Tasting Notes: Reposado rests for a minimum of four months in Select French Oak and Cognac barrels handcrafted with French Limousin Oak. The woody aroma evokes soft vanilla with hints of raisin and sweet tobacco. To taste, it has notes of wild honey, raisin, and butterscotch.

This mezcal is crafted in the rich, fertile Miahuatlán valley, remotely located a 2.5 hours’ drive south of Oaxaca City at 4,970 ft elevation. 

The genetic “mother” of Tequila’s Blue Weber agave, Espadín typically takes 7 – 12 years to mature & is the most prolific species used in mezcal. Terroir and the maker’s hand mean that Espadín styles vary greatly. Vago Espadín by the very modest Emigdio Jarquín was awarded Double Gold & the coveted “Best Mezcal” at the 2019 SFWSC and “Best Mezcal in the World” in the 2020 World Tequila and Mezcal Awards. Emigdio’s Espadín has delicious concentrated agave flavors balanced by smokiness and a spicy/saline minerality loved by critics and consumers alike.

Eau-de-vie distilled in Ribeauvillé, Haut-Rhin, in the Alsace region of France

• Wild raspberries (rare in the Alsace) are sourced from a small grower in Romania; shipped to the distillery within 48 hours
• Wild raspberries don’t have the necessary sugar for ideal fermentation, so instead, they are macerated for 6 days in twice-distilled grape eau-de-vie
• The resulting eau-de-vie is distilled once on a Charente-style copper pot still
• After distillation, the eau-de-vie is placed in stainless steel vats for 6–8 years. These vats are kept in an outdoor courtyard and the opening covered in mesh so that the spirit may blow off unwanted esters and benefit from fluctuation in temperature.
• Reduced with spring water approximately one year before bottling
• Freshly smushed raspberries and raspberry leaves are complemented by cassis & red currant on the nose. The palate displays big florality with dimensions of fresh rose petal and rose stems. These green, stemmy notes move on to the finish with subtle frangipane and pink sea salt

During this process, it shades into an elegant, light-tanned and natural amber tone, after being left for a minimum of 3 months to adjust itself into our beloved Amarás Reposado.
