About Psagot Winery
Yaakov Berg — initially trained as a lawyer — followed his father’s passion for wine, spending time in wineries across Australia and New Zealand before founding Psagot in 2003. The name means “peak” or “summit” in Hebrew, a fitting tribute to the winery’s high-altitude Jerusalem Mountains home.
During construction, Yaakov discovered a small cave beneath the winery. Excavation revealed it dated to the Second Temple period and had been used for winemaking — an ancient wine press and period coins were found inside. One of those coins is reproduced on every bottle of Psagot wine, connecting each glass to over two thousand years of winemaking history on this land.

Kisi is one an indigenous varietal native of the Republic of Georgia. Petnat also known as "Petulant Natural Method Ancestral" is the original sparkling wine. Kisi is farmed in a biodynamic, regenerative vineyard planted over a dried up river bed.
The fruit is hand harvested and the wine is skin contact macerated in qvevri. Qvevri's are amphora buried in ground to control their temperature. Once the is done its maceration and still undergoing spontaneous, wild yeast fermentation, its bottled prematurely without additives and allowed to finish its fermentation in the bottle.
This Kisi has a fine bubbles, is dry and textured from skin contact, with crisp green apple and pear aromas and flavors. A fabulous alternative to Champagne.

Rich and unctuous, this also has classic aromatics and a certain level of freshness that keeps it from being particularly cloying. This is also completely delicious, with a little of bit of spicy apricots on the mouthwatering finish. The acidity lifts the fruit and allows it to shine through. It's never going to be a nervy wine, but it is not flabby either. If you like stickies, this won't disappoint. It should age very well, acquiring a bit more character along the way. Roberto Henríquez spent several years working in South Africa, Canada and France before going on to study agronomy and enology. In 2015 he moved back home to Biobío and began his own project based on the grape Pais, in part motivated by Louis Antoine Luyt.
Quickly he got a lot of recognition due to his most important work in principle of recovering the traditional viticultre in the South of Chile, by obtaining a delicate rusticity in all his wines. Torontel is a grape that evolved from a natural cross of Moscatel de Alejandria and Pais.
A white wine rich in spices and floral tones. This is an intense wine with tremendous body and acidity, with especially with firm, sharp tannins.

The Wine Advocate 95 Points | The 2013 Valadorna (mostly Merlot with Cabernet Franc, Cabernet Sauvignon and Petit Verdot) is yet another home run in this blockbuster collection of new releases from Tenuta di Arceno in the southern part of Chianti Classico (Castelnuovo Berardegna). This is a firm and tightly knit expression that is packed tight with black fruit, tobacco, tar and dark chocolate. The wine shows enormous aromatic intensity, but then it slims down just a touch in the mouth to offer an elegantly tapered finish.
Decanter 94 Points | Compared to the older and warmer 2011, which is a bit rustic and jammy, this 2013 is a fairly classic vintage for Merlot. It was harvested in September, marking a return to the usual picking dates. The percentage of the Merlot here reaches 74% of the blend, in order to maximise its fleshy character in a relatively cool year. The nose is evolved yet with an amazing complexity of tobacco, earthy tones, clean leather and balsamic depth. Domaine des Tourelles Cinsault Bekaa Valley Lebanon 2021 ORGANIC
Winemaker Description
GRAPES: Cinsault (100%).
Cinsault has been farmed in the Bekaa Valley since the mid-19th century before ceding the way to new imported varieties. In 2014, Domaine des Tourelles decided to revive this grape by searching out very old Cinsault vines, over 50 years of age, and fermenting the wines in concrete tanks using wild yeasts and nothing else to offer the purest expression of that grape. The result is a supple wine that beautifully reflects the terroir of the Bekaa Valley, with an aging potential of several years.

There is not much I can say about Bekaa-born Faouzi Issa co-owner and winemaker of Domaine des Tourelles in the Bekaa Valley, that has not already been said by Jancis and Tam but in a week in which Lebanon has again been in the news because of death and destruction, I wanted to celebrate the life that continues to be created every year at Domaine des Tourelles in the most challenging circumstances imaginable. (See Michael Karam’s Lessons in wine-region survival.)
Issa told me on Wednesday that the nearest pager explosion to them was 1 km away from the winery.
In 2018, the year Domaine des Tourelles celebrated its 150th anniversary, Jancis’s articles Lebanon and the new Serge Hochar? and Lebanon’s oldest winery told of Issa’s journey into wine, via Bordeaux’s Château Margaux and René Rostaing in the Rhône, as well as giving a brief history of Domaine des Tourelles, Lebanese wine more generally and the arrival of Cinsault in the country in the 19th century along with Carignan and Grenache.
Tam continued the story in 2022 in more personal terms in Old-vine wines – part 1 Lebanon, describing Issa as ‘that mesmeric combination of scientist, engineer and romantic’, at the same time highlighting Issa’s commitment to old vines.
The first vintage of this wine was 2014, which was when Issa realised that the old vines offered something special and deserved to be bottled separately (they now have four wines in their Old Vine Collection). He explains, ‘Cinsault has been farmed in the Bekaa Valley since the mid 19th century before ceding the way to new imported varieties.’ For many a year, it was the most widely planted variety in the country but it is now much less popular than it once was.

As it ages, develops a unique bouquet of ripe fruits, leather and spices. It has light body, good acidity, soft and delicious tannins and long aftertaste, traits that portrait it as a very elegant wine.
The Douloufakis "Dafnios" Liatiko 2021 is a standout example of Crete's indigenous red grape, Liatiko. Produced in the village of Dafnés by Nikolas Douloufakis, this wine is often compared to Pinot Noir or Nebbiolo due to its lighter color and elegant, aromatic profile.

About Wine & Soul
Wine & Soul is the joint project of husband and wife Jorge Serôdio Borges and Sandra Tavares da Silva, both qualified oenologists. They bought an old port warehouse in the Vale de Mendiz in the heart of the Pinhão valley in 2003. The estate is 6 hectares with 2.5 ha under vine, averaging over 70 years old and planted with 30+ different varieties. The project is named after their dog Pintas, a Pointer.
Winemaking
Harvested in the second week of September in perfect conditions. All grapes were hand-selected, destemmed, and foot-trodden in traditional stone lagares throughout the full 10-day fermentation. Aging and malolactic fermentation in French oak barrels for 20 months.
