Winemaker Description
The Judean Hills Blanc reflects the character and quality of the vineyards, located in the ancient region of Judean Hills. The color on this wine is a light gold, its not a deep color but its a pretty light gold.
The aromas are really nice, citrusy, melony, gooseberries, but also some yellow pear and green apple. There are lots going on fruit wise on the nose which makes it a really nice, medium to full bodied wine.
The acid comes on in the mid palate with more citrus in the mouth and a big acid on the finish. This wine is still going strong. It has a fairly long finish for a white wine, with some nice residual acid and melon flavor on the back.
The wine is super enjoyable with its fairly big white wine flavors. It drinks beautifully today and will keep developing in the bottle during the next 2-3 years.

Created to celebrate three decades of the Dalton family's journey, this extraordinary red blend incorporates wine from every vintage stretching back to 1995, weaving together the memory of each harvest into a single, deeply expressive bottle.
Rooted in the rugged terroir of the Upper Galilee, the blend draws on Cabernet Sauvignon from Elkosh, Merlot from Tel Fares, and Shiraz from Elkosh — three sites that have defined Dalton's identity over the years. Aged 24 months in new French oak barrels, then rested a full year before release, this is a wine built with patience and intention.

Winemaker Description
Incredible body and richness, yet already balanced, tannins already very round. Great acidity and spice allow for a never-ending finish. Powerful and complex aromas of ripe black fruit, dried herbs and spices, coffee and dark chocolate.
A blend of Bordeaux varieties, but featuring the desert’s strong varieties – mostly Malbec, Merlot and Petit Verdot. After diluting fruit on the vines, we received grapes of remarkable concentration and quality. The result is a ‘big’ wine, which will age beautifully for years to come, and develop complexity and character. The wine was aged for over 12 months in oak barrels. Gives us a glimpse on the potential for great reds from the desert. HOLOT is a series of blends from varieties identified as best performers in the desert terroir. It is a result of meticulous care, from the vineyard – through the winemaking process. Holot Red is a blend of Malbec, Merlot, Petit Verdot, Cabernet Sauvignon, and Cabernet Franc, all growing here in the desert.

Mevushal. The Chardonnay grapes for this wine were grown in the fog-cooled Napa Valley in order to produce a wine rich in flavor and varietal character, complemented by aging in small oak barrels.
Don Ernesto has done it again. Our newest vintage of Chardonnay is Mary Poppins. Why Mary Poppins you ask. Well, it is “practically perfect in every way”! From the beautiful soft golden hue, to the rich round mouth, to the long finish, this Chardonnay is what you need to “help the medicine go down in the most delightful way”.
Starting with the nose, we find beautiful soft vanilla, ripe Asian pear and crisp Galia and Honeydew melon. Continuing onto the palate we discover lush star fruit and rich lemon curd. With its lingering finish our Chardonnay will make you want to “go fly a kite”!"
