Produced entirely from Meunier, Taissy 2020 was vinified and aged in oak barrels. It was bottled under natural cork for the second fermentation and matured for approximately four and a half years on the lees before disgorgement. A very low Extra Brut dosage preserves the wine's clarity, freshness and distinctively saline finish.

Les Terres Froides — "the cold lands" — is a precise and mineral-driven Blanc de Blancs from a distinctive single vineyard in the village of Tauxières-Mutry, within the Montagne de Reims. Fabrice Pouillon farms approximately half a hectare in the lieu-dit Les Fourches, southwest of Tauxières-Mutry and close to Tours-sur-Marne. The vines were between 25 and 45 years old at harvest, rooted in Cretaceous chalk, marl, and loam — the geological foundation of Grand Cru Cramant Chardonnay. Vignier’s single-vineyard expression of the Côte de Sézanne — a 100% Chardonnay Blanc de Blancs from one exceptional parcel in Vindey, a village whose name is believed to derive from the Latin vinum dei: “wine of God.” The vineyard is planted on a rare combination of silex and alluvial soils over deep Cretaceous chalk — the flint-rich surface absorbs warmth during the day, driving full Chardonnay maturity, while the underlying chalk preserves freshness, tension, and mineral precision. 2015 was the inaugural vintage of this cuvée. G.D. Vajra Barolo Coste di Rose — Piedmont 2022

G.D. Vajra is one of Barolo’s most beloved family estates — a domaine defined by roots, continuity, and an almost philosophical commitment to the land. Founded by Aldo Vajra in Vergne, on the western slopes of the Barolo DOCG, the estate is today run by his children Giuseppe, Francesca, and Isidoro, who share a single conviction: that great wine is an act of identification with place and people. Coste di Rose is the estate’s single-vineyard Barolo from the Coste di Rose MGA in Vergne — a site known for its floral, elegant expression of Nebbiolo, with chalky soils that produce silky tannins and remarkable finesse. The Wine Advocate 94 Points | The 2019 Gold Vidal Icewine was fermented and aged for about 14 weeks in 90% new French oak. It comes in with 272 grams of residual sugar, 10.5 of total acidity and 10% alcohol. Rich and unctuous, this also has classic aromatics and a certain level of freshness that keeps it from being particularly cloying. This is also completely delicious, with a little of bit of spicy apricots on the mouthwatering finish. The acidity lifts the fruit and allows it to shine through. It's never going to be a nervy wine, but it is not flabby either. If you like stickies, this won't disappoint. It should age very well, acquiring a bit more character along the way. Ferrando’s white-label Carema is among the most elegant expressions of Nebbiolo in existence, combining ample density with a very Alpine sense of nimbleness. Never an overwhelmingly powerful wine, “Etichetta Bianca” derives its sense of structure more from its acid-fruit tension than its tannins, offering satisfyingly savory fruit buttressed by vigorous mountain acidity.

Fermented in stainless steel without temperature control and using only indigenous yeasts, it spends three full years in a combination of 20-hectoliter Slavonian oak botti and used 500-liter French barrels.

Breathtaking steep are the slate terraces of the Ahr, on which only a few vines can be found at all times. In this respect, the yields are also dwindling and the number of bottles is limited accordingly.

This Sanford & Benedict Chardonnay is bright, beautifully layered, and nuanced. Meyer lemon, candle wax, and cut straw all grace this very savory Chardonnay. Orange marmalade, stone fruits, and chamomile work seamlessly with the rich textures on the palate. This wine is natural with richer dishes and even light game.

Allen Meadows of Burghound | Ripe and very pretty aromas of both red and dark currant, violet, newly turned earth and a hint of crushed anise lead to rich, generous and round medium weight flavors that possess both fine volume and mid-palate density, all wrapped in a dusty, long and balanced finale where only a trace of rusticity is present. This always seem to outperform relative to its level chez Tollot and 2022 only adds to that reputation.

Winemaker Description 

The Tollot family represents a long lineage of winegrowers dating back to the late 1880s when François Tollot began planting vineyards in Chorey-lès-Beaune. Today, cousins Nathalie, Jean-Paul, and Olivier Tollot are in charge. The wines of Tollot-Beaut are well-known for their serious but pleasing style across a range of appellations from Bourgogne to Grand Cru.

The village of Aloxe-Corton sits at the foot of the Corton hill and is known for giving good-value red Burgundy that performs above its village-level status. A good Aloxe-Corton (pronounced Ahh-losse) will show some of the same structure, weight, and complexity found on the Grand Cru above.

Blackberry jam, grilled herbs, lavender, menthol and chocolate are some of the many notes that build as the 2020 shows off its breadth and sheer power. 95 Points Wine Advocate | The 2020 Durfort Vivens has turned out beautifully, unwinding in the glass with aromas of dark cherries and berries mingled with hints of licorice, baking chocolate and mint. Medium to full-bodied, deep and fleshy, it's layered and concentrated, with lively acids and broad structural shoulders, its generous endowment of powdery tannin asserting itself on the youthfully firm finish. More tightly wound than the extroverted, charming 2019, the 2020 will demand patience, but it's a very strong performance for this estate.

Los Vascos wines blend Lafite tradition with the unique terroir of Chile to create elegant wines that bring exceptional to the everyday. The vision of Domaines Barons de Rothschild (Lafite) to expand their estates took them to South America in 1988, becoming the first French viticultural investment in modern Chile. Since then, a comprehensive modernization and investment program has been undertaken, oriented towards the production of fine wine using and adapting the viticultural experiences of Bordeaux and other areas where Domaines Barons de Rothschild (Lafite) is present. Los Vascos is located in Valley de Caneten (Colchagua), a closed valley in the central zone of Chile, approximately 25 miles from the sea. 

The valley provides a perfect microclimate for high quality viticulture, with Northern exposure to lands uncontaminated by airborne or water-borne pollutants. Daily on-shore winds provide temperature changes between 68-77°F, for optimum maturation of the grapes. With 1,581 acres on the over 5,000 acre estate, it is one of the largest vineyards in the central Colchagua valley, at the foot of Mount Cañeten.

Ripe plum and cherry-scented nose that also features notes of licorice, saffron, cinnamon, and nutmeg that enhance the complexity of aromas. Notes of graphite, clove, dark chocolate and cedar take the experience to a whole new level; A smooth and supple wine with sweet and friendly tannins. Producer Description.

94 Points James Suckling | Complex and deep nose with plenty of nuance. A fine twist of balsamic with some graphite, cigar box and walnut to the background of cassis and sweet berries. Juicy and medium- to full-bodied on the palate with fine tannins. 92% cabernet sauvignon and 8% syrah.

93 Points Decanter | Quince and pear. Rich and ripe but not overly so, it's silky on the palate, fairly high in alcohol, enjoyably full and opulent, with a fresh core. Includes a new parcel this year of 70-year-old Marsanne, so is now around 90% Marsanne, 10% Roussanne. The rest is a mix of 60-year-old and seven-year-old vines. Vinified in oak.
