El Mero Mero Tobala has fruit on the nose with notes of grapefruit and buttermilk on the palate. They are cultivating Tobala to increase sustainability. El Mero Mero Tobala is made with maguey Tobala that is crushed by tahona, fermented in Encino Oak tubs, and distilled in copper.

The arid region of San Dionisio Ocotopec, where this mezcal is made, is known for producing agave with high sugar content, which can come through in the flavor and complexity of the mezcal.

The limestone-rich soil of this region can be harsh on the maguey Tobala, which take 12-15 years to reach maturity in this area. Due to the long maturation times, only small batches of 150-200 bottles of Tobala can be made at once.

Ultimate Spirits Challenge Top 100 of 2020 96 Points | Mezcal Vago is the business creation of Judah Kuper in conjunction with his in-laws in Oaxaca - a family of distillers that have been making mezcal for generations. Vago marks the first time their products have been available commercially, having previously been consumed solely by friends and family.

The Elote is the classic Espadin expression from Judah's father-in-law Aquilino García López macerated with toasted Mexican corn. Like other producers use Pechuga (chicken breast) to add flavor, the toasted corn creates a creamier, softer mouthfeel that is insanely tasty and addictive.

Overall, the Vago mezcales are some of the most exciting new spirits we've seen from Mexico in years and we couldn't be more excited about offering them to our customers. Now distilled by Aquilano Garcia Lopez's children after his tragic and untimely death in 2020.

The Cherry Brandy by Pojer and Sandri is obtained from two varieties of cherries: 70% Stevnsbaer and 30% Schattenmorelle. The distillation takes place through an innovative discontinuous bain-marie still.

This distillate is part of the most traditional brandies, but unlike those produced in Switzerland, the Black Forest or Alsace, this one uses sour cherries (marasca) instead of sweet ones, which results in a more delicate product. Grappa di Brunello Riserva Vigna Paganelli is the result of artisanal batch distillation of fresh pomace from Sangiovese grapes sourced in the Paganelli vineyard.

In a slow and methodical distillation process using copper stills, our Master Distiller manually separates the "head" and "tail" from the "heart" that will eventually become our Grappa Riserva - but only after aging for 4 years in 350 litres (93 Gallon) French oak barrel, previously used for the aging of Il Poggione Brunello di Montalcino.
